<p>So the last post about pesto was added for a reason.. here&#8217;s the reason:&nbsp;</p>
<p>Chicken Breasts with a Parmesan Crumb Topping from Cook&#8217;s Encyclopedia (p. 110). This book is an awesome guided recipe book with plenty of step-by-step pictures for any skill level. The book calls for &#8216;pesto&#8217; which you can store-buy or <a title="Basil Pesto" href="http://www.thatsquareplate.com/recipe/basil-pesto/">make your own</a>.&nbsp;<span id="more-1330"></span></p>
<p>Here&#8217;s what you need:</p>
<p>3-4 chicken breasts, pesto sauce, bread crumbs, Parmesan cheese, lemon zest, olive oil, &amp; salt &amp; pepper</p>
<p>First, preheat your oven to 425 degrees F. Slice through each chicken breast from the side through the middle making each a &#8216;pocket.&#8217;</p>

<p>Spread about a tablespoon of pesto in each pocket and close them back up. Line all chicken breasts up in an ovenproof dish.&nbsp;</p>
<p>Mix the rest of the pesto (about 2 Tbsp) in with your breadcrumbs, Parmesan, and lemon zest. Spread over the chicken breasts, drizzle with oil, and sprinkle with salt &amp; pepper.</p>
<p>Line them puppies up Doesn&#8217;t it look yummy? Bake until brown</p>
<p>Bake for about 20 minutes until no more&nbsp;pink. The book calls for serving with roasted vine tomatoes &#8212; I served with breadcrumb stuffed tomatoes (that&#8217;s another post).&nbsp;</p>

<p>The seeds on top are just for decoration and a little texture. I used black and white sesame seeds after brushing the tops with a beaten egg, but poppy seeds can be used as a replacement.</p>
<p>The result was a delicious treat for a basketball-watching Tuesday night.<span id="more-708"></span></p>
<p>The version online has a Dijon-mayo sauce, but we dipped these in barbecue sauce. Yum!</p>
<ol>
<li>Preheat the oven to 350 degrees F.</li>
<li>Cut each triangle of crescent roll dough into thirds lengthwise, making 3 small strips from each roll.</li>
<li>Brush the dough strips lightly with Dijon mustard. Put the mini hot dogs and cheddar on 1 end of the dough and roll up.</li>
<li>Arrange them, seam side down, on a greased cookie sheet. Brush with egg wash and sprinkle with poppy seeds or sesame seeds. Bake until golden brown, about 12 to 15 minutes. Serve warm.</li>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Preheat the oven to 350 degrees F.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Cut each triangle of crescent roll dough into thirds lengthwise, making 3 small strips from each roll.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Brush the dough strips lightly with Dijon mustard. Put the mini hot dogs and cheddar on 1 end of the dough and roll up.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Arrange them, seam side down, on a greased cookie sheet. Brush with egg wash and sprinkle with poppy seeds or sesame seeds. Bake until golden brown, about 12 to 15 minutes. Serve warm.</li>			</ol>

This dip only needs a few things thrown into a food processor, and it&#8217;s done.</p>
<p>The simplicity of this dip baffled me, and also I had never had Hearts of Palm as a main ingredient in anything. I had only had them, really, in <a title="Felix's" href="http://www.felixsfishcamp.com/" target="_blank">Felix&#8217;s Fish Camp&#8217;s</a> <a title="Felix's house salad" href="http://www.foodspotting.com/places/12612-felix-s-fish-camp-restaurant-spanish-fort/items/489714-camp-salad" target="_blank">house salad</a> (which is absolutely delicious, by the way). I had some Pita Chips to dip in the final product, and to my surprise is was pretty good! Similar to a hummus. The hearts of palm made the dip very light, which is&nbsp;perfect for an easy, tasty&nbsp;lunch.<span id="more-687"></span></p>
<p>Here&#8217;s what you need:</p>

<p>Here&#8217;s how to do it:</p>
<p>Using the side of a chef’s knife, mash the garlic to a paste with a generous pinch of salt. Scrape the paste into a food processor. Add the hearts of palm and oil and process to a medium-fine paste. Add the lime zest, season with salt and white pepper and pulse just to blend. Transfer the dip to a bowl and serve with plantain chips, pita chips or flatbreads.</p>
<p>Easy as that!</p>
