I was looking for something that rated well on </span><a href="http://www.fooducate.com/"><span style="font-weight: 400;">Fooducate</span></a><span style="font-weight: 400;"> &#8212; </span><a href="http://www.fooducate.com/app#!page=product&amp;id=7803E9AA-42B1-11E1-AFF9-1231380C18FB"><span style="font-weight: 400;">this stuff came in at a B</span></a><span style="font-weight: 400;">! &nbsp;I fell in love with it! I originally bought it to top smoothie bowls or yogurt, but ended up just eating it plain. For some reason, I love fruits that are freeze-dried. I can only find them certain places, and really usually don’t buy them since they’re a little pricey for the amount (weight) you get in a bag. But this granola had just enough in there to hook me. <p><span style="font-weight: 400;">Anyways, I’m sure they sell this at some of the grocery stores closer to me… but also, I was sure I could make a similar granola and be just as happy… so here’s my rendition. I used freeze-dried strawberries and bananas that I found from Publix, and chopped up a super indulgent dark-chocolate candy bar to add too… you know those bars down that candy aisle.. Top shelf, super good chocolate. The final result was an awesome chocolatey treat &#8212; while still maintaining some nutritional benefits ~ almonds, oats, dark chocolate, and the freeze dried fruits. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Preheat oven to 350°F. Line a large rimmed baking sheet with foil and spray with cooking spray.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">In a large bowl, stir together the oats, flour, cocoa powder, flaxseed, almonds, salt, and ¾ cup unsweetened coconut.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">In a small pan over low heat, add the coconut oil, ½ cup honey, coconut palm sugar and vanilla. Stir constantly until coconut oil is melted and mixture is smooth. Pour over dry ingredients and stir together with a wooden spoon or your hands until dry ingredients are mostly coated. Stir in water until granola mixture is wet and a little mushy.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Press mixture evenly into prepared baking sheet. Drizzle with agave. Bake for about 20 minutes or until granola starts to toast. Remove from oven and let cool completely in pan on a wire rack.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Once granola is cool, break it into large chunks and stir together a bit. Drizzle with agave or more honey. Return to oven for 10-15 minutes or until granola is evenly toasted and golden brown.</li>				<li class="blog-yumprint-method-item" yumprintitem="5">Remove from oven and sprinkle with remaining ¼ cup coconut flakes and add freeze dried fruits and chocolate pieces. Let cool completely. Store in a jar or bag that’s not completely sealed so granola stays crunchy.</li>			</ol>

I woke up Saturday and really wanted to make some kind of yummy breakfast. After my failed attempt at making some biscuits (sadface), I decided I&#8217;d make something that&#8217;s always a hit&#8230; <a href="http://thatsquareplate.com/tag/pancakes">Pancakes</a>! I realized I was low on milk, so I couldn&#8217;t use <a href="http://www.thatsquareplate.com/pancakes-blueberry-peach-sauce/">my normal pancake recipe</a>. Also, I found that I had a surplus of almond milk in my fridge, so I <a href="https://www.google.com/webhp?sourceid=chrome-instant&amp;ion=1&amp;espv=2&amp;ie=UTF-8#q=almond%20milk%20pancakes" target="_blank">googled almond milk pancakes</a>. I ran across <a href="https://silk.com/recipes/almond-pancakes" target="_blank">this recipe</a> from Silk&#8217;s website. The almond milk takes the place of the regular milk or buttermilk I usually use. I replaced the egg with a <a href="http://minimalistbaker.com/how-to-make-a-flax-egg/" target="_blank">flax seed egg</a> &#8212; I&#8217;ve used this a few times, and it never fails. I always tend to <a href="https://www.google.com/webhp?sourceid=chrome-instant&amp;ion=1&amp;espv=2&amp;ie=UTF-8#q=flax%20seed%20egg" target="_blank">google flax seed egg</a> when I&#8217;m out of them, and I find the ratio of 1 egg to 2.5 tablespoons&nbsp;water is a perfect substitute (tip from <a href="http://minimalistbaker.com/how-to-make-a-flax-egg/" target="_blank">Minimalist Baker</a>). [and yes, I&#8217;m a <a href="http://www.urbandictionary.com/define.php?term=google-a-holic" target="_blank">Google-a-holic</a>&nbsp;&lt;&#8211; please click this to see the Urban Dictionary definition! HA. Guilty.]</p>
<p>Anyway, I try to use as little sugar as possible in&nbsp;my day-to-day, so here, I used a tablespoon of Truvia Baking blend. It sweetens the pancakes perfectly and contains 75% fewer calories because it uses natural stevia for sweetness. It&#8217;s a nice ingredient to have in the pantry, and you can find it in the grocery store&#8217;s baking section or on Amazon&nbsp;<em><a href="http://amzn.to/1QFAniX" target="_blank">here</a>. </em>If you don&#8217;t have this certain sweetener, you can use honey, agave, or regular sugar &#8212; whatever sweetener you prefer.</p>
<p><span id="more-3570"></span>These pancakes turned out delicious, even though Greg commented on the color. &nbsp;They weren&#8217;t as browned as normal, but the flavor was still wonderful. I made a Grand Marnier/Greek yogurt/vanilla mixture and added some strawberries to the top. Grand Marnier is an orange-flavored liqueur I keep in my cabinet for margaritas &#8212; It&#8217;s a yummy addition&#8230; and really all you need is a tiny bit to add the orange flavor. The yogurt mix was a great dip for the strawberries (I definitely ate more than the two pictured!). Rocky (my super-picky brother) had the pancakes with regular syrup and ate all of them. Greg, his dad, and I split the remainder, and I got nothing but compliments. I&#8217;ll be making these pancakes again for sure! &nbsp;<br />

Whisk canola oil and almond milk in with the flax mix.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">In another bowl, whisk together the dry ingredients (salt, flour, sweetener, and baking powder).</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Heat a skillet or pan over medium-high heat (around 360 degrees to 375 degrees F). Pour dry ingredients in with wet ingredients, and mix until combined.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Spray skillet with cooking spray, and pour 8 even pancakes (about 1/4-1/3 cup in size). Flip after 3-4 minutes. And cook on the other side 2-3 minutes until done.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">I served with honey, strawberries, basil, and a Grand Marnier, greek yogurt, vanilla mix on top.</li>			</ol>

It&#8217;s become a fun weekend hobby (when I have a little extra time to decorate) to create these for breakfast.<br />
During the week, I just go with the smoothie (no toppings) for breakfast on the way to work. Here&#8217;s my weekend (or weekday off) morning Acai (or smoothie) bowl recipe.<br />
I use a <a href="http://amzn.to/1RaDejy" target="_blank">Magic Bullet</a> for this recipe. The recipe is for one large bowl or two small bowls.<span id="more-1885"></span></p>
<p>First, place your bowl in the freezer that you are going to use, and prepare your toppings for quick reach.</p>

<p>Add 5-6 ice cubes to the bottom of your blender cup. Add 1/2 cup unsweetened almond milk (or liquid of your choice). Add a scoop of protein powder (<a href="http://www.amazon.com/gp/product/B002DYJ1C4/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B002DYJ1C4&amp;linkCode=as2&amp;tag=thasqupla-20&amp;linkId=E2O3N4QFEVNZNFTE" target="_blank">I use Vanilla flavored</a>), frozen blueberries, cinnamon, honey, vanilla, your Acai pack if using (I recommend the <a href="http://www.amazon.com/gp/product/B0016BAB42/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0016BAB42&amp;linkCode=as2&amp;tag=thasqupla-20&amp;linkId=M673O23ENF3D4ESX" target="_blank">powder</a> &#8211; the frozen ones don&#8217;t blend well). Add some banana or frozen banana if you&#8217;d like.</p>
<blockquote><p>Cinnamon is so much better fresh ground. I use my spice grinder often to grind up cinnamon sticks, toasted cumin seeds, kosher salt, etc. (not to mention coffee beans). Fresh ground.. it&#8217;s always worth it!</p></blockquote>

