<p>Are you southern??&nbsp;</p>
<p>I am, and have grown up with hushpuppies all of my life&#8230; and I&#8217;ve loved them all my life! Once I&#8217;ve gotten older though, I&#8217;ve grown to love the more unique versions. I love the ones with jalapenos or crab stuffed inside.&nbsp;</p>
<p>Now, of you&#8217;re not southern or from the US, you may not have a single clue as to what I&#8217;m talking about when I say hushpuppy.. or you may have a different name for these things. &nbsp;It is basically a fried ball of cornmeal batter. I like to use <a href="http://allrecipes.com/recipe/222243/buttermilk-hush-puppies/" target="_blank" rel="noopener">the base recipe from allrecipes.com</a> with cornmeal, buttermilk, and flour &#8211; because it makes a perfect light batter.&nbsp;</p>
<p>Once the batter is mixed, you scoop it out with a <a href="http://amzn.to/2aWwyEH">melon baller </a>or tablespoon and drop it in some hot oil until they&#8217;re fried golden brown.</p>
<p>Here, I&#8217;ve added some shrimp and scallops from my local seafood shop, and some green onions for some color and light onion flavor. I hope you enjoy!</p>

<p>Now for my excuse about the lull in blogging&#8230; I&#8217;ve been blogging somewhere else :-O !</p>
<p>I know, I know&#8230; but I&#8217;ve discovered a little thing called bullet journaling, and I&#8217;ve decided to share all I know by making a website about it! I initially started the bullet journal to keep up with all of my food-blogging and life to-do&#8217;s.. but I&#8217;ve turned the website into more of the priority for the last month or so, and hopefully can find a good balance between blogs soon.</p>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="2">			<div class="blog-yumprint-subheader">Hushpuppies</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Heat the canola oil in a deep fryer or large saucepan to about 365 degrees F.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Combine cornmeal. Flour, sugar, baking soda, ancho chili powder, crushed red pepper, and salt in a large bowl. Whisk buttermilk, vegetable oil and eggs in a separate bowl. Stir wet mixture into the dry mixture. Fold in shrimp, scallops and green onions. .</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Lay out some paper towels and place a cooling rack over them.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">When oil is heated drop 7 or 8 tablespoon sized scoops of batter into the oil. Fry 6-8 minutes or until they’re brown.  Remove to cooling rack.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Continue with the rest of the batter. (Keep warm in a 200 degree oven until ready to serve.)</li>			</ol>

<p><span style="font-weight: 400;">Ok, I don’t know how much that happens to you, but that’s what going on over here.</span></p>
<p><span style="font-weight: 400;">I decided to use two chicken breasts from the fridge and make ‘em hotdog shaped! Then fry ‘em up, and top them with goodness!<span id="more-4860"></span></span></p>

Both are amazing on fried chicken! I made a homemade honey mustard sauce to drizzle over the top. &nbsp;And I used some pre-made barbecue sauce. Use whichever kind you want (or make your own), but I like to use a locally-made sauce called <a href="http://www.vipersauce.com/">Viper sauce</a>. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="3">			<div class="blog-yumprint-subheader">Prep</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Lay each chicken breast flat on a cutting surface and cut longways through the middle to make 4 ‘strips’. Salt and pepper each strip on each side, and roll each tightly in a piece of plastic wrap.  (They will somewhat be shaped like a hotdog). Pace in freezer while you prep everything else (or you can do this the day before)</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Dice onion, add to medium bowl, and cover with cold water. Let sit at least ten minutes.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="4">			<div class="blog-yumprint-subheader">Honey Mustard Sauce</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Whisk honey, mustards, and mayonnaise together in a medium bowl (I used a 2 cup liquid measuring cup, so I could pour into a squeeze bottle). Season with salt and pepper and add to a squeeze bottle if you wish.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="5">			<div class="blog-yumprint-subheader">Chicken & Assembly</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Preheat oven broiler to low and heat oil in a large saucepan to about 330 degrees F - 350 degrees F.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Whisk together flour, celery salt, garlic powder, onion powder, paprika, cracked black pepper, cayenne, breadcrumbs and salt. Add in a can of soda water and mix until smooth.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Prepare hot dog buns by opening them up, and brushing them with a light layer of mayonnaise. Add butter to a skillet and heat to medium. When butter melts, add two buns (face down) at a time to the pan. Heat about 3-5 minutes until the buns start to brown. Move to serving plate.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Add provolone slices to one side of the bun and add to top rack in the oven to let the cheese melt.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Meanwhile, remove chicken from freezer and unroll (2 at a time) into batter. Coat in batter and add to fryer. Fry 8-10 minutes until golden.</li>				<li class="blog-yumprint-method-item" yumprintitem="5">Once cheese is melted, add tomatoes to other half of hotdog bun. Add fried chicken strip to the middle of the bun. Drizzle with the honey mustard and the barbecue sauce. Top with onions and green onions.</li>			</ol>

