Overnight… This stuff smelled pretty bad. Even Rocky mentioned something about it smelling gross.</p> <p>Anyways, the next day, we pulled them out, cooked the ribs, and made the BBQ sauce. The ribs ended up being great! I couldn’t believe it. The barbecue sauce was something else too. Just reduced root beer with a vanilla bean and its seeds, and a buncha pepper?! After it was done reducing, add the lime juice, and you had a surprisingly SPICY, SWEET sauce. I really loved it! The recipe calls for finely ground long pepper – but we can’t get that around here, so we used black pepper. Also, this is my first time using vanilla beans (and fish sauce, obviously)! Yum!!<span id="more-652"></span></p> <ol> <li>In a medium saucepan, bring 2 bottles of the root beer to a boil with the fish sauce, garlic, cracked black peppercorns and shallots. Remove from the heat, cover and let steep for 25 minutes. Transfer the mixture to a large roasting pan and add the ice. Add the rib racks, cover and refrigerate overnight.</li> <li>Preheat the oven to 325°. Remove the ribs from the marinade and scrape off most of the solids. Transfer the ribs to a large rimmed baking sheet. Cover with foil and bake for about 2 hours, until the meat is very tender but not falling off the bones.</li> <li>Meanwhile, in a medium saucepan, combine the remaining 2 bottles of root beer with the vanilla bean and seeds and long pepper [black pepper] and boil over moderately high heat until reduced to 2/3 cup, about 25 minutes. Add the lime juice and simmer for 2 minutes. Discard the vanilla bean.</li> <li>Light a grill. Grill the ribs over high heat until richly browned, about 4 minutes per side. Transfer the racks to a carving board and cut in between the ribs. It turned out pretty darn good. It seemed a bit <em>liquidy</em> at first, but as the recipe suggested, we dunked the chicken pieces into the sauce and the result was absolutely — yum!! This is the first white BBQ sauce recipe we have made, and it won’t be the last. Food & Wine cookbook recipes prove to ALL be winners!!</p> <p><span id="more-590"></span></p> <p>Here’s the recipe:</p> <ol> <li>Light a gas grill. Wrap the hickory wood chips in heavy-duty foil and pierce the packet all over with a skewer. Add the foil packet to the grill. Cover and let the wood chips begin to smoke, about 5 minutes.</li> <li>Brush the chicken with oil and season generously with salt and pepper. Grill the chicken, covered, over moderately high heat, turning and shifting the pieces occasionally, until lightly charred and cooked through, 35 to 40 minutes. Transfer to a platter.</li> <li>In a medium bowl, whisk the mayonnaise with the vinegar, apple juice, horseradish, lemon juice and cayenne and season with 1 teaspoon of black pepper and 1/2 teaspoon of salt. I found a recipe that sounded wonderful called “<a title="Original Recipe" href="http://www.epicurious.com/recipes/food/views/Korean-Steak-Tacos-51221610" target="_blank">Korean Steak Tacos</a>.” The sauce for the tacos is actually reserved from the marinade for the flank steak, so it’s a two-for-one sauce. The slaw is just four ingredients, and all these I bought at the local Publix. This is the first time I’ve ever used Napa Cabbage (for the slaw), and it gave a great crunch.</p> <p>The marinade included mostly common ingredients except for the toasted sesame oil, which can be found in the ethnic food aisle of the grocery store. Reserve some of the marinade to save for the sauce on the tacos. Reserve 1/4 cup of the mixture in a small bowl for serving. Place the steak in the remaining marinade and turn to coat. Marinate for at least 20 minutes at room temperature, or cover and refrigerate for up to 1 day, turning occasionally. A combo of onions cooked in hot sauce, shredded smoked gouda, sweet barbecue sauce & toasted buttered bread — how can you go wrong!! <a title="Original recipe!" href="http://www.foodandwine.com/recipes/smoked-gouda-and-bacon-burgers-with-barbecue-sauce">Inspired by Food & Wine Cookbook, recipe by Brian Perrone</a>.</span></p> <p>I ended up making the BBQ sauce, and Greg did everything else.<span id="more-348"></span></p> <p>Here’s the Recipe:</p> <ol> <li>In a large skillet, heat the oil. Add the sliced onion and a pinch of salt, cover and cook, stirring a few times, until the onion is crisp-tender and just turning translucent, 5 minutes. Stir in the hot sauce and beef broth and remove from the heat. Season with salt.</li> <li>Heat a large griddle. Spread the butter on 1 side of each bread slice and griddle buttered side down over moderate heat until toasted, about 2 minutes. Transfer the toasts to a plate. Add the bacon to the griddle and cook over moderate heat until crisp, about 4 minutes per side; drain on paper towels. Wipe off the griddle.</li> <li>Season the beef patties with salt and cook on the griddle over moderately high heat until medium-rare, about 2 minutes per side. Top each burger with 1/4 cup of smoked Gouda and cook until the cheese melts, 1 minute.</li> <li>Set the burgers on theunbuttered sides of 4 toasts. Top with the bacon, onion and Sweet Barbecue Sauce. In a large bowl, toss the lamb with the 1 tablespoon of peanut oil and season generously with salt and black pepper. Thread the lamb pieces onto 8 skewers. Grill the lamb over moderate heat, turning occasionally, until it is charred in spots, 6 to 7 minutes for medium meat.
