<p>If you don&#8217;t agree, it&#8217;s ok, but I DO suggest you try it. I found this jar at World Market and bought it because I had been reading so much about it in food magazines. And I am totally NOT disappointed! I am a spice fan, I LOVE spicy foods.. and to find a new spicy condiment kinda makes my day.<br />

It&#8217;s like a paste consisting of chilis, lemon, garlic and salt &#8212; plus a few spices.. and it&#8217;s BALLIN&#8217;.</p>
<p>I&#8217;ve been wanting to make a zoodle recipe for a while now, so I got some zucchini the other day, and its literally the ONLY fresh thing left from my last grocery trip. So I wanted to make some kind of sauce consisting of the harissa to add to my zoodles.<br />

I pretty much threw them all together in a sauce and coated the zoodles, and TA-DA! DELICIOUSNESS!<br />

I wasn&#8217;t planning on it and it is a totally optional step, but I love the texture of the sauce after I blended it up a bit. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Squeeze zoodles in paper towels to remove excess moisture.*</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Melt 2 tablespoons butter in large cast iron skillet over medium-high heat and add onion and bell pepper. Cook 2-3 minutes until they are soft and add garlic. Cook 1 minute until fragrant. Add the can of diced tomatoes, all spices and lemon zest and bring to a boil. Reduce heat and simmer for 15-20 minutes until sauce thickens.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Transfer sauce to a smaller bowl and use an immersion blender to blend up and make a thick sauce texture. Add back to pan and add lemon juice and 1 tablespoon butter until melted.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Toss zoodles in sauce and cook 3-5 minutes more until they soften. Season with salt and pepper if needed.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Transfer to serving plate and garnish with toasted almonds and parsley if you want.</li>			</ol>

I let them sit for about 15 minutes, then I pressed them with paper towels to remove as much moisture as possible. (I don’t know if this is necessary, but I just didn’t want my sauce to be watery!)</li>			</ol>

<p><!--more-->Alas it is the end of Winter here and whilst it has not been as brutal as some we face fresh food is definitely a little thinner on the ground that at other times of the year. For us that means we rely on our freezer and store cupboard staples, so when Whitney asked me to produce something for her site I thought I would combine one of her favourite ingredients, shrimp, with one of my favourite ways of cooking, stir fry and my Shrimp Stir Fry loaded with garlic, ginger and a wee kick of Chili! <p>I was born in the city of Birmingham in the UK in the mid 1970&#8217;s, Britains second city, a multi cultural industrial heartland and a place where I was surrounding by global flavours from the youngest of ages, so my food is just as influenced by the flavours of China, India, North Africa and the Arab States as it is by traditional British flavours. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Add the ginger, garlic, light soy sauce and chili to the shrimp and allow to steep for an hour.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Cook your noodles as recommended on the packet and then refresh in cold water.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Put your wok on a fierce heat and when it is shimmering add in the oil and fry the onions for 30 seconds.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Then add in the shrimp with all of the marinade ingredients and fry for a further 2 minutes ensuring you keep things moving all of the time.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Throw in the drained noodles along with the mirin, dark soy sauce and chingkiang vinegar bring the noodles to temperature and combine all of the ingredients together which should take a maximum of one more minute.</li>				<li class="blog-yumprint-method-item" yumprintitem="5">Remove from the heat and stir in the sesame oil and serve with optional toasted sesame seeds</li>			</ol>

