Since I used to be so picky, and I’ve learned to love SO many new dishes, I try to understand that people <em>LOVE</em> different foods.. Obviously, I guess.. but when I think about it, it makes me wonder WHY?! I know they love it, so I try to see what they love about it, and understand it. It usually takes me a few attempts, but I’m getting WAY better. Greg’s mom came down this past weekend, and it was her birthday Sunday, so needless to say, we cooked a few amazing dishes. Greg found this recipe from one of our Food & Wine cookbooks: Food & Wine Best of the Best, Volume 17 (<em><a href="http://amzn.to/1OhIDVG" target="_blank">buy hardcover</a></em>). This particular cookbook takes some of the best recipes from 25 best cookbooks of the year, now best really is opinion, but I’ve gotta say, all the recipes in the book sound & look AMAZING.</p> <p>This recipe is from a cookbook called Franny’s: Simple Seasonal Italian (<em><a href="http://amzn.to/1MEuy29" target="_blank">buy hardcover</a></em> / <em><a href="http://amzn.to/1OhITnD" target="_blank">buy Kindle version</a></em>) by Andrew Feinberg, Francine Stephens, & Melissa Clark. The whole book is based on simple recipes with spectacular flavor. They have a restaurant in Brooklyn, Franny’s, which I would love to visit sometime! Anyways.. the recipe… <span id="more-3663"></span></p> <p>It turned out beautifully! The sauce was so flavorful and perfect on the fusilli noodles. I said I’m still kinda getting around to sausage, the smaller the pieces the better. He ground it up while it was cooking, so it was in tiny pieces, which is perfect for me! [I love <a href="http://amzn.to/1PPU2O2" target="_blank">this Pampered Chef Mix N Chop</a> for grinding up meat while cooking, and it may not look like much, but it grinds beef/sausage like a champ!]</p> <p>Anyways, the recipe is super simple, but it does take a bit of your time, granted a lot of idle time… You wait on the sauce to simmer, then you must refrigerate it after cooking in order to scrape the fat off top. This would be a good overnight recipe, but we made it in a few hours (3 or so).</p> <p>Serve with a nice scoop of ricotta on top. I LOVED this addition. It added a smooth, creaminess to the sauce. Add the ground pork and cook until golden (we had to cook in two batches). Cook until golden. With a slotted spoon, remove meat and set aside.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Add pancetta and cook over medium heat and pancetta begins to get crispy. Stir in chili flakes and garlic and cook about 1 minute (until fragrant). Add onions, carrots, celery, and parsley and cook until the onion is translucent, 10 to 15 minutes. Stir in tomato paste and cook for 2 minutes, add red wine and bring to a simmer.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Add the pork, tomatoes, water and salt to the mix. Bring to a simmer and cover with a tight-fitting lid. Simmer for 40 minutes.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Remove lid and simmer about 15 to 20 minutes until its thickened to your liking. Season with salt and pepper. Let it cool to room temperature and refrigerate until chilled.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Remove and discard about 2/3 of the fat that has settled on the top (leaving about 1/3 to incorporate with the sauce).</li> <li class="blog-yumprint-method-item" yumprintitem="5">After skimming the fat, cook the pasta according to package directions. Actually Greg is the one who usually cooks it, and this was my first time attempting. It’s a recipe called “New Orleans Barbecue Shrimp.” Now if you’ve never been to New Orleans, you’re missing out on some of the best food of your life, and pure craziness. And pure awesomeness. The recipe is actually a clipping from an old newspaper article of Greg’s grandparents. He introduced it to me a few years ago, and told me his grandparents used to cook it for him when he was younger and he loved it. He definitely grew up with a more complex palate than I did. Mine was bland until <em>mayyyybe </em>college.. and it’s been expanding ever since. I wouldn’t have had this dish at a young age.. I liked shrimp, but not spice. And definitely not onions (back in the day.) Today, I’m a HUGE fan of onions, spice, and much, much more. Thank goodness palates change people. It’s just good. Serving with the rice makes it last longer – which is always a good thing.