Craft. Love.</span></a><span style="font-weight: 400;"> I decided to use shrimp instead of chicken because I just got some super fresh gulf shrimp from Rouse’s, and that’s the version I usually order from the restaurant anyways. I even let Rocky try this, and he approved — I’m telling you that’s an accomplishment! And here you see I used chives to garnish because I threw my scallions out yesterday! I keep them by the window in a cup, so I ALWAYS have them on hand.. Add garlic and saute for one minute or until fragrant, careful not to let the garlic burn.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Add chicken and sear on all sides, reduce heat to medium and add Worcestershire, teriyaki, and soy sauces and lemon juice and cook until chicken is cooked through.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Transfer chicken to a plate and cover with foil to keep warm.</li> </ol> </div> <div class="blog-yumprint-method-section" yumprintsection="3"> <div class="blog-yumprint-subheader">For the Rice</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Add butter and garlic to pan with chicken drippings and saute garlic for one minute or until fragrant, careful not to burn garlic.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Add rice, Worcestershire, teriyaki, and soy sauces and lemon juice and mix until well combined.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Reduce heat to medium low and stir constantly until sauce is completely incorporated and absorbed.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Add chicken back to the pan and stir to incorporate. It’s also quite comparable to my love for some good, fresh Mexican food. Here I’ve come up with a new favorite dish combining BOTH of these favorites.</p> <p>I literally live less than 10 minutes from the beach, so we have a lot of fresh seafood shops around here. The gulf is famous for it’s shrimp, and I could literally have them every single day. I like to get the extra large shrimp from a favorite hidden little seafood shop in Bon Secour (Aquila). When I bought these, I had no idea what I was going to do with ’em, but since it was the weekend, I wanted to make something a little different and full of flavor and spice.</p> <p>I feel like <a href="http://www.nbc.com/saturday-night-live/video/weekend-update-stefon-on-spring-break/n33632" target="_blank">SNL’s Stefon</a> when I say <em>these tostadas have everything</em> ~ the big, beautiful Chipotle marinated gulf shrimp, a spicy Serrano pico de gallo, black bean puree, lime-cilantro rice, and a chipotle sour cream to top it off. I decided to cut the rounded edges off the corn tortillas and make them into squares– maybe so they’d look nice on my ‘square plates’ .. I dunno, but I liked how they turned out!<span id="more-3963"></span></p> <p>I used a rice maker to cook the white rice. Actually Greg is the one who usually cooks it, and this was my first time attempting. It’s a recipe called “New Orleans Barbecue Shrimp.” Now if you’ve never been to New Orleans, you’re missing out on some of the best food of your life, and pure craziness. And pure awesomeness. The recipe is actually a clipping from an old newspaper article of Greg’s grandparents. He introduced it to me a few years ago, and told me his grandparents used to cook it for him when he was younger and he loved it. He definitely grew up with a more complex palate than I did. Mine was bland until <em>mayyyybe </em>college.. and it’s been expanding ever since. I wouldn’t have had this dish at a young age.. I liked shrimp, but not spice. And definitely not onions (back in the day.) Today, I’m a HUGE fan of onions, spice, and much, much more. Thank goodness palates change people. Our drug store created a cookbook with submissions from family and friends of the community to help our Relay for Life team. It’s just good. Serving with the rice makes it last longer – which is always a good thing.</p></div> <p>As soon as I spotted the recipe in the cookbook, I took a picture of it and sent it to Greg. Then, I requested to have it for my birthday! It was just as I remembered – spicy, buttery, and savory. The shrimp works so well with the garlic, onions, lemon and spice. I like to use fresh large or extra-large shrimp from the gulf. We have a favorite seafood shop in Bon Secour (about 15 minute away) that we visit anytime we want to cook shrimp. It’s pretty much shrimp cooked in a skillet with a lotta butter, garlic, onions, and spice (<em><a href="http://hickswrites.blogspot.com/2010/08/new-orleans-dining-pascals-manale.html" target="_blank">here’s a good article on the origination of the term</a></em>). All recipes vary a bit, but this is our favorite we’ve found. I’ve had plenty of yummy versions of the barbecue shrimp, but I really always come back to this one and LOVE it. It’s a perfect combination of flavors. You end up with tons of extra butter/lemon/garlic/onion sauce that is just to die for. I suggest you buy (or <em>make</em>)<em> </em>a nice fresh loaf of Italian bread to serve alongside the shrimp. This is the first time we’ve made rice to serve with the shrimp and it’s a great addition to soak up all the extra flavor too. I cooked plain white rice in half water/half chicken broth seasoned with salt and pepper. It’s easy to throw the rice in a rice cooker (<a href="http://amzn.to/1Nyl4aU" target="_blank">like this one from Amazon</a>), and let it cook, while you focus on the shrimp dish. Also, don’t forget to heat the bread in the oven for a bit. When the onion begins to brown, add garlic. When the garlic begins to take on color, add the celery salt, chili powder, salt and pepper. Stir for one minute. Add lemon juice, Worcestershire sauce and Tabasco.