These crostinis came to mind because I had some chicken I needed to use in the fridge, but I kinda wanted to dress it up a bit. Caesar dressing is such an easy dressing to make when you can just throw everything in the food processor. There’s nothing better than some homemade Caesar dressing ~ don’t forget the anchovies!</span><span id="more-4204"></span></p>
<p><span style="font-weight: 400;">The combo of the warm chicken and crostini with the tart Caesar dressing is a match made in heaven. </span><span style="font-weight: 400;">Butterfly the chicken breast and season it generously with some salt, pepper, and Herbs de Provence &#8212; which apparently I’ve been mispronouncing my whole ‘culinary’ life (which I guess hasn’t been </span><i><span style="font-weight: 400;">that </span></i><span style="font-weight: 400;">long). Anyways, I used a </span><a href="http://amzn.to/1NONN6v"><span style="font-weight: 400;">grill pan</span></a><span style="font-weight: 400;"> to grill up the chicken until brown and cooked through. You can bake it or cook it on a stove top or whatever.. the point is just to get it cooked! Once finished, slice diagonally into thin bite-sized pieces that will fit on top of your crostinis. Cover with foil to keep warm. </span>Once the chicken is cooked, add a little bit of oil to a pan over medium-high heat. Add sliced prosciutto and cook until it gets all crisp, then remove to a paper towel. Assemble crostinis by layering crisp bread, sliced roasted red peppers, chicken, Caesar dressing, prosciutto, shaved Parmesan, and alfalfa sprouts or other green herbs or microgreens &#8212; gotta make it all pretty, right?! Add olive oil and season with salt and pepper, and process again. Finally, add Parmesan and pulse a few times to combine.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">For the chicken, butterfly and season with salt, pepper, and Herbs de Provence on both sides. Heat your grill pan over medium-high heat over the stove. Add oil to pan, heat, and add chicken. Cover with top of the grill pan, and cook about 10 minutes, turning halfway through. Remove from heat and set aside. Once cool, slice in small diagonal slices.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">While it’s cooling, heat a saute pan with 1 tablespoon olive oil over medium high heat. Add sliced prosciutto and fry until crisp, then remove to a paper towel.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Turn oven to high broil. Slice bread in 6-8 thin slices (about ¼-½ inch slices). Half or quarter bread slices to make them more ‘bite-sized’, and brush with olive oil. (I used a specialty olive oil from an olive oil store, but any will do!) Lay out on a parchment lined baking sheet and place on top shelf in oven. Broil for about 3-4 minutes until starting to brown on top. (Make sure to watch so they don’t burn!)</li>				<li class="blog-yumprint-method-item" yumprintitem="4">To assemble, place sliced red roasted peppers on top of bread, add a few chicken slices, and drizzle with the Caesar dressing. Top with shaved Parmesan pieces, fried prosciutto, and alfalfa sprouts. Enjoy!</li>			</ol>

<p>We have <a href="http://papaspizzagulfshores.com/" target="_blank">a little pizza place</a> near our house that makes AMAZING garlic knots that you can order as an appetizer. Soft, garlic-y, tied-up dough&#8230; a perfect pre-course to a big ol&#8217; slab of pizza. We had their pizza tonight actually, and it was awesome, as usual. <p>These garlic knots are based on <a href="http://www.foodnetwork.com/recipes/emeril-lagasse/garlic-knots-recipe.html" target="_blank">Emeril&#8217;s recipe</a> from foodnetwork.com. I left my dough out of the fridge for about an hour to let it rise a little before I rolled it out and formed the knots. <p>I served this with&nbsp;<a href="http://www.thatsquareplate.com/fusilli-with-pork-sausage-ragu/" target="_blank"><em>Fusilli with Pork Sausage Ragu</em></a>, and they were an awesome match. The dough was still soft and warm inside, and the butter/garlic/cheese mix on the top was&nbsp;<em>the bomb.</em><br />

<p>After removing them from the oven, toss in a sautéed garlic/butter/Parmesan mix, and have one or three. Roll out dough into a large rectangle (about 16x12-inches). Brush with olive oil and cut in half. Then cut each half into 1 1/4-inch strips. Tie each strip into a knot and place on baking sheet about 2 inches apart. Sprinkle with salt, and cover with a kitchen towel for about 30 minutes. Preheat oven to 375 degrees F.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Saute butter and garlic over medium heat, and cook until garlic is fragrant ~ a few minutes.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Bake for 15-20 minutes until bread starts to get golden and brown.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Remove from oven. Add garlic/butter mixture and Parmesan to a big bowl. Toss garlic knots to coat with butter mix and cheese.</li>			</ol>

