But pair them up with some nice, fresh gulf shrimp, and I’m sold.<span id="more-4796"></span></p>
<p>Living on the coast, I’ve definitely had some yummy shrimp and grits from restaurants, my favorites being Tamara’s Downtown in Fairhope, Alabama, and Bill’s By the Beach in Gulf Shores, Alabama.</p>

<p>My now goal is to try them anywhere and everywhere I can find them, and hopefully report back with some new favorites! I know I’ll find some.. They’re on about every seafood restaurant’s menu around.<br />

<p>Here I’ve made a quick and dirty version in order to make it a 20 minute, one-pot meal. I’m normally not an advocate for the quick-cooking grits, but the only difference is they’re cut into finer pieces… so they cook faster! (Just like quick-cooking oats.) So the product is the same, just the cook-time is quicker!</p>
<p>Once they’re served with some top-notch seafood, it’s no big deal.</p>
<p>Here, I’ve made a spicy version of shrimp and grits using Sriracha to spice things up. I am a #SrirachaFangirl so this rendition was perfect for me. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Combine shrimp and Sriracha in a bag or bowl while prepping ingredients.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Heat a Dutch oven on the stove over medium-high heat and add butter to melt.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Add onion and bell pepper, and saute for 3-4 minutes until soft and fragrant.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Add garlic and cook for one minute until fragrant.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Make a big gap in the middle and add your wine and shrimp, making sure all the shrimp is touching the bottom of the pan. Cook for 2-3 minutes on one side, and flip the shrimp to cook 2-3 minutes on the other side until they are opaque and cooked through. Remove each (I use tongs) to a bowl and cover with aluminum to keep warm.</li>				<li class="blog-yumprint-method-item" yumprintitem="5">Add chicken broth and water to Dutch oven, and raise heat to high and bring to a boil. Add grits and season with salt and pepper.</li>				<li class="blog-yumprint-method-item" yumprintitem="6">Cover and reduce heat to medium-low. Cook 6-10 minutes, stirring occasionally, until liquid is absorbed and grits are done.</li>				<li class="blog-yumprint-method-item" yumprintitem="7">Mix in Parmesan, and add shrimp back to the pot if you wish.</li>				<li class="blog-yumprint-method-item" yumprintitem="8">Serve shrimp over grits and garnish with green onion and more Parmesan.</li>			</ol>

It was a little fast-service kinda hibachi restaurant, and honestly, I have no idea why it didn’t last, because it was THE place for a short time. </span><span id="more-4722"></span></p>
<p><span style="font-weight: 400;">I still feel the same about bittersweet Sundays, and I still agree with my old-self that hibachi makes pretty much everything better &#8212; especially when you add some fresh shrimp! </span></p>

<p><span style="font-weight: 400;">I found this quick 20-minute version of chicken hibachi on a blogger friend Meaghan’s site </span><a href="http://cookcraftlove.com/"><span style="font-weight: 400;">Cook. Craft. Love.</span></a><span style="font-weight: 400;"> I decided to use shrimp instead of chicken because I just got some super fresh gulf shrimp from Rouse’s, and that’s the version I usually order from the restaurant anyways. <p><span style="font-weight: 400;">I cooked some white rice to use in the recipe, but I’m sure any kind of rice would be delicious. I even let Rocky try this, and he approved &#8212; I’m telling you that’s an accomplishment! And here you see I used chives to garnish because I threw my scallions out yesterday! I keep them by the window in a cup, so I ALWAYS have them on hand.. But this batch had about had it.<br />

Add garlic and saute for one minute or until fragrant, careful not to let the garlic burn.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Add chicken and sear on all sides, reduce heat to medium and add Worcestershire, teriyaki, and soy sauces and lemon juice and cook until chicken is cooked through.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Transfer chicken to a plate and cover with foil to keep warm.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="3">			<div class="blog-yumprint-subheader">For the Rice</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Add butter and garlic to pan with chicken drippings and saute garlic for one minute or until fragrant, careful not to burn garlic.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Add rice, Worcestershire, teriyaki, and soy sauces and lemon juice and mix until well combined.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Reduce heat to medium low and stir constantly until sauce is completely incorporated and absorbed.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Add chicken back to the pan and stir to incorporate. Serve warm with cold Yum Yum sauce.</li>			</ol>

<p>I&#8217;ve been trying to be &#8216;good&#8217; this January and make healthier choices about food &#8212; zoodles (zucchini noodles) are a completely guilt-free way of enjoying veggies masked as pasta (which is one of my go-to dinner choices). I&#8217;ve shared two Zoodle recipes before: my <a href="http://www.thatsquareplate.com/garlic-parmesan-zoodles/" target="_blank">Garlic Parmesan Zoodles</a>&nbsp;(which was one of my first &#8216;top&#8217; recipes) and these <a href="http://www.thatsquareplate.com/veggie-ribbons-lemon-rosemary-white-wine-sauce/" target="_blank">Veggie Ribbons with a Lemon Rosemary&nbsp;White&nbsp;Wine Sauce</a>. They both were delicious, but this dish I&#8217;ve taken a different direction.<span id="more-4133"></span></p>
<p>This is a &#8216;one-pan&#8217; recipe, where I make the sauce in the pan and then add the zoodles at the end to cook through and soften to an &#8216;al dente&#8217; texture. The mushroom merlot sauce is super simple, I LOVE <a href="http://www.thatsquareplate.com/index/cooking-with-booze/wine/">cooking with wine.</a>.. usually it&#8217;s white, but I needed to change it up a bit!&nbsp;</p>

