I have co-workers and customers who always have overloads of fresh produce that they need to get off their hands. I’m always interested in whatever it may be. Fold this into the batter as the last step before pouring into the waffle maker. This keeps air bubbles throughout and makes the waffles extra fluffy!

<img loading="lazy" decoding="async" class="aligncenter size-large wp-image-5044" title="Blueberry Waffles with a Cinnamon Cream Cheese Frosting" src="http://www.thatsquareplate.com/wp-content/uploads/2016/06/Blueberry-Waffles-with-a-Cinnamon-Cream-Cheese-Frosting-3-681x1024.jpg" alt="Who wouldn't want to wake up to these fluffy blueberry waffles?! I also added more fresh blueberries on top to take advantage perfectly ripe fruit.

I’ve noticed I’ve been liking the blueberries from the grocery store a lot better lately (obv because they’re in season), but they just don’t compare to the fresh-picked! EVERY berry had that ‘pop’ that you look for when biting down on a blueberry. And they were slightly tart, but wonderfully sweet. In fact, I just got another fresh bag-full of them yesterday, and I can’t wait to use them (if I don’t eat them all first!).
<img loading="lazy" decoding="async" class="aligncenter size-large wp-image-5043" title="Blueberry Waffles with a Cinnamon Cream Cheese Frosting" src="http://www.thatsquareplate.com/wp-content/uploads/2016/06/Blueberry-Waffles-with-a-Cinnamon-Cream-Cheese-Frosting-2-800x532.jpg" alt="Who wouldn't want to wake up to these fluffy blueberry waffles?! It’s a cinnamon-cream cheese mix that’s thinned out with milk for a perfect drizzling consistency. The waffles wouldn’t be the same without this frosting. The first time I made them, I served them with a blueberry/Greek yogurt/honey sauce. This sauce strangely tasted like the old Wildberry pop-tart filling (only a healthier version). This time, since I unfortunately had no fresh fruit in the house, I took the easy way out and topped them with honey, cinnamon, and a toasted sliced almond/shredded coconut mix.

The recipe is an adaptation of the Allrecipes.com recipe ‘Fluffy Pancakes.‘ I only modified the recipe by adding vanilla, replacing the sugar with Truvia baking blend (my new favorite sweetener for baking), and replacing half of the flour for almond meal/flour.

Here’s what you need:

Flour, almond flour, white or whole-wheat flour, milk, egg,Truvia, butter, baking soda, baking powder, vinegar, salt

I started out combining the vinegar and milk to let it sour. Just the mix of sugar and egg white is delicious, but this is combined with vanilla, chopped chocolate chips, and cornflakes. That’s all you need to make these deliciously light cookies. I got this recipe from the latest Saveur Magazine, and it was so quick and easy and totally worth it! Plus, all I needed from the grocery store was a box of cornflakes. I couldn’t stop eating them after they were done. So light and crispy and chocolatey!

Here’s what you need:

Mix your egg whites with a stand mixer or beater while gradually adding your sugar. Overnight… This stuff smelled pretty bad. Even Rocky mentioned something about it smelling gross.

Anyways, the next day, we pulled them out, cooked the ribs, and made the BBQ sauce. The ribs ended up being great! I couldn’t believe it. The barbecue sauce was something else too. Just reduced root beer with a vanilla bean and its seeds, and a buncha pepper?! After it was done reducing, add the lime juice, and you had a surprisingly SPICY, SWEET sauce. I really loved it! The recipe calls for finely ground long pepper – but we can’t get that around here, so we used black pepper. Also, this is my first time using vanilla beans (and fish sauce, obviously)! Yum!!

In a medium saucepan, bring 2 bottles of the root beer to a boil with the fish sauce, garlic, cracked black peppercorns and shallots. Remove from the heat, cover and let steep for 25 minutes. Transfer the mixture to a large roasting pan and add the ice. Add the rib racks, cover and refrigerate overnight.

Preheat the oven to 325°. Remove the ribs from the marinade and scrape off most of the solids. Transfer the ribs to a large rimmed baking sheet. Cover with foil and bake for about 2 hours, until the meat is very tender but not falling off the bones.

Meanwhile, in a medium saucepan, combine the remaining 2 bottles of root beer with the vanilla bean and seeds and long pepper [black pepper] and boil over moderately high heat until reduced to 2/3 cup, about 25 minutes. Add the lime juice and simmer for 2 minutes. Discard the vanilla bean.

Light a grill. Grill the ribs over high heat until richly browned, about 4 minutes per side. Transfer the racks to a carving board and cut in between the ribs.