Since I used to be so picky, and I&#8217;ve learned to love SO many new dishes, I try to understand that people <em>LOVE</em> different foods.. Obviously, I guess.. but when I think about it, it makes me wonder WHY?! I know they love it, so I try to see what they love about it, and understand it. It usually takes me a few attempts, but I&#8217;m getting WAY &nbsp;better. Greg&#8217;s mom came down this past weekend, and it was her birthday Sunday, so needless to say, we cooked a few amazing&nbsp;dishes. Greg found this recipe from one of our Food &amp; Wine cookbooks: Food &amp; Wine Best of the Best, Volume 17 (<em><a href="http://amzn.to/1OhIDVG" target="_blank">buy hardcover</a></em>). This particular cookbook takes some of the best recipes from 25 best cookbooks of the year, now best really is opinion, but I&#8217;ve gotta say, all the recipes in the book&nbsp;sound &amp; look AMAZING.</p>
<p>This recipe is from a cookbook called Franny&#8217;s: Simple Seasonal Italian (<em><a href="http://amzn.to/1MEuy29" target="_blank">buy hardcover</a></em>&nbsp;/ <em><a href="http://amzn.to/1OhITnD" target="_blank">buy Kindle version</a></em>) by Andrew Feinberg, Francine Stephens, &amp; Melissa Clark. The whole book is based on simple recipes with spectacular flavor. They have a restaurant in Brooklyn, Franny&#8217;s, which I would love to visit sometime! Anyways.. the recipe&#8230;&nbsp;&nbsp;<span id="more-3663"></span></p>
<p>It turned out beautifully! The sauce was so flavorful and perfect on the fusilli noodles. I unfortunately didn&#8217;t get any really great pictures, but maybe next time&#8230; because there will be a next time!&nbsp;</p>

<p>Greg cooked the whole thing, I just kinda watched on most of the time (I was making the garlic knots and a cake!) I said I&#8217;m still kinda getting around to sausage, the smaller the pieces the better. He&nbsp;ground it up while it was cooking, so it was in tiny pieces, which is perfect for me! [I love <a href="http://amzn.to/1PPU2O2" target="_blank">this Pampered Chef Mix N Chop</a>&nbsp;for grinding up meat while cooking, and it may not look like much, but it grinds beef/sausage like a champ!]</p>
<p>Anyways, the recipe is super simple, but it does take a bit of your time, granted a lot of idle time&#8230; You wait on the sauce to simmer, then&nbsp;you must refrigerate it after cooking in order to scrape the fat off top. This would be a good overnight recipe, but we made it in a few hours (3 or so).</p>
<p>Serve with a nice scoop of ricotta on top. I LOVED this addition. It added a smooth, creaminess to the sauce. We even added more once the first &#8216;dallop&#8217; ran out!&nbsp;</p>
<p>I served these with some garlic knots, I&#8217;ll share that recipe too soon!</p>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">In a Dutch oven, melt the butter and olive oil over medium-high heat. Add the ground pork and cook until golden (we had to cook in two batches). Cook until golden. With a slotted spoon, remove meat and set aside.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Add pancetta and cook over medium heat and pancetta begins to get crispy. Stir in chili flakes and garlic and cook about 1 minute (until fragrant). Add onions, carrots, celery, and parsley and cook until the onion is translucent, 10 to 15 minutes. Stir in tomato paste and cook for 2 minutes, add red wine and bring to a simmer.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Add the pork, tomatoes, water and salt to the mix. Bring to a simmer and cover with a tight-fitting lid. Simmer for 40 minutes.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Remove lid and simmer about 15 to 20 minutes until its thickened to your liking. Season with salt and pepper. Let it cool to room temperature and refrigerate until chilled.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Remove and discard about 2/3 of the fat that has settled on the top (leaving about 1/3 to incorporate with the sauce).</li>				<li class="blog-yumprint-method-item" yumprintitem="5">After skimming the fat, cook the pasta according to package directions. Heat sauce on stovetop until warmed through, and serve over pasta.</li>				<li class="blog-yumprint-method-item" yumprintitem="6">Finish with a spoonful of ricotta and grated Parmesan.</li>			</ol>