</p></div> <p>As soon as I spotted the recipe in the cookbook, I took a picture of it and sent it to Greg. Then, I requested to have it for my birthday! It was just as I remembered – spicy, buttery, and savory. The shrimp works so well with the garlic, onions, lemon and spice. I like to use fresh large or extra-large shrimp from the gulf. We have a favorite seafood shop in Bon Secour (about 15 minute away) that we visit anytime we want to cook shrimp. It’s pretty much shrimp cooked in a skillet with a lotta butter, garlic, onions, and spice (<em><a href="http://hickswrites.blogspot.com/2010/08/new-orleans-dining-pascals-manale.html" target="_blank">here’s a good article on the origination of the term</a></em>). All recipes vary a bit, but this is our favorite we’ve found. I’ve had plenty of yummy versions of the barbecue shrimp, but I really always come back to this one and LOVE it. It’s a perfect combination of flavors. You end up with tons of extra butter/lemon/garlic/onion sauce that is just to die for. I suggest you buy (or <em>make</em>)<em> </em>a nice fresh loaf of Italian bread to serve alongside the shrimp. This is the first time we’ve made rice to serve with the shrimp and it’s a great addition to soak up all the extra flavor too. I cooked plain white rice in half water/half chicken broth seasoned with salt and pepper. It’s easy to throw the rice in a rice cooker (<a href="http://amzn.to/1Nyl4aU" target="_blank">like this one from Amazon</a>), and let it cook, while you focus on the shrimp dish. Also, don’t forget to heat the bread in the oven for a bit. Greg’s dad was over and we decided to cook <a href="http://www.thatsquareplate.com/wp-content/uploads/2015/10/Maggiano-Salad-Recipe-4-e1445487244457.jpg" target="_blank">a few things</a> for dinner… Greg made the main course: Masala Fried Shrimp, and I made a mushroom risotto, garlic bread, and this beautiful, amazingly delicious chopped copycat Maggiano’s salad.</p> <p>I have a <a href="http://pinterest.com/thatsquareplate/recipe-inspiration" target="_blank">recipe pin board</a> where I pin any recipes I really want to make in the near future. Every once in a while, when I’m stumped on what to cook, I’ll look back through it to get some ideas (from <em>past me</em>). I looked through it recently and remembered this amazing-looking salad (<a href="https://www.pinterest.com/pin/401242648029823322/" target="_blank">pin</a>) called <a href="http://www.joyineveryseason.com/salads/maggianos-salad-2/" target="_blank">‘My Maggiano Salad’</a> from Renee at <a href="http://www.joyineveryseason.com/" target="_blank">Joy in Every Season</a>. It’s a copycat recipe for a chopped salad from an Italian chain restaurant called <a href="http://www.maggianos.com/" target="_blank">Maggiano’s Little Italy</a>. </p> <p>When I read the name of the recipe, I knew the restaurant sounded familiar. I thought I had been to one with my mom and Greg in North Carolina. (and thanks to my Foursquare history, I found the exact date and time I was there! — Ha!) To prove myself right, I found out we were there at the Durham, NC location on Thursday, August 5th, 2010 at 12:22pm (pretty CRAZY — I knew all those check-ins would count for something)! I remember we were on a trip to Asheville, NC and we went through Durham on the way to pick up Rocky at a sail camp in Arapahoe, NC. It was a super fun trip, and we had a TON of good food! I also got a little curious if I had a <a href="http://www.foodspotting.com/Whitney" target="_blank">Foodspotting</a> photo from the time we went and I DID! I got the Margherita Flatbread (<a href="http://www.foodspotting.com/reviews/261719" target="_blank">here’s the pic</a> from FIVE years ago! ha!)<span id="more-3282"></span><br /> [lets be friends on <a href="https://foursquare.com/whitbaker" target="_blank">Foursquare</a> for those still using it!]