After scouring Pinterest and Google, I found that most of the recipes online were simply battered, fried string cheese. I wanted to get more creative with the cheese inside though. I wanted to add goat cheese and herbs, and make ’em super tasty. So I finally ran across <a href="http://www.foodandwine.com/recipes/crispy-cheese-sticks">this “Crispy Cheese Sticks” recipe</a> from Justin Chapple on foodandwine.com. </p> <p>The recipe totally intrigued me because his technique was so different than any I had heard of before… He mixed his cheese filling in a big bowl, then used FLATTENED white bread for the outside! Genius!! So I just had to figure it out for myself, and I’m so glad I did! These things were DYNAMITE! I modified his version with some different cheeses and herbs in the filling, but the technique is all the same. <span id="more-5282"></span><img decoding="async" class="aligncenter wp-image-5284 mozzarella cheese, goat cheese, Parmesan cheese, egg, chives, and 1/2 teaspoon salt & 1/2 teaspoon pepper. Place in refrigerator for at least 15 minutes.</li> <li class="blog-yumprint-method-item" yumprintitem="1">With a rolling pin, flatted each slice of bread and cut off crusts (optional). Arrange with long sides toward you. Spoon 1 heaping tablespoon filling on the lower half of each slice. Brush edges with water and roll up around the filling. Once I’ve gotten older though, I’ve grown to love the more unique versions. I love the ones with jalapenos or crab stuffed inside. </p> <p>Now, of you’re not southern or from the US, you may not have a single clue as to what I’m talking about when I say hushpuppy.. or you may have a different name for these things. It is basically a fried ball of cornmeal batter. I like to use <a href="http://allrecipes.com/recipe/222243/buttermilk-hush-puppies/" target="_blank" rel="noopener">the base recipe from allrecipes.com</a> with cornmeal, buttermilk, and flour – because it makes a perfect light batter. </p> <p>Once the batter is mixed, you scoop it out with a <a href="http://amzn.to/2aWwyEH">melon baller </a>or tablespoon and drop it in some hot oil until they’re fried golden brown.</p> <p>Here, I’ve added some shrimp and scallops from my local seafood shop, and some green onions for some color and light onion flavor. thing called bullet journaling, and I’ve decided to share all I know by making a website about it! Flour, sugar, baking soda, ancho chili powder, crushed red pepper, and salt in a large bowl. Whisk buttermilk, vegetable oil and eggs in a separate bowl. Stir wet mixture into the dry mixture. Fold in shrimp, scallops and green onions. .</li> <li class="blog-yumprint-method-item" yumprintitem="2">Lay out some paper towels and place a cooling rack over them.</li> <li class="blog-yumprint-method-item" yumprintitem="3">When oil is heated drop 7 or 8 tablespoon sized scoops of batter into the oil. Fry 6-8 minutes or until they’re brown. Remove to cooling rack.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Continue with the rest of the batter. I was searching for a chicken recipe to cook for the night, and found this one in <a href="http://foodandwine.com">Food & Wine’s</a> Annual Cookbook from 2012 (<a href="http://amzn.to/1tjeVIb">buy for $0.01 at Amazon</a>). I’ve modified it from the original version, which was a taco recipe. Most foodies would prefer using chicken thighs with the bones (which is what the original recipe called for). Do everything the same if you use the thighs, but make sure to remove the bones before shredding the meat.</p> <p><em>Tinga</em> is a traditional chicken dish that originated in Mexico. It consists of shredded chicken, tomatoes, chipotle and onion — pretty much my heaven. I definitely prefer the texture of shredded chicken in Mexican dishes, and when you combine it with the crunchy tortilla, the spicy robust tomato sauce, and the light queso crumble and scallion garnishes, your tastebuds will go crazy! