I can go to the beach whenever I want, I LOVE the hot weather (I probably wouldn’t if I worked outside), and I love cooling down with a jump in the pool. Also, during the summer I like to eat a bit on the lighter side.</p> <p>Fresh melons and berries are some of the perks about living around here during the summer. I just bought some fresh-grown cantaloupes and watermelon, and they were absolutely delish. I chopped up one of the cantaloupes, put it in a Zip-Lock and threw it in the freezer for later.</p> <p><span id="more-5244"></span>Little did I know I’d use it so soon. The folks over at <a href="https://www.herbalpapaya.com/">herbalpapaya.com</a> were nice enough to send me a sample pack of some of their products, and I fell in love with this superfood that I’d been missing! The teas are amazing, and my favorite was the papaya seed powder! There’s seriously nothing better than toasted coconut flakes, I LOVE using them for toppings on smoothies. I toast a bunch at a time and keep a bag of it in the fridge. I always add protein to my smoothie, so I usually buy the vanilla flavored protein powder, it will go with anything! You can leave it out if you aren’t a fan. Also, like any smoothie, the ingredients can be easily subsitiuted. I would have loved to add some watermelon (if I hadn’t already eaten it all), but the flavor combos here were absolutely perfect. Fold this into the batter as the last step before pouring into the waffle maker. I also added more fresh blueberries on top to take advantage perfectly ripe fruit.</p> <p>I’ve noticed I’ve been liking the blueberries from the grocery store a lot better lately (obv because they’re in season), but they just don’t compare to the fresh-picked! EVERY berry had that ‘pop’ that you look for when biting down on a blueberry. And they were slightly tart, but wonderfully sweet. class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Whisk together flour, baking powder, baking soda, salt and sugar in a large bowl.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Whisk together egg yolks and buttermilk in a small bowl.</li> <li class="blog-yumprint-method-item" yumprintitem="2">In a medium bowl, beat egg whites and cream of tartar at high speed with an electric mixer until stiff peaks form.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Using a fork, stir yolk mixture into flour mixture just until dry ingredients are moistened. Stir in butter and vanilla. (Batter will be lumpy.) Fold in egg white mixture just until incorporated. (Do not overmix.)</li> <li class="blog-yumprint-method-item" yumprintitem="4">Spray waffle maker with cooking oil before pouring batter for each waffle. Pour about ½ to 1 cup batter for each waffle into a preheated, oiled waffle iron; cook until waffles are golden brown and crisp. Clean grates after each waffle if the berries stick.</li> <li class="blog-yumprint-method-item" yumprintitem="5">Halfway through cooking, open waffle iron and add about 10-15 blueberries to the top of the waffles and continue cooking.</li> <li class="blog-yumprint-method-item" yumprintitem="6">Keep warm in a single layer on a baking sheet in a 200° oven up to 30 minutes. I’ve seen them floating around on Pinterest and a few food blogs I keep up with. And they’ve inspired me to take the plunge and make my own! I have a <a href="http://amzn.to/1XcpDgL">magic bullet</a> that I like to use to make individual smoothies in the morning. I keep it out beside the fridge so I can just throw everything in, blend, and go in the mornings.</p> <p>I get on my smoothie kicks .. usually making smoothies daily for a month, then not making them for a month… I find different ones I like, and stick to them for a while. My favorites always include bananas.. The yellow layer has some banana, coconut milk, peaches and pineapple. And the red is the sweet berry part. I pretty much threw them all together in a sauce and coated the zoodles, and TA-DA! I wasn’t planning on it and it is a totally optional step, but I love the texture of the sauce after I blended it up a bit. Cook 2-3 minutes until they are soft and add garlic. Cook 1 minute until fragrant. Add the can of diced tomatoes, all spices and lemon zest and bring to a boil. Reduce heat and simmer for 15-20 minutes until sauce thickens.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Transfer sauce to a smaller bowl and use an immersion blender to blend up and make a thick sauce texture. Add back to pan and add lemon juice and 1 tablespoon butter until melted.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Toss zoodles in sauce and cook 3-5 minutes more until they soften. a soup pot, heat the oil over medium heat until shimmering. Add the onion, bell pepper, and jalapeno and cook until onion is translucent (about 10 mins). Stir frequently.