<p>Living on the coast, I’ve definitely had some yummy shrimp and grits from restaurants, my favorites being Tamara’s Downtown in Fairhope, Alabama, and Bill’s By the Beach in Gulf Shores, Alabama.</p>

<p>Here I’ve made a quick and dirty version in order to make it a 20 minute, one-pot meal. I’m normally not an advocate for the quick-cooking grits, but the only difference is they’re cut into finer pieces… so they cook faster! (Just like quick-cooking oats.) So the product is the same, just the cook-time is quicker!</p>
<p>Once they’re served with some top-notch seafood, it’s no big deal.</p>
<p>Here, I’ve made a spicy version of shrimp and grits using Sriracha to spice things up. I am a #SrirachaFangirl so this rendition was perfect for me. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Combine shrimp and Sriracha in a bag or bowl while prepping ingredients.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Heat a Dutch oven on the stove over medium-high heat and add butter to melt.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Add onion and bell pepper, and saute for 3-4 minutes until soft and fragrant.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Add garlic and cook for one minute until fragrant.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Make a big gap in the middle and add your wine and shrimp, making sure all the shrimp is touching the bottom of the pan. Cook for 2-3 minutes on one side, and flip the shrimp to cook 2-3 minutes on the other side until they are opaque and cooked through. Remove each (I use tongs) to a bowl and cover with aluminum to keep warm.</li>				<li class="blog-yumprint-method-item" yumprintitem="5">Add chicken broth and water to Dutch oven, and raise heat to high and bring to a boil. Add grits and season with salt and pepper.</li>				<li class="blog-yumprint-method-item" yumprintitem="6">Cover and reduce heat to medium-low. Cook 6-10 minutes, stirring occasionally, until liquid is absorbed and grits are done.</li>				<li class="blog-yumprint-method-item" yumprintitem="7">Mix in Parmesan, and add shrimp back to the pot if you wish.</li>				<li class="blog-yumprint-method-item" yumprintitem="8">Serve shrimp over grits and garnish with green onion and more Parmesan.</li>			</ol>

<p>Fried green tomatoes themselves are a southern ‘specialty.’ I could have them plain all day long, but I decided to fancy ‘em up a bit and put ‘em on a slider. I’ve shared a few fried green tomato recipes before, and the only reason I think these are my favorite is because I’ve had them the most recent.. I remember the others being super amazing too →</p>

<p>These sliders&nbsp;are inspired by an awesome restaurant down here in Gulf Shores called <a href="http://www.billsbythebeach.com/">Bill’s by the Beach</a>. Tourists (and locals), I recommend you go… It’s definitely a new favorite in town, and they have amazing seafood (they’re known for their 100% Wild American Shrimp). This dish doesn’t include seafood, but a similar version is on their appetizer menu.</p>

<p>Be sure to make the slaw and Cajun sauce first so the flavors get a chance to meld together.. meld? is that the word? Anyways, you know what I’m saying.</p>
<p>The slaw was the best I’ve ever made myself. In fact, I took the leftover slaw to work the next week and added it to my spicy turkey/pepperjack sub. Sounds a little strange, but it was a good change to our normal lunch rotation of like the 5 restaurants we frequent. <p>Anyways, the Cajun sauce was also a yummy component, and the fried green tomatoes themselves were killer. I fried them in a large fry pan in shallow canola oil about 3-4 at a time, making sure they don’t touch. Flip them halfway through to make them equally brown on each side. They didn’t take long to fry, just about 3-4 minutes each, just make sure they’re nice and golden brown.</p>
<p>I kept the batter simple with buttermilk and panko since there was so much else going on in these little sandwiches. <p>I ended up having plenty of leftovers, so I froze the battered tomatoes, bagged them, and gave them to my grandmother and aunt and uncle. They were easily fried once removed from the freezer and they all gave me a big thumbs up for how they turned out! The slaw got extra compliments :)</p>

Heat medium-large fry pan over medium-high heat, and add bacon in batches. Cook until crispy and move to paper towels. I had two or three batches.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="7">			<div class="blog-yumprint-subheader">For the Tomatoes</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Dry tomato slices with paper towels or kitchen towels, lay out slices on a cooling rack, and season with salt and pepper.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Set out three shallow pans. In the first, add the flour. In the second, whisk together eggs and buttermilk (or milk). In the third, add panko, salt, and pepper.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">With tongs (or your hands), coat each tomato slice first in the flour, then the egg mixture, and finally in the panko.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Drain any excess bacon grease from your pan (if you wish). Fill your pan or saute pan with 1 ½ - 2 inches of oil. Heat oil to 350-375 degrees F. Fry each battered tomato slice in the hot oil for 1-2 minutes per side. Fry about 3-4 at a time, just make sure to not crowd the pan.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Move to a cooling rack over some paper towels, and repeat with the remaining slices.</li>				<li class="blog-yumprint-method-item" yumprintitem="5">To assemble: Drizzle or smear sauce on bottom slider bun, add a fried tomato slice. Top with slaw and 2 half-bacon slices. ENJOY.</li>			</ol>

