<p>We don&#8217;t have a Chipotle nearby (unless I wanna drive an hour).. but we do have a place with a taco/bowl kinda bar. It&#8217;s only seasonally open, in fact I just realized its open for the season [hooray!] I&#8217;m talking about <a href="https://www.facebook.com/thegulfal" target="_blank">The Gulf</a> for any locals or wanna-vacation-to-Gulf-Shores people.&nbsp;<span id="more-4779"></span></p>
<p>I actually <a href="https://www.instagram.com/p/BDtxSsDze2v/?taken-by=thatsquareplate" target="_blank">went there the other day</a> and got a bowl with brisket for the first time. This place is right on the beach, so there&#8217;s nothing like eating fresh food, having a drink, and looking over the water. &nbsp;I made this when I was on the Advocare cleanse, even though it&#8217;s a little cheaty (with the sour cream in the sauce). It was probably my favorite meal of the whole ten days!&nbsp;<br />

But feel free to use whatever type of fish you have on hand or that&#8217;s available to you. The swordfish was great though! It&#8217;s light and white and pretty inexpensive.. not to mention it sounds pretty cool to be eating swordfish.. right?!</p>
<p>Also the pickled veggies are from the extra vegetables in <a href="http://www.thatsquareplate.com/skillet-charred-fish-tacos/" target="_blank">this&nbsp;Skillet-Charred Fish Tacos recipe</a>. Mix fish rub together in a small bowl, then sprinkle on both sides of each filet. Try to cover it all up, press spices over fish with your fingers if needed.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Heat a cast iron skillet over medium-high heat and add oil. Once heated, add fish filets. Cook 2 minutes and turn over and cook an additional 2 minutes. Move skillet into the oven and cook an additional 6-8 minutes until fish is nice and flaky.</li>			</ol>

Cook for 20-30 minutes (until your rice cooker tells you its done). Stir every 7-10 minutes making sure it’s not sticking.</li>			</ol>

Process until chopped and add sour cream and lime juice and blend until smooth.</li>			</ol>

Even though really the first time I ever had them was a few years ago, I feel like I&#8217;ve eaten enough in the past few years to make up for an entire lifetime! There are so many different variations, and I have a place about 5 minutes away that serve my favorite version (so far).&nbsp;<a href="http://cactusflowercafe.net/menu/" target="_blank">Cactus Flower</a> in Gulf Shores serves mahi tacos, and I like to get them flash fried with a soft flour tortilla. They serve their tacos with shredded cabbage, pico de gallo, a creamy lime sauce, and their California lime dressing (my fav).</p>
<p>Here, I&#8217;ve used some fresh mahi mahi, cabbage, and jalapenos from our local&nbsp;<a href="http://www.coastalalabamamarket.com/home" target="_blank">Farmer&#8217;s Market</a>. The peach salsa was an on-a-whim kinda thing, because my original idea &#8211; a mango salsa &#8211; was changed because of a forgotten item at the grocery store (<em>the freakin&#8217; mango &#8212; duh!) </em>The peach salsa turned out super-tasty&nbsp;though, and was a great complement to the fried fish. I&#8217;ve made four components for the tacos: the beer battered fried fish, a lime-cabbage slaw, a peach salsa, and a lime crema. I love the combination of the tangy sour lime in the crema to lighten the flavors a bit from the hot salsa.</p>
<p>For the final component, the tortillas, I heated <a href="http://amzn.to/1OXHiDz" target="_blank">my grill pan</a> <a href="http://www.thatsquareplate.com/caramel-apple-mm-bars/" target="_blank">(from my KitchenAid winnings</a>) oven medium-high heat, and pressed the tortilla between the lid and the pan, to heat up the tortilla and give some cool &#8216;grill&#8217; marks on the outside of the tacos. I love this pan!<br />

		</div>		<div class="blog-yumprint-method-section" yumprintsection="7">			<div class="blog-yumprint-subheader">For the Fish</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Heat oil in a large saucepan to 350 degrees F (or heat oil in your FryDaddy -- what I used).</li>				<li class="blog-yumprint-method-item" yumprintitem="1">In a large bowl mix together beer, garlic powder, ancho chili powder, cumin, baking powder, paprika, egg, flour, dark chili powder, salt and pepper. Dip the strips of fish into the batter and then into the preheated oil to fry for 5-7 minutes until golden brown.</li>			</ol>