</p> <p>Anyways, this salad is Renee’s rendition of the house salad from Maggiano’s. It includes a crispy prosciutto, gorgonzola cheese, red onion, and a perfect dressing. The lettuce is chopped small, so that salad is quite easy to eat. I was at work the other day and Greg texts me “I’m cooking tonight”.. so all day I really didn’t know what to expect until I got home. When we cook, we rarely make the same thing twice, so I figured it would be a new recipe. </p> <p>When I got home, he said that he’s making chicken chilaquiles! WHAT. I was super excited, because really I’d never heard the word until about two months ago when I visited Birmingham. We went to a crazy-good brunch place called <a href="http://elbarriobirmingham.com/" target="_blank">El Barrio Restaurante</a>, and I got a dish called the ‘Chicken Chilaquiles.’ I didn’t really even know how to pronounce it when I ordered it, but when I got it I was like “Hell yes, chilaquiles are just a fancy word for nachos!”… I LOVE nachos. Fancy nachos for brunch!?… I am totally down with that. (<em>After looking at the Wikipedia definition I think the only difference is the corn tortillas are fried until crisp and simmered a bit with a salsa or mole sauce.</em>) Below is my Instagram from that day, and ever since I finished THOSE chilaquiles.. I checked their website today to see what the description on the <a href="http://elbarriobirmingham.com/menus/brunch/" target="_blank">brunch menu</a>, and I found the following: white beans | chipotle | sweet peppers | crispy tortillas | spiced slaw | cotija | house crema | hot sauce Obviously they change it up for the seasons, but these sound absolutely amazing as well! I’m due for another trip soon! Anyways, Greg found this <a href="http://www.foodandwine.com/recipes/chipotle-chilaquiles" target="_blank">Chipotle [Chicken] Chilaquiles recipe</a> from <a href="http://amzn.to/1OvB3HR" target="_blank">Food & Wine Annual Cookbook 2008</a> (these old <a href="http://amzn.to/1kieU2Y" target="_blank">Food & Wine annual cookbooks</a> are ridiculously cheap <$5 , and have some of our favorite recipes) and it turned out AMAZING. I love all of these flavors — especially the chipotle salsa, corn chips, and shredded chicken. We had plenty left over so we used it as a dip for chips the next few nights. It was QUITE spicy, so if you are spice intolerant, make sure to competely de-seed the chipotle peppers. Greg left seeds in one pepper and removed them from one. It was still very spicy. We used store bought tortilla chips (Mission Tortilla strips, to be exact) and they were nice and thick to hold the toppings and not get too soggy when coated with the salsa. I loved the crunch of the still semi-crispy tortilla strips and the raw onions. I made these tonight, and I guarantee they’ll be gone by the end of the weekend. Ranch Pretzels…</p> <p>The first time I had these my great aunt brought them to our work during Christmas last year. Everyone had talked about how great they were, and they were literally the first thing gone on the tray of goodies she brought us. They were incredible.. a whole transformation of the original/normal pretzel. If you haven’t tried them, you’re totally missing out. I’m sure they sell these things somewhere, but it really is just as easy to make your own! I didn’t attempt to make my own until two weeks ago. I started checking online for recipes and I found that these are the basics from each ‘Ranch Pretzel’ Recipe: </p> <ul> <li>Dry ranch dip Hidden Valley</li> <li>A mild oil</li> <li>Dill!</li> <li>and garlic and/or onion powder</li> <li>Pretzels, of course!</li> <li>Bake the combo in the oven at 250 degrees F for at least 30 minutes, stirring occasionally.</li> </ul> <p>I made them for our trip to Tomorrowworld, and literally these and the <a href="http://www.thatsquareplate.com/beef-jerky/" target="_blank">beef jerky</a> are what we tried to ration — because we could have had ALL of it on the first night! (We didn’t have dinner that first night because it was raining the whole evening.) :-\</p> <p>I decided to make them again for our 7 hour road trip tomorrow. Even Rocky liked them, and he is SUPER picky. I told them they were like Cool Ranch pretzels (since he likes Cool Ranch chips and kinda likes pretzels). He approved! This recipe is from a food scientist and baking expert Shirley Corriher, and you can tell she knows what she’s doing. </p> <p>I found this recipe