I love trying to perfect them, and seem to keep falling back to Alton Brown’s recipe (</span><a href="http://www.foodnetwork.com/recipes/alton-brown/crepes-recipe.html"><span style="font-weight: 400;">see it here</span></a><span style="font-weight: 400;">). I just added a little of the cheese, but it adds a smooth texture and subtle creaminess.<br /> </span></p> <p><span style="font-weight: 400;">The berry compote is a super simple mix over medium-high heat. I cook this down at least 20 minutes while my crepes are in the process of cooking. — or while I am trying to manage them. Stir the compote every 5 minutes or so. It should be done about the time all of the crepes are finished. If you need to thicken the compote, add a little cornstarch + water mix (equal parts). I made these into little quesadillas and cut ‘em like they do at Taco Bell! Ha! Melt butter in a medium non-stick skillet or fry-pan and pour about ¼ cup of the batter into the pan. Swirl the pan so it coats it completely. I love the combo of apples and peanut butter, so I made a sweet peanut butter sauce to drizzle over the top. It’s a super easy mix of peanut butter and powdered sugar… mix it up and thin it out with some water, and you’ve got yourself a super-simple, delicious topping. I still have some leftover too, so I plan on using them to top some brownies or something… I tend to say I’m going to make dessert more often than I actually DO, I always grab some butter and set it out on the counter, just to end up letting the day get away from me, and adding it back to the fridge. Also, the RumChata is not a necessary addition to the crepes, you may use any type of liqueur you like, of just water, or whatever. I just like the sweet, creamy flavor it adds to the batter. YUM. If you don’t know what RumChata is, check out their website, or find it in the liqueur store and try it yourself. They’re marketing geniuses I tell you. Anyways, I found some little heart cookie cutters in their Valentine section. I’m not much of a baker, and don’t own many cookie cutters, but these were THREE FOR A DOLLAR. I couldn’t pass it up, right?!</span></p> <p><span style="font-weight: 400;"> I figured they could come of some use one of these days. That day came way before I expected…<span id="more-4154"></span><img loading="lazy" decoding="async" class="aligncenter size-full wp-image-4164" title="Red Velvet Cookies with RumChata Frosting" src="http://www.thatsquareplate.com/wp-content/uploads/2016/02/Red-Velvet-Cookies-with-RumChata-Frosting-5.jpg" alt="Make these little red velvet cake cookies for that upcoming holiday you hate! Now, I said I wasn’t much of a ‘baker’, so I made the mistake of not separating the batter enough on my pan (DUH.)… so when they were finished baking, all the cookies edges were touching… and I’m kind of a perfectionist, so this kinda made me mad… but whatever, I decided I’d just work with it. </span></p> <p><span style="font-weight: 400;">I decorated them with some nice frosting stripes and put my cookie cutters to work! I waited until they cooled, striped them all with the RumChata cream cheese frosting, and THEN cut each of them out with one of the heart cookie cutters I had! YAY! I was excited with the way they turned out even though I had a bunch of random ‘rest of cookie’ on the pan. I was ok with that though, because they were freakin’ TASTY. I suggest that you just make them round like a normal person, just make sure you leave enough room between each cookie — learn from my mistakes! The cookies were super light and fluffy, like little mini-cakes, and tasted SO good, I thought they were even better the next day. I kept the bag of random ‘rest of cookie’ pieces because they just tasted </span><i><span style="font-weight: 400;">that </span></i><span style="font-weight: 400;">good… I hated to waste ‘em!</span></p> <p><span style="font-weight: 400;">I changed up Paula’s frosting a bit by substituting her vanilla for RumChata — since I was drizzling, I wanted to make it a little bit thinner. She used the ‘frosting’ as a filling stuffed between two cookies, but I just wanted a light drizzle. </span></p> <p><a href="http://rumchata.com/"><span style="font-weight: 400;">RumChata</span></a><span style="font-weight: 400;">, if you haven’t heard of it, is a rummy-creamy liqueur that’s used in a lot of different specialty drinks. yumprintitem="1" itemprop="ingredients">1 stick butter, softened</li> <li class="blog-yumprint-ingredient-item" yumprintitem="2" itemprop="ingredients">3 Tbsp. RumChata</li> <li class="blog-yumprint-ingredient-item" yumprintitem="3" itemprop="ingredients">2 cups powdered sugar, sifted</li> </li> </div> <div class="blog-yumprint-method-section" yumprintsection="2"> <div class="blog-yumprint-subheader">For the Cookies</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Preheat oven to 375 degrees F. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt.</li> <li class="blog-yumprint-method-item" yumprintitem="1">In the bowl of your mixer, cream butter and sugar together until combined. Add eggs one at a time. Add buttermilk, vinegar, vanilla, and food coloring until combined. Add your dry ingredients and mix until combined.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Line 2 sheet pans with parchment paper or silpat baking mats. Use an ice cream scoop to spoon 2-inch size batter balls. (Make sure to leave enough room in between.) Bake 8-10 minutes and remove from oven. Allow to cool a few minutes, then transfer to a wire rack to cool.</li> </ol> </div> <div class="blog-yumprint-method-section" yumprintsection="3"> <div class="blog-yumprint-subheader">For the Frosting</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">In your mixer, combine cream cheese, butter, and RumChata. Add powdered sugar slowly and beat until incorporated. Raise speed of mixer until it turns light and fluffy. Transfer to a plastic bag and snip a tiny hole in the corner of the bag. Drizzle over cooled cookies, then cut with a cookie cutter if you wish.
