I woke up Saturday and really wanted to make some kind of yummy breakfast. After my failed attempt at making some biscuits (sadface), I decided I’d make something that’s always a hit… <a href="http://thatsquareplate.com/tag/pancakes">Pancakes</a>! I realized I was low on milk, so I couldn’t use <a href="http://www.thatsquareplate.com/pancakes-blueberry-peach-sauce/">my normal pancake recipe</a>. Also, I found that I had a surplus of almond milk in my fridge, so I <a href="https://www.google.com/webhp?sourceid=chrome-instant&ion=1&espv=2&ie=UTF-8#q=almond%20milk%20pancakes" target="_blank">googled almond milk pancakes</a>. I ran across <a href="https://silk.com/recipes/almond-pancakes" target="_blank">this recipe</a> from Silk’s website. The almond milk takes the place of the regular milk or buttermilk I usually use. I replaced the egg with a <a href="http://minimalistbaker.com/how-to-make-a-flax-egg/" target="_blank">flax seed egg</a> — I’ve used this a few times, and it never fails. I always tend to <a href="https://www.google.com/webhp?sourceid=chrome-instant&ion=1&espv=2&ie=UTF-8#q=flax%20seed%20egg" target="_blank">google flax seed egg</a> when I’m out of them, and I find the ratio of 1 egg to 2.5 tablespoons water is a perfect substitute (tip from <a href="http://minimalistbaker.com/how-to-make-a-flax-egg/" target="_blank">Minimalist Baker</a>). [and yes, I’m a <a href="http://www.urbandictionary.com/define.php?term=google-a-holic" target="_blank">Google-a-holic</a> <– please click this to see the Urban Dictionary definition! HA. Guilty.]</p> <p>Anyway, I try to use as little sugar as possible in my day-to-day, so here, I used a tablespoon of Truvia Baking blend. It sweetens the pancakes perfectly and contains 75% fewer calories because it uses natural stevia for sweetness. It’s a nice ingredient to have in the pantry, and you can find it in the grocery store’s baking section or on Amazon <em><a href="http://amzn.to/1QFAniX" target="_blank">here</a>. </em>If you don’t have this certain sweetener, you can use honey, agave, or regular sugar — whatever sweetener you prefer.</p> <p><span id="more-3570"></span>These pancakes turned out delicious, even though Greg commented on the color. They weren’t as browned as normal, but the flavor was still wonderful. I made a Grand Marnier/Greek yogurt/vanilla mixture and added some strawberries to the top. Grand Marnier is an orange-flavored liqueur I keep in my cabinet for margaritas — It’s a yummy addition… and really all you need is a tiny bit to add the orange flavor. The yogurt mix was a great dip for the strawberries (I definitely ate more than the two pictured!). Rocky (my super-picky brother) had the pancakes with regular syrup and ate all of them. Greg, his dad, and I split the remainder, and I got nothing but compliments. Whisk canola oil and almond milk in with the flax mix.</li> <li class="blog-yumprint-method-item" yumprintitem="1">In another bowl, whisk together the dry ingredients (salt, flour, sweetener, and baking powder).</li> <li class="blog-yumprint-method-item" yumprintitem="2">Heat a skillet or pan over medium-high heat (around 360 degrees to 375 degrees F). Pour dry ingredients in with wet ingredients, and mix until combined.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Spray skillet with cooking spray, and pour 8 even pancakes (about 1/4-1/3 cup in size). Flip after 3-4 minutes. I knew I had just bought a nice big pack of Wright’s bacon and wanted to make something yummy for breakfast. I got to googling “things to do with bacon” and ran across <a href="http://www.foodnetwork.com/recipes/articles/50-things-to-make-with-bacon.page-5.html" target="_blank">this link</a> (<em>50 Things to Make with Bacon</em> (!!!)) from Food Network. In fact, I think I have this mini-book in one of my Food Network magazines somewhere. (The internet is easier though.) I got to reading, and OF COURSE, everything on the list sounded good, but I wanted to find something simple that I had all of the ingredients for….</p> <p>#45. The recipe is easy enough. They literally give you the recipe in like 20 words. Here are mine: Cook your bacon, grate your apple, then mix all ingredients together and pancake it up! </p> <p>I have the super-est of the super tools that I used to grate my apple. It’s a <a href="http://amzn.to/1Ra190K" target="_blank">Presto Salad Shooter</a> that belonged to my mom. I just pulled this thing out last year sometime. Then I fell in love… And I know I have the outdated version, but this thing is amazing. I use it if I have a ton of cheese to shred for a recipe. It’ll shred or slice cheese in a jiffy — also you can use it for vegetables, fruits and more. (<a href="http://amzn.to/1Ra190K" target="_blank">check it out here</a>). I totally suggest to serve with butter and maple syrup. I added additional bacon on top, and really Greg suggested to leave out the crumbled bacon from the batter, and to only TOP the pancake with it. Because of the flavor of the bacon grease. Pancakes are such a simple, yummy treat. And most of the ingredients are staples in our house. The from-scratch kind are always the best, and really super simple!</p> <p>I always go to <a href="https://www.google.com/url?sa=t&rct=j&q=&esrc=s&source=web&cd=1&cad=rja&uact=8&ved=0CB4QFjAAahUKEwjG5NC-idLHAhUKJh4KHeUzCx4&url=http%3A%2F%2Fallrecipes.com%2Frecipe%2Ffluffy-pancakes-2%2F&ei=BqHjVcbJOYrMeOXnrPAB&usg=AFQjCNGCeG3UyZebpPhHKp7536pIPpvNnQ&sig2=M6CEiezYBGXWwZB088I2mw" target="_blank">this same recipe</a> for the base, and sometimes experiment a bit with the topping and ingredients. Here — I happened to be out of eggs, so I replaced the egg with a tablespoon of ground flaxseed. The flaxseed adds some Omega 3’s, antioxidants, and fiber. I only used a tablespoon, but I will add more next time. The addition of the flaxseed doesn’t change the flavor (believe me, Rocky would have told me).</p> <p>Also, I also swapped the sugar out for some <a href="http://amzn.to/1Jvi0ZB" target="_blank">Truvia baking blend</a> and light brown sugar. The baking blend is a great substitute for straight up sugar, and you only need half as much as the original recipe calls for. I also added a bit of brown sugar, because brown sugar is just plain amazing. </p> <p>They turned out perfectly sweet, fluffy, and flavorful! Even Rocky ate them all! Even though he’s very picky, he is a breakfast fan. This is such a simple sauce, just add it all to a pan while you’re prepping your pancakes, and it should be done by the time you’re done. I used both frozen fruits, and the taste was still phenomenal. The cinnamon and sugar added the sweetness, and I added water to make sure it wasn’t TOO sweet, and to make it a bit liquidy. I’m excited to try out different liquids in the next batch (think Amaretto or Grand Marnier). The first time I made them, I served them with a blueberry/Greek yogurt/honey sauce. This sauce strangely tasted like the old Wildberry pop-tart filling (only a healthier version). Go ahead and add these to a large mixing bowl.</p> <p>Combine all of your dry ingredients (flours, Truvia, salt, baking soda, and baking powder). Whisk together. </p> <p>Melt your butter and add to your ‘soured’ milk. Whisk egg and vanilla into wet mixture.</p> <p>Add your dry ingredients to your wet ingredients, and the batter is ready when the lumps are gone. Spray your pan/skillet/griddle with cooking spray or oil.
