I don\u2019t really feel AS guilty for indulging since it\u2019s all from-scratch, right?? Yeah.. I\u2019ll just keep telling myself that..<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Really, I just got a <\/span><a href=\"http:\/\/amzn.to\/1Rltti3\"><span style=\"font-weight: 400;\">mandoline<\/span><\/a><span style=\"font-weight: 400;\"> and wanted to test it out by making some chips from scratch. I\u2019ve only fried up potato \u2018chips\u2019 once before (a long time ago), and I had to depend on my knife skillz to make the potato chips as thin as possible.. (yes I said skillz.) I was trying to mimic Zaxby\u2019s \u2018Tater Chips\u2019 which he loves. (We had actually tried to order them earlier in the day, and they ran out, so I decided it was time to finally try and make my own!) My grandmother has one, and <\/span><a href=\"https:\/\/www.instagram.com\/p\/xC-AOzTe4G\/\"><span style=\"font-weight: 400;\">she\u2019s quite the badass when it comes to frying up some good food<\/span><\/a><span style=\"font-weight: 400;\">. :) It\u2019s literally <\/span><a href=\"http:\/\/amzn.to\/1SRAASr\"><span style=\"font-weight: 400;\">the best $20 I\u2019ve spent in my life<\/span><\/a><span style=\"font-weight: 400;\">.. every kitchen needs a deep fryer right?? They use blue cheese, but I\u2019ve switched it up with a milder gorgonzola and added<\/span> <span style=\"font-weight: 400;\">some smoked gouda. I made a sauce with the cheese, then saved some Gorgonzola for the topping. Now, you can find a similar dish at a place called Primeaux Cheese &amp; Vino at the Summit (in Birmingham). Or you can just come to my kitchen, where I can make this awesome variation! cheese<\/li>\t\t\t<\/li>\r\n\t\t<\/div>\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">For the Chips<\/div>\t\t\t<li class='blog-yumprint-ingredients'>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">2 baking potatoes, sliced in 1\/8 -inch slices<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">Salt, optional<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"2\" itemprop=\"ingredients\">Canola oil, for frying<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"3\" itemprop=\"ingredients\">Bacon, cooked and crumbled<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"4\" itemprop=\"ingredients\">Chives, minced, for garnish<\/li>\t\t\t<\/li>\r\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">For the Gorgonzola Cheese Sauce<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Heat 1 cup cream over medium heat in small saucepan until starting to bubble.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Meanwhile, melt butter over medium heat in a medium saucepan and saute shallot until soft (2-3 minutes). Stir in flour -- cook for 1 minute. Add a pinch of red pepper flakes (optional).<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Whisk in cream until thickened and reduce heat to medium-low. Add \u00bd tsp. Worcestershire sauce. Season with salt and pepper.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Cook 1-2 minutes and add 2 oz. gorgonzola cheese and the smoked gouda. Season with salt and pepper. Stir until combined and smooth. (If too thick, add some half-and-half, milk, or cream and whisk until smooth).<\/li>\t\t\t<\/ol>\r\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"3\">\t\t\t<div class=\"blog-yumprint-subheader\">For the Chips<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">With your mandoline or knife, slice potatoes into 1\/16-inch thick slices. Add to a large bowl of cold water for about 10 minutes. Remove and dry thoroughly between paper towels or kitchen towels. Heat oil for frying to 375 degrees F. Fry chips in batches until golden brown and crispy. Remove with slotted spoon and let drain on paper towels. Season with salt immediately if you wish.
