I’ve discovered my new favorite way to make French fries and that’s with my handy-dandy <a href="http://amzn.to/1TudJaU">spiralizer</a>! It cuts the perfect (and consistent) potatoes for even frying, and literally it took like five minutes to prep. </span></p> <p><span style="font-weight: 400;">I used a combo of two red potatoes and a sweet potato… really only because that’s what I had in the kitchen… no rhyme or reason, but loved the flavor and slight color variation in the final product. Also, I used the double fry technique to get them perfectly crispy… it works! Fry them once with your oil at 300° F, then a second time at 400° F until they’re all nice and crisp. </span></p> <p><span style="font-weight: 400;"><a href="https://www.fixhotsauce.com/">Fix Hot Sauce</a> was nice enough to send me a bottle of their super-tasty Sriracha hot sauce, and I used it to make an aioli to drizzle over the hot fries (after melting some shaved Parm on top)! class="blog-yumprint-subheader">For the Sriracha Aioli</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Smash garlic cloves with a little bit of kosher salt in a mortar and pestle.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Heat olive oil over medium heat in a small saucepan. Add garlic and shallot and cook 10-15 minutes until nice and fragrant. Strain olive oil into a bowl through a strainer.</li> <li class="blog-yumprint-method-item" yumprintitem="2">In a medium bowl, whisk together egg yolk and sriracha. Slowly add olive oil a tablespoon at a time and whisk continuously so it emulsifies. Season with salt and pepper. Add to a squeeze bottle if you want.</li> </ol> </div> <div class="blog-yumprint-method-section" yumprintsection="3"> <div class="blog-yumprint-subheader">For the Fries and Assembly</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Run potatoes through a spiralizer on the thinner noodle setting. Soak in a large bowl with cold water for at least 5 minutes. Rinse and repeat. After soaking, transfer to a kitchen towel and dry off as well as you can.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Heat a large pot of canola or vegetable oil to 300 degrees F.</li> <li class="blog-yumprint-method-item" yumprintitem="2">When heated, fry “fries” halfway through in 300 degrees oil, for about 5-7 minutes, until they’re starting to change to a darker color. (They’ll be a little ‘soggy’). Move to paper towels to dry, and do the same with the rest of the fries.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Preheat oven broiler. Heat oil to 400 degrees F and, when heated, add batches of the half-cooked fries to cook until brown (about 2-4 minutes.) When crisp, move to paper towels and season with salt. Finish frying the rest of the fries.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Transfer fries to serving plate and cover in Parmesan cheese. Move to top shelf of oven to melt cheese. Rub spice mixture all over the fish. Heat a cast-iron skillet over medium-high heat. Add remailing 1 ½ tablespoons oil and when it just starts to smoke, add fish to pan. Cook about 3 minutes per side. I’m normally not an advocate for the quick-cooking grits, but the only difference is they’re cut into finer pieces… so they cook faster! (Just like quick-cooking oats.) So the product is the same, just the cook-time is quicker!</p> <p>Once they’re served with some top-notch seafood, it’s no big deal.</p> <p>Here, I’ve made a spicy version of shrimp and grits using Sriracha to spice things up. I am a #SrirachaFangirl so this rendition was perfect for me. I also LOVE spicy, so feel free to cut back on the hot sauce if you must, or add more at the end if you feel it’s not spicy enough.<img loading="lazy" decoding="async" class="aligncenter size-large itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Combine shrimp and Sriracha in a bag or bowl while prepping ingredients.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Heat a Dutch oven on the stove over medium-high heat and add butter to melt.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Add onion and bell pepper, and saute for 3-4 minutes until soft and fragrant.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Add garlic and cook for one minute until fragrant.