I ended up with a new favorite: a sweet, super-delicious, pickl-y treat.\" alt=\"\"\/>\n<\/div><!-- .ngfb-schema-image-for-pinterest -->\n\n<p>Pickles are literally one of my favorite foods. I&#8217;ve eaten them since I was a kid. As a night-time snack ever since I can remember, I would get a cupful of 20 small Spanish green olives and a pickle spear or two. This always confused those around me since I didn&#8217;t eat much of anything.. but pickles and olives? Yes.&nbsp;<\/p>\n<p>And still yes. I&#8217;m still a fan. I try more exotic olives now and I&#8217;ve tried a few other pickles, but dill is a classic favorite that is always in my&nbsp;fridge.&nbsp;<\/p>\n<p>Watermelon is another food I&#8217;ve loved my whole life, but I would never have imagined&nbsp;I could marry the two and make PICKLED WATERMELON RIND!?<\/p>\n<p>A coworker gave me a giant watermelon from her garden, and I wanted to use every last piece of it! I sliced the watermelon, and ended up with a ton of the unused, bright green, beautiful rind. I had only heard about pickled watermelon rind on TV, I&#8217;d never actually tasted it, but I thought, &#8220;Why the hell not? Let&#8217;s pickle and take pictures!&#8221;<!--more--><\/p>\n<p>I researched some recipes and found <a href=\"http:\/\/www.food.com\/recipe\/watermelon-rind-pickles-39027\" target=\"_blank\">a good one from food.com<\/a> and <a href=\"http:\/\/www.marthastewart.com\/336858\/pickled-watermelon-rind\" target=\"_blank\">one from Martha Stewart<\/a> that I referenced. I cut most of the rind into small chunks, trying not to make them thicker than an inch. Then I thought maybe I should LEAVE some of the green rind, as long as it&#8217;s a thin layer &#8212; like pickled cucumbers. So I finished cutting the rest of the rind by just slicing it thinly and leaving some green rind on the edges. Here&#8217;s an idea of how the thin sliced watermelon rind looked &#8212; you can also see the small rectangle shaped ones mixed in.&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-2131 size-large\" src=\"http:\/\/www.thatsquareplate.com\/wp-content\/uploads\/2015\/07\/DSC_8063-e1437346816607-600x410.jpg\" alt=\"Pickled Watermelon Rind ~ A surprisingly sweet, delicious pickled treat! And I recommend not to worry about trimming it off, because the one&#8217;s with the rind turned out better! When you get done trimming it up, place it in a large bowl to brine.&nbsp;Boil 1\/2 cup salt with 2 qt. water and cover the chopped rind. From www.thatsquareplate.com\" width=\"600\" height=\"399\" srcset=\"https:\/\/www.thatsquareplate.com\/wp-content\/uploads\/2015\/07\/DSC_8071-600x399.jpg 600w, https:\/\/www.thatsquareplate.com\/wp-content\/uploads\/2015\/07\/DSC_8071-300x200.jpg 300w, https:\/\/www.thatsquareplate.com\/wp-content\/uploads\/2015\/07\/DSC_8071-789x525.jpg 789w, https:\/\/www.thatsquareplate.com\/wp-content\/uploads\/2015\/07\/DSC_8071-800x532.jpg 800w, https:\/\/www.thatsquareplate.com\/wp-content\/uploads\/2015\/07\/DSC_8071.jpg 1000w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><p id=\"caption-attachment-2132\" class=\"wp-caption-text\">Slice rinds thinly, and cover in a salt\/water mixture to brine overnight.<\/p><\/div>\n<p>Rinse rinds with fresh water and drain.<\/p>\n<p>Add 2 cups water, 1 1\/2 cups white or apple cider vinegar (I used 1 cup white and 1\/2 cup apple cider vinegar), 2 cups sugar, 3 cinnamon sticks, 1 thinly sliced lemon, and 1-2 tablespoons pickling spice in a large saucepan and bring to a boil. It wasn&#8217;t with the all the spices like I thought it should be. Scoop out rinds, add to jars, and cover with the remaining syrup from the bowl. I prefer the thin-sliced greener look and taste. Even my non-pickle-liking boyfriend had more than a few. I went into this not knowing what to expect, but came out of it with a new, super-delicious, pickl-y treat. Let stand in refrigerator overnight.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Remove and rinse well.<\/li>\t\t\t<\/ol>\r\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"3\">\t\t\t<div class=\"blog-yumprint-subheader\">Pickled Rind<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Add water, vinegar, sugar, pickling spice, cinnamon sticks, and lemon slices into large saucepan. Bring to a boil for 5 minutes and slowly add the rinsed rind. Bring back to a boil and reduce to a simmer. Simmer 15-20 minutes (depending on the thickness). (When they start turning a white and slightly transparent, they are ready to add to the jars.)