It&#8217;s also quite comparable to my love for some good, fresh Mexican food. Here I&#8217;ve come up with a new favorite dish combining BOTH of these favorites.</p>
<p>I literally live less than 10 minutes from the beach, so we have a lot of fresh seafood shops around here. The gulf is famous for it&#8217;s shrimp, and I could literally have them every single day. I like to get the extra large shrimp from a favorite hidden little seafood shop in Bon Secour (Aquila). When I bought these, I had no idea what I was going to do with &#8217;em, but since it was the weekend, I wanted to make something a little&nbsp;different and full of flavor and spice.</p>
<p>I feel like <a href="http://www.nbc.com/saturday-night-live/video/weekend-update-stefon-on-spring-break/n33632" target="_blank">SNL&#8217;s Stefon</a> when I say <em>these tostadas have&nbsp;everything</em>&nbsp;~ the big, beautiful Chipotle marinated gulf shrimp, a spicy Serrano pico de gallo, black bean puree, lime-cilantro rice, and a chipotle sour cream to top it off. I decided to cut the rounded edges off the corn tortillas and make them into squares&#8211; maybe so they&#8217;d look nice on my &#8216;square plates&#8217; .. I dunno, but I liked how they turned out!<span id="more-3963"></span></p>
<p>I used a rice maker to cook the white rice. I literally just bought another one because my old one died and I feel like its a necessity (for me) &#8212; the rice is so freakin easy to cook because you literally just throw everything in there, turn it on, and don&#8217;t worry about it until its finished, then it&#8217;ll keep it warm for ya! <a href="http://amzn.to/1PicsS8" target="_blank">This is like the one I have</a>.. it&#8217;s worth the investment, I tell you! <img loading="lazy" decoding="async" class="aligncenter size-large wp-image-3964" title="Chipotle-Lime Shrimp Tostadas" src="http://www.thatsquareplate.com/wp-content/uploads/2016/01/Chipotle-Lime-Shrimp-Tostadas-1-800x532.jpg" alt="These are a few of my favorite things: fresh seafood, spicy salsa, and crispy fried tortillas. Add tortillas (I could fit 2 at a time) and fry 2-3 minutes on one side, then flip and fry another 1-2 minutes on the opposite side, until just starting to turn darker and crispy. Remove from oil to a paper towel or cooling rack (over paper towels) and sprinkle with salt. Repeat with the remaining tortillas.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">To cook the shrimp, melt 1 tablespoon butter in a large saucepan over medium-high heat. Add half of the shrimp and cook 3-4 minutes per side until opaque. Remove from heat and repeat with remaining shrimp.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">To assemble: Lay fried tortilla on plate and spread with black bean puree. Top with rice, pico de gallo, shrimp, and drizzle with the sour cream. Garnish with cilantro and lime slices if you want.</li>			</ol>

Enchiladas &#8211; as basic as they are &#8211; are one of my favorite dishes to order. They always have been, and continue to be, but I like to try different variations. Enchiladas verdes is my go-to when I&#8217;m trying something at a new Mexican restaurant (if they have it on the menu). Something about the acidic tomatillo sauce, I am just in love with. Even better if its nice and spicy!</p>
<p><a href="http://www.foodandwine.com/recipes/chicken-and-cheese-enchiladas-verdes" target="_blank">This recipe</a> is from one of my favorite cookbook collections from Food &amp; Wine&nbsp;(<em><a href="http://amzn.to/1N2yd82" target="_blank">Food &amp; Wine Annual Cookbook 2008</a>).&nbsp;</em>The verdes sauce is literally 2 ingredients, and a bit of pulsing on in the food processor. Also, I learned how to make the corn tortillas a perfect texture for holding the ingredients and not falling apart despite being soaked in the sauce. Fry each in some hot oil first for a minute or so, get it firm and a bit crisp, then coat in the&nbsp;green sauce and add the chicken and cheese.</p>

<p>Bring a large pot of water to a boil, and add the tomatillos and jalapeno, and boil until softened. Then add to a food processor &amp; pulse until smooth.<br />