in <a href="http://amzn.to/1Mrfc0N" target="_blank">Food52’s new Cookbook Genius Recipes</a> (<em>once again</em>). I’m telling you this book is amazing! So far I’ve made three recipes from it, and I’ve had to share EVERY one! Can’t wait to try out some more. </p> <p>It’s late and I’ve been busy this week working and packing for Tomorrowworld 2015 — a music festival right outside of Atlanta. I haven’t had much time to post much, BUT I wanted to share something before I left – these biscuits were the obvious choice. I think the key is handling the dough very gently when coating it in the flour, then line them evenly in a round pan. <span id="more-3019"></span></p> <p>Also — THE BUTTER — melt it and brush it over the biscuits after removing them from the oven. </p> <p>I made some honey butter and bacon to serve on the side. Butter an 8 or 9-inch round cake pan or spray with nonstick cooking spray.</li> <li class="blog-yumprint-method-item" yumprintitem="1">In a large mixing bowl, stir together the self-rising flour, sugar, and salt. Work the shortening in with your fingers until there are no large lumps. Gently stir in the cream, then some of the buttermilk until dough resembles wet cottage cheese. It should be a wet mess -- not soup, but cottage-cheese texture. If you are not using a low-protein flour, this may take considerably more than 1 cup of buttermilk. Spread the plain all-purpose flour (not self-rising) out on a plate or pie pan. With a medium (about 2 inches, #30) ice cream scoop or spoon, place three or four scoops of dough well apart in the flour. Sprinkle flour over each. Flour your hands. Turn a dough ball in the flour to coat, pick it up, and gently shape it into a round, shaking off the excess flour as you work. Place this biscuit in the prepared pan. Coat each dough ball in the same way and place each shaped biscuit scrunched up against its neighbor so that the biscuits rise up and don't spread out. Continue scooping and shaping until all dough is used. Place the pan on the arranged shelf in the oven. Bake until lightly browned, 20 to 25 minutes. Brush with the melted butter. Invert onto one plate, then back onto another. With a knife or spatula, cut quickly between biscuits to make them easy to remove. Serve immediately. I love making cookies, I’d have a fresh cookie from the oven over pretty much ANY other dessert. This recipe intrigued me because the main ingredient is whole-wheat flour. I have never baked with whole wheat flour, and this recipe proves that just because it’s ‘whole-wheat’ doesn’t mean it can’t be just as delicious as that ‘normal’ all-purpose flour. </p> <p>After searching around for the recipe online, I see it’s been around for years. The author, Kim Boyce, published this recipe in her Good to the Grain cookbook from 2010 (<a href="http://amzn.to/1Kukqcs" target="_blank">purchase here</a>). I ran across it in my new <a href="http://food52.com/" target="_blank">Food 52</a> cookbook from my brother. It’s the second WINNING recipe I’ve cooked from this amazing cookbook. [The first was an <a href="http://www.thatsquareplate.com/romaine-hearts-caesar-salad-dressing/">eggless, oil-less Caesar dressing served with Romains Hearts</a>.] The cookbook, titled <a href="http://amzn.to/1KpEUPr" target="_blank">Food 52 Genius Recipes: 100 Recipes that will Change the Way You Cook</a>, is a compilation of recipes from chefs, cookbook authors and bloggers. It shows recipes that are made in a different way than normally intended. </p> <p>I’m obsessed with different cookbooks, and this one changes the way you think about certain foods and techniques. I made the cookies for the family, and they all loved them — especially fresh from the oven. Even Rocky (Mr. Picky) approved! Greg said they’re the best cookies I’ve ever made! Here — I happened to be out of eggs, so I replaced the egg with a tablespoon of ground flaxseed. The flaxseed adds some Omega 3’s, antioxidants, and fiber. I only used a tablespoon, but I will add more next time. The addition of the flaxseed doesn’t change the flavor (believe me, Rocky would have told me).