My ingredients change often, but these are the basics &#8212; (I always add this <a id="static_txt_preview" href="http://www.amazon.com/gp/product/B0075005AI/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0075005AI&amp;linkCode=as2&amp;tag=thasqupla-20&amp;linkId=SIWZMD7ZS3QQAU46" target="_blank">Barlean&#8217;s Organic Oils Greens, Chocolate Silk Powder</a> too.)<br />
Blend it up and shake it in between blendings if necessary. If it&#8217;s too liquidy, add more ice or frozen fruits. It should be thicker than a smoothie so it can support the toppings (for a little while anyway).<br />
When it&#8217;s finished and nicely blended, pour carefully into the bowl from the freezer.</p>

The flavors were completely unique to any granola I&#8217;d ever had. I&#8217;m not so sure any non-ginger fans would like this, but it&#8217;s definitely unlike any other granola I&#8217;d ever had or made.&nbsp;</p>
<p>I left out the dried berries it called for in order to reduce the sugar content, but I suggest to add the dried fruits (1/4 cup dried cranberries and 1/4 cup dried cherries) at the end. I only added the crystallized ginger the original recipe called for &#8212; <a title="Candied Ginger, Coconut and Quinoa Granola Original Recipe" href="http://www.foodandwine.com/recipes/candied-ginger-coconut-and-quinoa-granola" target="_blank">click to view the original recipe from Food &amp; Wine</a>. The author, Amanda Rockman, suggests to serve with ricotta or yogurt and fresh berries. Greg mixed some in his Greek yogurt for a snack earlier, and I&#8217;ve just been randomly grabbing handfuls as the day goes by.</p>
<p>Stick it all in a large Zip-Lock bag for munching on during the week.&nbsp;<span id="more-1641"></span></p>

<p>Pour liquid over dry ingredients and mix well.</p>
<p>Spread on a parchment-paper-lined baking sheet and cook for 30 minutes, stirring often.</p>
<p>Rem0ve from oven and let cool. Now, add the chopped crystallized ginger and dried fruits (if using). Serve alone or with yogurt and berries. &nbsp;</p>

The first time I made them, I served them with a blueberry/Greek yogurt/honey sauce. This sauce strangely tasted like the old Wildberry pop-tart filling (only a healthier version). This time, since I unfortunately had no fresh fruit in the house, I took the easy way out and topped them with honey, cinnamon, and a toasted sliced almond/shredded coconut mix.&nbsp;</p>
<p>The recipe is an adaptation of the Allrecipes.com recipe &#8216;<a title="Flluffy Pancakes from Allrecipes" href="http://allrecipes.com/recipe/fluffy-pancakes-2/" target="_blank">Fluffy Pancakes.</a>&#8216; I only modified the recipe by adding vanilla, replacing the sugar with Truvia baking blend (my new favorite sweetener for baking), and replacing half of the flour for almond meal/flour.&nbsp;<span id="more-1422"></span></p>
<p>Here&#8217;s what you need:</p>

<p>I started out combining the vinegar and milk to let it sour. Go ahead and add these to a large mixing bowl.</p>
<p>Combine all of your dry ingredients (flours, Truvia, salt, baking soda, and baking powder). Whisk together.&nbsp;</p>
<p>Melt your butter and add to your &#8216;soured&#8217; milk. Whisk egg and vanilla into wet mixture.</p>
<p>Add your dry ingredients to your wet ingredients, and the batter is ready when the lumps are gone. Spray your pan/skillet/griddle with cooking spray or oil. Pour 1/4 cup size portions into your pan (or onto your <a title="Buy electric griddle" href="http://www.amazon.com/gp/product/B005FYF3OY/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B005FYF3OY&amp;linkCode=as2&amp;tag=thasqupla-20&amp;linkId=JTLQFSVBY5VCTOPO" target="_blank">flat-top electric griddle</a>).</p>

Whisk egg and vanilla into wet mixture.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Add your dry ingredients to your wet ingredients, and the batter is ready when the lumps are gone. Spray your pan/skillet/griddle with cooking spray or oil. Pour 1/4 cup size portions into your pan (or onto your flat-top electric griddle).