Boil a large pot of water and add tomatillos and jalapeno and boil for about 10 minutes (until soft). Drain them in a colander and transfer to a food processor or blender and process until smooth.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">In a large skillet, heat 1/4 cup of olive oil and add the salsa verdes over medium-high heat. Bring to a boil and season with salt and pepper. Spoon a few tablespoons of salsa into 2 shallow baking dishes.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">In a medium skillet, add 1/4 inch of olive oil (I used have olive half canola) and heat until shimmering. Use tongs to dip the tortilla in the oil and cook over medium heat (turning once) until pliable (about 10-15 seconds). Lift from oil and add to salsa coating each side.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Add chicken and cheddar to each tortilla and roll into loose cylinders and place seam-side down in the baking dishes. Pour remaining salsa over the top, and top with a good crumbly Mexican cheese like queso fresco. Bake for about 30 minutes until salsa is boiling.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Serve with sour cream, lime wedges, cilantro, onion, tomatoes, and more cheese.</li>			</ol>

It was my favorite meal I had that weekend and was so different/spicy/delicious. I&#8217;ve been seeing it lately in magazines/Instagram/etc., but didn&#8217;t know where I could try it around here (still don&#8217;t), but Tomorrowworld had a bunch of food trucks running the vender booths, so it was so fresh and a perfect combo of flavors.&nbsp;</p>
<p>I looked it up when I got home to see what the definition actually was &#8212; Báhn Mi is a Vietnamese term for bread or baguette, and in the Western Hemisphere) &#8216;Bahn Mi&#8217; is just simply a meat-filled sandwich on &#8220;Báhn Mi&#8221; (bread) or a baguette. Meat on bread&#8230; so a sandwich?? Easy enough, I think.</p>
<p>Well, this rendition of the chicken bahn mi is based off of Food &amp; Wine&#8217;s <em><a href="http://www.foodandwine.com/fwx/food/crispy-chicken-banh-mi-will-make-you-sandwich-guru-you-have-always-wanted-be" target="_blank">Crispy Chicken Banh Mi</a></em>&nbsp;and allrecipes.com&#8217;s <em><a href="http://allrecipes.com/recipe/187342/banh-mi/" target="_blank">Banh Mi</a></em> recipe. I learned the hard way to use a food processor instead of trying to chop all the carrots, diakon and onion into matchstick size pieces. Food processor = ease and speed. <p>What you need for the &#8216;slaw&#8217;:&nbsp;</p>

<p>The pickled mixture was so perfect, I found myself just snagging bites before it had even marinated. You gotta taste as you go, right?</p>
<p>I&#8217;m pretty sure the sandwich we had at Tomorrowworld had some sort of cucumber in the slaw, and I read a few recipes that include it, so really you may add it if you wish. It seems like the diakon radish, carrots and rice vinegar (or rice wine vinegar) are the main, consistent components.&nbsp;</p>
<p>Cook the chicken however you want, but I cooked it in an electric Wok&nbsp;(that was my parents and has literally been in the cabinet since I moved in, and we JUST dug it out &#8212; like 5 1/2 years later). Anyways, it&#8217;s red, it&#8217;s large, and it&#8217;s awesome. I couldn&#8217;t believe how quickly it heated up. You can use any mild high-heat oil for the chicken if you are pan- or wok-frying. I used Grapeseed until I ran out, then added some Canola to make sure it all didn&#8217;t get too hot. It got really hot and gave&nbsp;the chicken some nice &#8216;char&#8217;-looking marks &#8212; that added some great flavor, and the chicken stayed moist because I kept the lid on the wok most of the time.&nbsp;</p>
<p>I can&#8217;t believe it&#8217;s the first time I&#8217;ve used the wok. It&#8217;s amazing, and I can tell we&#8217;re gonna have a wonderful time together. :)&nbsp;The one I have is <a href="http://amzn.to/1PcAUYQ" target="_blank">similar to this one from Amazon</a>, only RED!&nbsp;</p>

<p>Also, I&#8217;m not a mayonnaise kinda girl&#8211; I don&#8217;t know why I don&#8217;t like it, but I still haven&#8217;t gotten around to it :-| But if it&#8217;s mixed with stuff, especially Sriracha and lime, I can dig it. Slather that stuff on the bun &#8212; I suggest both both buns!</p>
<p>I love spicy, so I added some thin-sliced jalapenos.&nbsp;<br />