Don&#8217;t get me wrong, I could probably go months living off of fried okra, but I thought I would preserve some by pickling it! My grandmother is actually the one who suggested it after bragging about a Bloody Mary she had recently &#8212; it was served with some nice big olives, a big ol&#8217; stalk of celery, and some yummy PICKLED OKRA!</p>
<p>I&#8217;ve bought some pickled okra from the grocery store before, because I&#8217;m pretty open to all things pickled (except for maybe pickled pigs feet &#8211; that just scares me). Maybe I should say I&#8217;m up for any pickled vegetables&#8230; The jar didn&#8217;t last very long as I found myself popping it open in the evening when I was hungry, but didn&#8217;t want anything calorie-heavy! These definitely aren&#8217;t, and I&#8217;d eat a few almost every night. I figured, since I&#8217;ve pickled a few cucumbers, and <a href="http://www.thatsquareplate.com/pickled-watermelon-rind/" target="_blank">even recently some watermelon rind</a>, I could handle some okra. &nbsp;</p>

<p>I got to googling, and found a great, simple sounding <a href="http://www.southernliving.com/food/10-best-okra-recipes/classic-okra-recipes-pickled-okra-recipe" target="_blank">post from Southern Living&#8217;s</a> website. I only made about half, but I will share the measurements and recipe from their website, as they&#8217;re pickling experts &#8212; I am still learning. But I must say, after the whole SIMPLE process of getting these in the jars, and pouring the vinegar mixture over the okra, and letting it sit overnight, I&#8217;m sold!</p>

<p>They turned out sour, pickly and perfect. I love the dill and garlic flavors. I shared a jar with my grandmother, and she approved! Place 1 pepper, 1 garlic clove, and 1 tsp. dill seeds in each jar. Bring vinegar, salt, sugar, and 4 cups water to a boil over medium-high heat. Pour over okra, filling to 1/2 inch from top.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Wipe jar rims; cover at once with metal lids, and screw on bands (snug but not too tight). Place jars in canning rack, and place in simmering water in canner. Add additional boiling water as needed to cover by 1 to 2 inches.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Bring water to a rolling boil; boil 10 minutes. Remove from heat. Cool jars in canner 5 minutes. Transfer jars to a cutting board; cool 12 to 24 hours. Test seals of jars by pressing center of each lid. If lids do not pop, jars are properly sealed. Store in a cool, dry place at room temperature up to 1 year.</li>			</ol>

Unfortunately my brother isn&#8217;t a fan, but he will come around one day! He&nbsp;<em>has&nbsp;</em>to right??&nbsp;</p>
<p>Anyway, my great aunt brought me a whole bag of okra from her garden last week. I pickled half of it (recipe to be added soon), then fried up the other half. In this recipe, I decided to pair two typically southern ingredients &#8212; okra and pecans.&nbsp;<span id="more-2640"></span></p>
<p>I sliced up the okra and set out three trays: one with the okra, one with an egg and flour mix, and the third with ground pecans.&nbsp;Make sure to salt to taste at the beginning and after you take them out of the fryer. It&#8217;s necessary if your pecans weren&#8217;t pre-salted.</p>

I served with a Greek yogurt ranch and a Sriracha ranch. <p>The pecans gave a&nbsp;crunchy texture, and the okra was fried in the middle perfectly. I needed a good dip &#8212; don&#8217;t all fried&nbsp;things??&nbsp;I made a ranch based sauce with 1/4 c. sour cream, 1/4 c. Greek yogurt, 2-3 teaspoons horseradish, and about 1/2-1 Tablespoon Homemade Ranch Seasoning mix from Gimme Some Oven (<a href="http://www.gimmesomeoven.com/homemade-ranch-seasoning-mix/">click for her recipe</a>). I keep that her dry ranch mix in my pantry for whenever I need a quick dip. It mixed with sour cream, mayo, and/or Greek yogurt. I added some half-and-half (up to a tablespoon) to thin it out. Whisk it all together, and it turned out to be a perfectly tasty, creamy dip for the okra. I spooned the dipping sauce into two bowls, and added Sriracha to one dip to give a little spice! I heart spice.&nbsp;</p>

Pour into a shallow dish. Whisk together eggs and flour (or buttermilk) in another shallow dish.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Pour oil 2 inches high in a medium or large pot or shallow pan. Preheat oil to 350^. Season okra with salt and pepper. Dip in egg mixture, then the ground pecans.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Fry 5-6 minutes at 350^ until golden brown. Transfer to a cooling rack with paper towels underneath to cool.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Serve with a ranch sauce.</li>			</ol>