</p> <p>Also, I also swapped the sugar out for some <a href="http://amzn.to/1Jvi0ZB" target="_blank">Truvia baking blend</a> and light brown sugar. The baking blend is a great substitute for straight up sugar, and you only need half as much as the original recipe calls for. I also added a bit of brown sugar, because brown sugar is just plain amazing. </p> <p>They turned out perfectly sweet, fluffy, and flavorful! Even Rocky ate them all! Even though he’s very picky, he is a breakfast fan. This is such a simple sauce, just add it all to a pan while you’re prepping your pancakes, and it should be done by the time you’re done. I used both frozen fruits, and the taste was still phenomenal. The cinnamon and sugar added the sweetness, and I added water to make sure it wasn’t TOO sweet, and to make it a bit liquidy. I’m excited to try out different liquids in the next batch (think Amaretto or Grand Marnier). Mix flour, sugar, Truvia baking blend, baking soda, baking powder, salt, and flax seed. Whisk together. Whisk the melted butter in with the milk and egg mixture. Add dry ingredients to the wet ingredients, and add more milk to thin it all up into pancake consistency.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Meanwhile, Add sauce ingredients to a small saucepan and bring to a boil. Reduce the heat to a simmer, and simmer for 10-15 minutes, stirring occasionally, until fruits are warmed through and sauce has reduced.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Heat a large skillet or flattop to 350 degrees F or medium heat. Coat with cooking spray, and pour 1/4 size portions for small pancakes. After seeing these new age Ramen recipes (Ramen burger?!) on TV and on the internet, we’ve been meaning to make some. We’ve had all these Ramen packages in our pantry that we haven’t touched in months. So I finally got him to cook us some up. Naturally we didn’t want to go to the grocery store (we’re making <em>Ramen noodles </em>after all), so we had the kind of scrounge around to find what we wanted to use in or on our noodles. Fun fun! </p> <p>After this past Ramen-noodle meal, I’m so excited about future Ramen endeavors.. what a change from the little Ramen packets. I remember the first time I had Ramen was at a friend’s (<em>still best friend’s</em>) house and I was in 7th grade. I couldn’t believe how simple easy and delicious it was. Looking back, I all I think is SALT SALT SALT. But maybe that’s because I used the chicken-flavored-sodium sprinkle packages in every Ramen I’d ever had! Being such a picky eater growing up, it was hard for me to find stuff that I could make myself that I would actually eat! And Ramen, although it’s not the best thing in the world for you, it sure tasted good and satisfied my appetite at the time…</p> <p>We got the idea of what to add to the noodles in my go-to kitchen book <em><a href="http://amzn.to/1Kky91E" target="_blank">The Flavor Bible</a>. </em>I bought it a few years ago, and its pretty much just an index of everything that goes well together [<em><a href="http://amzn.to/1Kky91E" target="_blank">buy</a></em>]. We knew we wanted to use prosciutto, so I found that mushrooms were a great fit with prosciutto. (So was pasta, by the way). I used to hate mushrooms… and I probably wouldn’t have ever tried prosciutto back then! (Rocky has, and loved it!) So I’m glad we found a super-flavorful dish we could literally make in under 10 minutes. Awesome to find something so simple yet so flavorful, cheap and satisfying!</p> <p>I’m sharing this recipe for a reason! It was the fastest, easiest thing ever. Letting them sit in warm water, then sautéing gives a chewy, yummy, al dente texture. Don’t completely cook them, they just soak in the warm water until they soften up a bit (about 5 minutes.)</p> <p>Meanwhile, sauté some sliced mushrooms, and sliced prosciutto in some sesame oil (or any oil) and butter. Saute until the prosciutto crisps up.Then remove mushrooms and prosciutto from the pan, and raise the heat. After the noodles soak, throw the noodles in the hot pan with a bit more butter. Saute 2 minutes, then add the prosciutto and mushrooms and cook it all together in the pan for a few minutes. Season with some soy sauce and some more sesame oil. Garnish with fresh herbs (I used cilantro– the only fresh herb in my fridge now).