After about 4-5 minutes, or oil is heated, add chicken cooking about 2-4 minutes on each side, until cooked through. Outsides should be crisp and brown. This dip only needs a few things thrown into a food processor, and it&#8217;s done.</p>
<p>The simplicity of this dip baffled me, and also I had never had Hearts of Palm as a main ingredient in anything. I had only had them, really, in <a title="Felix's" href="http://www.felixsfishcamp.com/" target="_blank">Felix&#8217;s Fish Camp&#8217;s</a> <a title="Felix's house salad" href="http://www.foodspotting.com/places/12612-felix-s-fish-camp-restaurant-spanish-fort/items/489714-camp-salad" target="_blank">house salad</a> (which is absolutely delicious, by the way). I had some Pita Chips to dip in the final product, and to my surprise is was pretty good! Similar to a hummus. The hearts of palm made the dip very light, which is&nbsp;perfect for an easy, tasty&nbsp;lunch.<span id="more-687"></span></p>
<p>Here&#8217;s what you need:</p>

<p>Using the side of a chef’s knife, mash the garlic to a paste with a generous pinch of salt. Scrape the paste into a food processor. Add the hearts of palm and oil and process to a medium-fine paste. Add the lime zest, season with salt and white pepper and pulse just to blend. Transfer the dip to a bowl and serve with plantain chips, pita chips or flatbreads.</p>

We try all different varieties. This one really surprised me though! The recipe really was too easy. &nbsp;And I saw that the recipe was by Andrew Zimmern! I&#8217;ve never tried anything of his, but I can tell he knows what he&#8217;s doing. This taco recipe doesn&#8217;t even have cheese on it, but the avocado gave a great texture, and the tomatillos brought a great flavor. Try these and you will see for yourself! Simple can be delicious!</p>
<p>Greg used chicken thighs (which the recipe called for), and used boneless skinless chicken breasts for me. Both were really good, and either would work in this recipe. The thighs are recommended though, I&#8217;m just weird about them for some reason. Make sure they&#8217;re trimmed well! <strong>Also give yourself time to marinate the chicken (for at least two hours)</strong>. Enjoy!<span id="more-387"></span></p>
<p>Here&#8217;s&nbsp;what you do:</p>
<p>In a large bowl, combine 2 tablespoons of the lime juice with 1 teaspoon of salt, stirring to dissolve the salt. Add the chicken thighs and turn to coat. Refrigerate for 2 hours.</p>
<p>In a food processor, combine the tomatillos, garlic, Serranos, onion and cilantro and process to a coarse purée. Transfer the salsa to a bowl and stir in the avocado and the remaining 2 tablespoons of lime juice. Season with salt.</p>
<p>Pat the chicken dry with paper towels. In a shallow bowl, combine the flour with the pepper, cayenne and 1/2 teaspoon of salt.</p>
<p>In a large skillet, heat 1/3 inch of oil until shimmering. Dredge the chicken in the flour, shaking off any excess. Fry the chicken over moderately high heat until well-browned and crisp, about 3 1/2 minutes per side. Transfer to paper towels to drain.</p>
<p>Cut the chicken into thin strips and serve with the tomatillo salsa and warm corn tortillas.</p>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">In a large bowl, combine 2 tablespoons of the lime juice with 1 teaspoon of salt, stirring to dissolve the salt. Add the chicken thighs and turn to coat. Refrigerate for 2 hours.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">In a food processor, combine the tomatillos, garlic, serranos, onion and cilantro and process to a coarse puree. Transfer the salsa to a bowl and stir in the avocado and the remaining 2 tablespoons of lime juice. Season with salt.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Pat the chicken dry with paper towels. In a shallow bowl, combine the flour with the pepper, cayenne and 1/2 teaspoon of salt.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">In a large skillet, heat 1/3 inch of oil until shimmering. Dredge the chicken in the flour, shaking off any excess. Fry the chicken over moderately high heat until well-browned and crisp, about 3 1/2 minutes per side. Transfer to paper towels to drain.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Cut the chicken into thin strips and serve with the tomatillo salsa and warm corn tortillas.</li>			</ol>