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Add garlic, chili powder, cumin, cayenne, 2 teaspoons salt, and ½ teaspoon black pepper. Stir until fragrant about 2 minutes.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Add chicken broth, tomatoes, and beans and bring to a boil. Reduce heat and simmer for 30 minutes.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Add the rice and cook about 15 more minutes until thick. Stack tortillas and cut them into thin strips with a sharp knife. When oil is heated, add a handful or strips at a time to the hot oil, and fry until crisp (about 1-2 minutes). Since I’m not much of a ‘baker’ (ha!).. I decided to make a savory dish for dinner. I’ve been growing some herbs in the kitchen for a little while — some basil, rosemary, and thyme, and decided to mince some up and add to the pasta dough. I used both rosemary and thyme, and the fettuccine turned out incredible. There’s really nothing better than some fresh, homemade pasta.</p> <p>For the sauce, I wanted something light, so it didn’t overtake the flavor of the herby pasta. I wanted to make a white wine sauce, but realized all I had was sparkling white wine… I guess I’ve been on a kick — but I figured I’d try it. I chose to use some Prosecco (but really any white wine would work). The end product turned out EXACTLY as I wanted. Add lemon zest and season with salt & pepper. Simmer until reduced by half (~2/3 cup) (about 10-15 minutes). Add heavy cream and bring to a boil. Lower heat and simmer about 15 more minutes. I woke up Saturday and really wanted to make some kind of yummy breakfast. After my failed attempt at making some biscuits (sadface), I decided I’d make something that’s always a hit… <a href="http://thatsquareplate.com/tag/pancakes">Pancakes</a>! I realized I was low on milk, so I couldn’t use <a href="http://www.thatsquareplate.com/pancakes-blueberry-peach-sauce/">my normal pancake recipe</a>. Also, I found that I had a surplus of almond milk in my fridge, so I <a href="https://www.google.com/webhp?sourceid=chrome-instant&ion=1&espv=2&ie=UTF-8#q=almond%20milk%20pancakes" target="_blank">googled almond milk pancakes</a>. I ran across <a href="https://silk.com/recipes/almond-pancakes" target="_blank">this recipe</a> from Silk’s website. The almond milk takes the place of the regular milk or buttermilk I usually use. I replaced the egg with a <a href="http://minimalistbaker.com/how-to-make-a-flax-egg/" target="_blank">flax seed egg</a> — I’ve used this a few times, and it never fails. I always tend to <a href="https://www.google.com/webhp?sourceid=chrome-instant&ion=1&espv=2&ie=UTF-8#q=flax%20seed%20egg" target="_blank">google flax seed egg</a> when I’m out of them, and I find the ratio of 1 egg to 2.5 tablespoons water is a perfect substitute (tip from <a href="http://minimalistbaker.com/how-to-make-a-flax-egg/" target="_blank">Minimalist Baker</a>). [and yes, I’m a <a href="http://www.urbandictionary.com/define.php?term=google-a-holic" target="_blank">Google-a-holic</a> <– please click this to see the Urban Dictionary definition! HA. Guilty.]</p> <p>Anyway, I try to use as little sugar as possible in my day-to-day, so here, I used a tablespoon of Truvia Baking blend. It sweetens the pancakes perfectly and contains 75% fewer calories because it uses natural stevia for sweetness. It’s a nice ingredient to have in the pantry, and you can find it in the grocery store’s baking section or on Amazon <em><a href="http://amzn.to/1QFAniX" target="_blank">here</a>. </em>If you don’t have this certain sweetener, you can use honey, agave, or regular sugar — whatever sweetener you prefer.</p> <p><span id="more-3570"></span>These pancakes turned out delicious, even though Greg commented on the color. They weren’t as browned as normal, but the flavor was still wonderful. I made a Grand Marnier/Greek yogurt/vanilla mixture and added some strawberries to the top. Grand Marnier is an orange-flavored liqueur I keep in my cabinet for margaritas — It’s a yummy addition… and really all you need is a tiny bit to add the orange flavor. The yogurt mix was a great dip for the strawberries (I definitely ate more than the two pictured!). Rocky (my super-picky brother) had the pancakes with regular syrup and ate all of them. Greg, his dad, and I split the remainder, and I got nothing but compliments. Flip after 3-4 minutes. Don’t get me wrong, I could probably go months living off of fried okra, but I thought I would preserve some by pickling it! My grandmother is actually the one who suggested it after bragging about a Bloody Mary she had recently — it was served with some nice big olives, a big ol’ stalk of celery, and some yummy PICKLED OKRA!