</p> <p>Maybe it’s my not eating pasta much anymore… or maybe since we’ve ogled at all this Ramen recently… maybe it because I’ve only had Ramen like one other time since I’ve been out of college… Anyways, we couldn’t get enough! We split three Ramen <em>bricks..</em><em>??</em> <em>Ramen patties?? Not such a bad thing, but Greg and I have come up with a super simple, full-of-flavor stuffed sausage recipe. My co-worker brought me a huge bag of yellow peppers last week, fresh from her garden. They were gorgeous and bright, but I really had no clue what to do with them. I didn’t even know what type of pepper they were… she didn’t either, we just knew they were bright yellow and had a very mild flavor. She said that they had stuffed them with sausage and cream cheese and they turned out delicious. I googled and it seems to be an Anaheim pepper?? So that’s what I’m calling them for the sake of this post :-/</p> <p>So I brought home a whole bag of about 40 or 50 beautifully fresh peppers the night before we were going out of town for 5 days to Birmingham. We decided to use a few of them that night. Greg had some shredded, Mexican-seasoned chicken in the fridge that we needed to use, so we decided to mix the chicken with shredded Monterrey jack and shredded cheddar, and STUFF THE PEPPERS! This was our TEST-BATCH — they turned out — pretty flavorful, but we made a few dumb mistakes…<br /> <span id="more-2358"></span></p> <p>For example: </p> <ul> <li>Make sure you roast the peppers BEFORE you stuff them and remove the skin (DUH!)</li> <li>Make sure you stuff them from a slit down the side of the pepper, NOT by cutting off the top, and trying to stick them in the top (DOUBLE DUH.)</li> </ul> <p>The first night, I made a pico de gallo for topping, since the chicken Greg made has Mexican spices. Then I covered the peppers with STRING CHEESE (the only cheese we had in the house)! I stringed it off and laid it over the top, then set it under the broiler in the oven to melt and turn a bit brown. Here’s the final product from the first night. We fixed our two DUH’s from our last attempt…. and… they turned our perfect! They were all gone by the end of the dinner. Yum! </p> <p>So, by the time we were back home, I wanted to share the recipe — but unfortunately I didn’t have camera/etc. while I was up there, so I only got a <a href="http://www.thatsquareplate.com/wp-content/uploads/2015/08/IMAG0019.jpg">cell-phone pic</a>. :(</p> <p>We finally got around to making them again this afternoon and I had to BUY the peppers from Publix this time. That’s fine and all, but I bought these identical looking peppers and Publix [I noticed they were named: Hungarian Wax Peppers, btw]… we found out the hard way these were NOT the same thing. They were incredibly spicy! I was even talking to the cashier at the store and told her that these were nice and mild peppers. hahaha! Oops!</p> <p>So when I tried to recreate these earlier, I broiled the peppers, peeled off the skins, and slit them down the side. De-seeded them with my bare hands.. (which I had done in Birmingham <em>no problem</em>).. and soon after… after Greg commented on the spiciness of the peppers… my fingers started to burn, and burned for hours. As well as my lips — but you know what, the flavor of these things was spicy, but cheesy and savory. I love spice, so it almost was all worth it.. but I did have a few more <em>DUH</em> moments — as in: </p> <ul> <li>Don’t assume that just because a pepper looks nearly the <em>EXACT</em> same — they MAY not have the same spice level. EEK.</li> <li>Wear gloves when de-seeding a pepper.. or use a spoon or knife.</li> </ul> <p>The pictures below are our rendition from today — we used a mozzarella cheese/cream cheese/sweet Italian sausage mix in the HOT Hungarian Wax peppers. with cream cheese and half of the shredded cheese in a large bowl. Slice halfway through from top to bottom careful to only cut one slit - don't cut all the way through. Scrape out seed with a knife or a spoon.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Line a large baking dish with foil, and lay peppers side by side.</li> <li class="blog-yumprint-method-item" yumprintitem="5">Spoon sausage mixture into the peppers, and top with the remaining shredded cheese.