Actually Greg is the one who usually cooks it, and this was my first time attempting. It&#8217;s a recipe called &#8220;New Orleans Barbecue Shrimp.&#8221; Now if you&#8217;ve never been to New Orleans, you&#8217;re missing out on some of the best food of your life, and pure craziness. And pure awesomeness. The recipe is actually a clipping from an old newspaper article of Greg&#8217;s grandparents. He introduced it to me a few years ago, and told me his grandparents used to cook it for him when he was younger and he loved it. He definitely grew up with a more complex palate than I did. Mine was bland until&nbsp;<em>mayyyybe&nbsp;</em>college.. and it&#8217;s been expanding ever since. I wouldn&#8217;t have had this dish at a young age.. I liked shrimp, but not spice. And definitely not onions (back in the day.) Today, I&#8217;m a HUGE fan of onions, spice, and much, much more. Thank goodness palates change people. Most of them do, anyway.</p>
<p>The actual newspaper clip with the original recipe is buried around in the house somewhere, and we had tried a few recipes that are similar, but could never recreate it without that clipping!<br />

<p>I finally made an awesome discovery! When I was looking at the recipes I had submitted to our drug store&#8217;s cookbook, I found it! I had submitted it about three years ago, and the recipe is published in this cookbook! There it was, plain as day. I had the the whole time, I had just forgotten.&nbsp;Our drug store created a cookbook with submissions from family and friends of the community to help our Relay for Life team.&nbsp;It also includes this amazing <a href="http://www.thatsquareplate.com/green-chili-wontons/" target="_blank">Green Chili Wonton recipe</a> (one of my most popular <a href="https://www.pinterest.com/pin/401242648029091092/" target="_blank">pins</a> ever!) We&#8217;ve just released the Volume 2 of the cookbook, and that&#8217;s the reason I was going back to look at the old version&#8230; to make sure I didn&#8217;t repeat any recipes.&nbsp;</p>

It&#8217;s just good. Serving with the rice makes it last longer &#8211; which is always a good thing.</p></div>
<p>As soon as I spotted the recipe&nbsp;in the cookbook, I took a picture of it&nbsp;and sent it to Greg. Then, I requested to have it for my birthday! It was just as I remembered &#8211; spicy, buttery, and savory. The shrimp works so well with the garlic, onions, lemon and spice. &nbsp;I like to use fresh large or extra-large shrimp from the gulf. We have a favorite seafood shop in Bon Secour (about 15 minute away) that we visit anytime we want to cook shrimp. There&#8217;s nothing better than fresh from the boat seafood.. but frozen will work in this recipe as well.&nbsp;</p>

<p>Now, New Orleans barbecue isn&#8217;t the normal way you think of barbecue &#8212; it doesn&#8217;t have to do with the method of cooking or the barbecue sauce.&nbsp;It&#8217;s pretty much shrimp cooked in a skillet with a lotta butter, garlic, onions, and spice (<em><a href="http://hickswrites.blogspot.com/2010/08/new-orleans-dining-pascals-manale.html" target="_blank">here&#8217;s a good article on the origination of the term</a></em>). All recipes vary a bit, but this is our favorite we&#8217;ve found. I&#8217;ve had plenty of yummy versions of the barbecue shrimp, but I really always come back to this one and LOVE it. It&#8217;s a perfect combination of flavors. You end up with tons of extra butter/lemon/garlic/onion sauce that is just to die for. I suggest you buy (or <em>make</em>)<em>&nbsp;</em>a nice fresh loaf of Italian bread to serve alongside the shrimp. This is the first time we&#8217;ve made rice to serve with the shrimp and it&#8217;s a great addition to soak up all the extra flavor too. I cooked plain white rice in half water/half chicken broth seasoned with salt and pepper. It&#8217;s easy to throw the rice in a rice cooker (<a href="http://amzn.to/1Nyl4aU" target="_blank">like this one from Amazon</a>), and let it cook, while you focus on the shrimp dish. &nbsp;Also, don&#8217;t forget to heat the bread in the oven for a bit. The entire recipe itself only takes about 20-30 minutes, so its an awesome weeknight meal.</p>