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Make a big gap in the middle and add your wine and shrimp, making sure all the shrimp is touching the bottom of the pan. Cook for 2-3 minutes on one side, and flip the shrimp to cook 2-3 minutes on the other side until they are opaque and cooked through. Remove each (I use tongs) to a bowl and cover with aluminum to keep warm.</li> <li class="blog-yumprint-method-item" yumprintitem="5">Add chicken broth and water to Dutch oven, and raise heat to high and bring to a boil. Add grits and season with salt and pepper.</li> <li class="blog-yumprint-method-item" yumprintitem="6">Cover and reduce heat to medium-low. It was my favorite meal I had that weekend and was so different/spicy/delicious. I’ve been seeing it lately in magazines/Instagram/etc., but didn’t know where I could try it around here (still don’t), but Tomorrowworld had a bunch of food trucks running the vender booths, so it was so fresh and a perfect combo of flavors. </p> <p>I looked it up when I got home to see what the definition actually was — Báhn Mi is a Vietnamese term for bread or baguette, and in the Western Hemisphere) ‘Bahn Mi’ is just simply a meat-filled sandwich on “Báhn Mi” (bread) or a baguette. Meat on bread… so a sandwich?? Easy enough, I think.</p> <p>Well, this rendition of the chicken bahn mi is based off of Food & Wine’s <em><a href="http://www.foodandwine.com/fwx/food/crispy-chicken-banh-mi-will-make-you-sandwich-guru-you-have-always-wanted-be" target="_blank">Crispy Chicken Banh Mi</a></em> and allrecipes.com’s <em><a href="http://allrecipes.com/recipe/187342/banh-mi/" target="_blank">Banh Mi</a></em> recipe. I learned the hard way to use a food processor instead of trying to chop all the carrots, diakon and onion into matchstick size pieces. Food processor = ease and speed. You gotta taste as you go, right?</p> <p>I’m pretty sure the sandwich we had at Tomorrowworld had some sort of cucumber in the slaw, and I read a few recipes that include it, so really you may add it if you wish. It seems like the diakon radish, carrots and rice vinegar (or rice wine vinegar) are the main, consistent components. </p> <p>Cook the chicken however you want, but I cooked it in an electric Wok (that was my parents and has literally been in the cabinet since I moved in, and we JUST dug it out — like 5 1/2 years later). Anyways, it’s red, it’s large, and it’s awesome. I couldn’t believe how quickly it heated up. You can use any mild high-heat oil for the chicken if you are pan- or wok-frying. I used Grapeseed until I ran out, then added some Canola to make sure it all didn’t get too hot. It got really hot and gave the chicken some nice ‘char’-looking marks — that added some great flavor, and the chicken stayed moist because I kept the lid on the wok most of the time. </p> <p>I can’t believe it’s the first time I’ve used the wok. My grandmother obviously makes the best, we have it once a year, and hers is perfect, Southern and original.. but I’ve tried to do something a little different. Unfortunately my brother isn’t a fan, but he will come around one day! He <em>has </em>to right?? </p> <p>Anyway, my great aunt brought me a whole bag of okra from her garden last week. I pickled half of it (recipe to be added soon), then fried up the other half. In this recipe, I decided to pair two typically southern ingredients — okra and pecans. <span id="more-2640"></span></p> <p>I sliced up the okra and set out three trays: one with the okra, one with an egg and flour mix, and the third with ground pecans. Make sure to salt to taste at the beginning and after you take them out of the fryer. I needed a good dip — don’t all fried things?? I made a ranch based sauce with 1/4 c. sour cream, 1/4 c. Greek yogurt, 2-3 teaspoons horseradish, and about 1/2-1 Tablespoon Homemade Ranch Seasoning mix from Gimme Some Oven (<a href="http://www.gimmesomeoven.com/homemade-ranch-seasoning-mix/">click for her recipe</a>). I keep that her dry ranch mix in my pantry for whenever I need a quick dip. It mixed with sour cream, mayo, and/or Greek yogurt. I added some half-and-half (up to a tablespoon) to thin it out. Whisk it all together, and it turned out to be a perfectly tasty, creamy dip for the okra. I spooned the dipping sauce into two bowls, and added Sriracha to one dip to give a little spice! Pour into a shallow dish. Preheat oil to 350^. Season okra with salt and pepper.