</p> <p>I’ve bought some pickled okra from the grocery store before, because I’m pretty open to all things pickled (except for maybe pickled pigs feet – that just scares me). Maybe I should say I’m up for any pickled vegetables… The jar didn’t last very long as I found myself popping it open in the evening when I was hungry, but didn’t want anything calorie-heavy! These definitely aren’t, and I’d eat a few almost every night. I only made about half, but I will share the measurements and recipe from their website, as they’re pickling experts — I am still learning. I love the dill and garlic flavors. I shared a jar with my grandmother, and she approved! Place jars in canning rack, and place in simmering water in canner. Add additional boiling water as needed to cover by 1 to 2 inches.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Bring water to a rolling boil; boil 10 minutes. Remove from heat. Cool jars in canner 5 minutes. Transfer jars to a cutting board; cool 12 to 24 hours. Test seals of jars by pressing center of each lid. If lids do not pop, jars are properly sealed. Unfortunately my brother isn’t a fan, but he will come around one day! He <em>has </em>to right?? </p> <p>Anyway, my great aunt brought me a whole bag of okra from her garden last week. I pickled half of it (recipe to be added soon), then fried up the other half. In this recipe, I decided to pair two typically southern ingredients — okra and pecans. <span id="more-2640"></span></p> <p>I sliced up the okra and set out three trays: one with the okra, one with an egg and flour mix, and the third with ground pecans. Make sure to salt to taste at the beginning and after you take them out of the fryer. I needed a good dip — don’t all fried things?? I made a ranch based sauce with 1/4 c. sour cream, 1/4 c. Greek yogurt, 2-3 teaspoons horseradish, and about 1/2-1 Tablespoon Homemade Ranch Seasoning mix from Gimme Some Oven (<a href="http://www.gimmesomeoven.com/homemade-ranch-seasoning-mix/">click for her recipe</a>). I keep that her dry ranch mix in my pantry for whenever I need a quick dip. It mixed with sour cream, mayo, and/or Greek yogurt. I added some half-and-half (up to a tablespoon) to thin it out. Whisk it all together, and it turned out to be a perfectly tasty, creamy dip for the okra. I spooned the dipping sauce into two bowls, and added Sriracha to one dip to give a little spice! Zucchini is one of my newer-in-life ‘likes’… along with plenty of other vegetables and good-for-you things. I never thought I’d ENJOY zucchini. Or WANT it…but I do. I needed a light dinner the other night after work, and wanted to use zucchini from the fridge. I’d been meaning to use the ol’ spiralizer I bought a few months ago. I found it in a catalog a co-workers daughter brought to work. I thought, that’s exactly what I need to maybe provoke myself eat some more veggies….<span id="more-2034"></span></p> <p>…and several MONTHS LATER (last night), I pulled out two zucchini and the unused spiralizer (<em>the one I have looks something like <a id="static_txt_preview" href="http://www.amazon.com/gp/product/B00Q9LL1Y8/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00Q9LL1Y8&linkCode=as2&tag=thasqupla-20&linkId=XECY4NKADJBKHO2P&tag=blintica-20" target="_blank">this</a></em>), and I started twirling! [I now have <a href="http://amzn.to/1Wg7lH6" target="_blank">this AWESOME KitchenAid attachment</a>.] I didn’t realize the little, simple gadget had two sizes until I was on my second zucchini. I would’ve normally picked the skinnier noodle– but maybe that’s for another recipe (because I will be using this thing again soon)! After a few minutes of twirling away… I had some nice, semi-thick, yet still delicious-looking <em>ZOODLES</em>. I still was unsure of what to top with, so I decided to go with simple, classic Italian flavors with some spice. I grated a few tablespoons of Parmesan.. you can never have enough Parmesan, everybody knows that. Also, I chose to use Italian seasoning — simply because it was EASY at the time, and also because Italian flavors are DELICIOUS! </p> <p>I minced some garlic and sautéed it in butter (over medium-high heat) for a few minutes. I added the zucchini noodles, tossing lightly with some tongs, added a bit of olive oil, Italian seasoning, and red pepper flakes (and salt & pepper). I covered the pan, while stirring the zucchini often. I still wanted a little ‘al-dente’ texture.. not too soft. Once they were to my liking, I tossed in some grated Parmesan and served it up in a nice [square] serving bowl. Saute until tender ~ 1 minute.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Reduce heat to medium and add zucchini. Toss with garlic and butter, and drizzle in olive oil. Add Italian seasonings and red pepper flakes and toss again.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Cover and cook 3-4 minutes, stir, and repeat until your desired texture. Mine took about 7-8 minutes.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Drain.