When the onion begins to brown, add garlic. When the garlic begins to take on color, add the celery salt, chili powder, salt and pepper. Stir for one minute. If you&#8217;ve never been to a Chuy&#8217;s, you&#8217;re missing out. It&#8217;s a TexMex chain that is expanding throughout the U.S. When I looked at their website locations, I couldn&#8217;t believe how many they have now. Anyways, the only location I&#8217;ve visited is in Birmingham, Alabama.. and we&#8217;ve been there a few times. We like to try new entrees, but&nbsp;<em>every single time&nbsp;</em>we go, we have to get the jalapeno ranch dip they serve before the meals. It&#8217;s served along with salsa and fresh tortilla chips. It&#8217;s all just heaven.</p>
<p>When we&#8217;re on vacation, we tend to splurge a bit &#8212; so&nbsp;I will tell you to go ahead and order some on the side of your meal as well. It&#8217;s good on anything &#8212; anything TexMex anyway. I remember running across <a href="https://www.pinterest.com/pin/27232772716378625/" target="_blank">this pinned post </a>from <a href="http://www.plainchicken.com" target="_blank">plainchicken.com</a>, and making it a while ago when we had some company over. It was a hit, and I decided to make some more this afternoon to last through the weekend. <p>The recipe is extremely simple, I start out with two jalapenos. I use this handy dandy&nbsp;jalapeno seeder (<a href="http://amzn.to/20hunkE" target="_blank">click to buy</a>&nbsp;~ $6.20 Prime). It makes&nbsp;removing the seeds a breeze, I use it EVERY time. Anyways, I removed most of the seeds, since I still wanted a little spice. Then roughly chop the garlic, cilantro, and jalapeno.</p>

<p>Add the jalapeno, garlic, and cilantro to a food processor. <p>Add sour cream and lime juice, and pulse until creamy. Then add milk to your desired consistency. I love getting the recap from a year full of recipes, and there&#8217;s some beautiful food photography&nbsp;throughout the book. It didn&#8217;t take me long to find a picture of this&nbsp;<a href="http://www.foodandwine.com/recipes/ricotta-and-roasted-tomato-bruschetta-with-pancetta" target="_blank">Ricotta and Roasted Tomato Bruschetta with Pancetta</a> on page 23. The recipe seemed easy enough, so I decided to make it (with a few subtle changes) and Viola! &#8230; It turned out amazing! I had also been craving some yummy bruschetta after ogling the pictures from <a href="http://www.thechunkychef.com/heirloom-tomato-bruschetta-caprese/" target="_blank">The Chunky Chef&#8217;s&nbsp;Heirloom&nbsp;Tomato Bruscetta Caprese</a> post.&nbsp;</p>
<p>The original recipe from the cookbook calls for pancetta, but I already had some prosciutto in the fridge that I needed to use. The prosciutto crisps up like bacon&nbsp;in the oven and crumbles beautifully! Anything that looks like bacon, crisps like bacon, and tastes &lt;somewhat&gt; like bacon &#8212; gotta be good (<em>on anything, right?!).&nbsp;</em><span id="more-2255"></span></p>

<p>To make the bruschetta: Toss tomatoes, garlic slices, and thyme lightly with olive oil.&nbsp;</p>

<p>Roast the tomatoes and prosciutto in the oven at 325 for about 30 minutes or until the prosciutto crisps. Remove prosciutto onto a paper towel and continue roasting tomatoes until they are bursting (about 10 more minutes). (This is a good time to add your bread to the oven to toast).</p>