<p>In order to remove excess moisture from the zoodles, lay them out on some paper towels while prepping your other ingredients. Sprinkle them with salt, and let them sit so the moisture draws out. Before using them, I wrapped them up in a kitchen towel and squeezed em all up! You don&#8217;t want a watery sauce!<br />

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">In a large saucepan or saute pan, heat olive oil over medium-high heat. Add onions and saute until tender (about 2-3 minutes). Add flour and stir until incorporated.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Add mushrooms, wine, tarragon and thyme and bring to a boil. Reduce heat and add lemon zest and season with salt and pepper.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Add zucchini and yellow squash, stir together and continue to simmer. Raise the heat again if you need to to bring it all to a boil (then reduce to a simmer).</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Simmer together 8-10 minutes until zoodles are cooked through, and sauce has thickened up a bit. Add lemon juice and a pinch of red pepper flakes if using.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Remove from heat and cut cold butter in a few pieces and add to the mix. Stir until butter is melted and enjoy!</li>			</ol>

<p>It&#8217;s based on the method of cooking the meat. It is first sautéed, removed from heat, and finishes cooking in the sauce. It really says the meat is supposed to be cut up (which maybe I should try next time&#8230; yumm!)</p>
<p>Anyway,&nbsp;<a title="Chicken and Mushroom Fricassee Recipe" href="http://www.foodandwine.com/recipes/chicken-and-mushroom-fricassee" target="_blank">this recipe</a> was from Food &amp; Wine&#8217;s website (contributed by Joy Manning). It&#8217;s a pretty healthy dish, considering only 1.5 Tbsp. of heavy cream is added at the end, and everything else is pretty light. I used less mushrooms, because I didn&#8217;t buy enough. Oops! But it was still excellent, and I don&#8217;t know if two pounds of mushrooms are really necessary.</p>
<p>This whole dish is made using just one large pan, so that makes the clean up easy. <span id="more-1439"></span>Next time, I will try to remember to butterfly the chicken instead of pounding it out.</p>
<p>The tarragon is added at the end for a fresh taste, while the splash of heavy cream adds a richness to the sauce.</p>
<p>Here&#8217;s what you need:</p>

<p>Heat your grapeseed oil on medium-high heat until shimmering. &nbsp;Salt &amp; pepper the chicken breasts on both sides and add your chicken breasts to hot pan. Cook about 3 minutes on each side until they get a bit crisp and start to brown.</p>
<p>Remove from heat, and add your mushrooms, shallots, salt, and butter to pan, lower heat to medium, and cook mushrooms for about 12 minutes until they start to brown.</p>

<p>Add the flour and cook for a minute more.</p>
<p>Add the broth, wine, and chicken and raise heat to bring to a simmer.</p>

<p>Lower heat to medium and cover and cook until chicken is cooked through (about 5 minutes). Plate chicken on serving dish(es).</p>
<p>Increase heat and bring sauce to a simmer and cook, uncovered, for about 5 more minutes until slightly reduced. Remove from heat and add heavy cream and tarragon. Spoon this sauce over the chicken. Tada!</p>

I looked up gorgonzola cheese and found honey, apples, brandy, sugar, olive oil, and thyme. <a id="static_txt_preview" href="http://www.amazon.com/gp/product/0316118400/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0316118400&amp;linkCode=as2&amp;tag=thasqupla-20&amp;linkId=Z5223KSJGFZ6TGG7" target="_blank">The book</a>&nbsp;was a Christmas present to myself and is a great companion to have when messing around in the kitchen. <p>I ended up using a thick slice of bread from a loaf I had made earlier in the day called &#8216;Three-Cheese Bread&#8217; from our bread maker&#8217;s included Cookbook.. I&#8217;ll link the recipe when I get it online. It&#8217;s delicious. &nbsp;This also gave me another excuse to use my oil/vinegar-sprayer contraption, a new kitchen favorite.&nbsp;<span id="more-1099"></span></p>

<p>Heat on medium heat until butter is melted and pecans are lightly toasted (around 5 minutes). Stir often to coat the pecans in the sugar and butter.</p>

<p>For the Brandy-Apples, add&nbsp;brandy, apples, salt, and honey into the same saucepan from earlier, and heat on medium high until boiling. Stir and reduce heat to medium-medium low until simmering. Cover and cook for around 10 minutes. Stirring occasionally until the apples are soft.</p>
<p>To assemble flatbreads, lightly coat bread with olive oil. Lay 4 brandy-apple slices on each toast. Top with strips of steak, gorgonzola cheese, candied pecans, and thyme.</p>
<p>Split toppings between the two flatbreads and place in preheated oven. &nbsp;Heat for about 10 minutes. &nbsp;You may want to turn the broiler on at the end to get the toppings hotter. (I always do!)</p>