<p>Meanwhile, heat 1/4 cup olive oil in a small pan on medium-high heat. Fry sage leaves for 30-45 seconds until they are green and crispy. Remove onto paper towels. When the tomatoes are done roasting, pour the tomatoes and all of the oils from the parchment paper into a bowl for serving.</p>
<p>For the bread I sliced a large loaf of French bread into thin slices, brushed them with a mix of olive oil and melted butter, and broiled on low for a few minutes. Once the edges started turning brown, they were good to go! &nbsp;</p>
<p>To assemble, spread a small spoonful of ricotta cheese over each toasted bread slice. Spoon some of the roasted tomato/garlic/olive oil mix and top with a sage leaf or two. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Preheat oven to 325 degrees F. Mix tomatoes, garlic, thyme sprigs, and 1 tablespoon olive oil in a medium bowl. Season with salt and pepper. Pour onto one half of a parchment paper lined baking sheet. Lay prosciutto side by side on the other half. Bake for 25-30 minutes, until the prosciutto is crisp.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Transfer the prosciutto to paper towels. Crumble when it cools down.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Roast the tomatoes for about 10 more minutes (until some start to burst). Transfer the tomatoes and any rendered fat from the prosciutto to a bowl.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Meanwhile, in a small skillet, heat the remaining 1/4 cup of olive oil over medium-high heat. Add the sage and fry until bright green and crisp, 30 to 45 seconds. Drain the sage on paper towels.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Spread the ricotta on the toasts and top with the tomatoes and crumbled prosciutto. Season with salt and pepper and top the toasts with the sage leaves. Serve immediately.</li>			</ol>

Once you find out ways to make them delicious, it seems like a no-brainer. This recipe was inspired&nbsp;after coming across Emeril Lagasse&#8217;s&nbsp;<a href="http://www.foodnetwork.com/recipes/emeril-lagasse/oven-roasted-cauliflower-with-garlic-olive-oil-and-lemon-juice-recipe.html" target="_blank">Oven-Roasted Cauliflower with Garlic, Olive Oil and Lemon Juice</a>. I wanted to make use of some white truffle oil that&#8217;s been sitting in my pantry, so I added a little to the mix. It was the perfect complement to the Italian flavors in this dish. You can toss all the ingredients in a large bowl before pouring onto a platter, or you can save a dish and just mix it all up right in the pan!<span id="more-1870"></span></p>
<p>I roasted for 15 minutes, topped with the Parmesan, and broiled on high until the mix was bubbly and a little browned.&nbsp;</p>

<p>The results were heavenly. And the recipe is really insanely easy. It&#8217;s hard to mess up! I used only a half of a cauliflower for my late afternoon snack, but a whole cauliflower would work for two or more people. This is such an amazing side dish!</p>

Line a baking dish with foil (to make clean-up easier). Spread out cauliflower and onions in dish and drizzle with oils. Add salt, peppers, garlic, and lemon juice, and thyme. It was a perfect, semi-light dinner for Saturday night. Greek Salads are something I&#8217;ve always ordered from restaurants, but never attempted to make myself. I found <a title="Ina Garten's Greek Salad" href="http://www.foodnetwork.com/recipes/ina-garten/greek-salad-recipe.html" target="_blank">Ina Garten&#8217;s recipe on Foodnetwork.com</a> and after comparing it to a few others, I decided to try it. It couldn&#8217;t have been better! The cubed feta, kalamata olives, and vinaigrette dressing made the dish. SO GOOD!&nbsp;</p>
<p>I&nbsp;<em>did&nbsp;</em>modify ONE thing though, because I&#8217;m not a huge fan of non-pickled cucumbers. So, PLEASE, feel free to add a big ol&#8217; cucumber in your mix, but I decided against it. Also, I used half orange and half red pepper in the recipe instead of one red.. but really who&#8217;s counting? Use whatever color kinda peppers your heart desires. Also, I served this over a mixed baby greens mix from Publix.&nbsp;</p>
<p>The key is letting the veggies sit in the vinaigrette dressing for at least 30 minutes to let the flavors blend.&nbsp;<span id="more-1396"></span></p>

<p>Place your peppers, tomatoes, and red onion in a large bowl.</p>

<p>The vinaigrette is a mix of garlic, oregano, Dijon mustard, red wine vinegar, kosher salt, black pepper, and olive oil (specific measurements on recipe card below). Whisk everything together adding the olive oil last (while you&#8217;re whisking).</p>

<p>Pour your vinaigrette over the vegetable mix, then add the feta and olives and toss lightly.</p>
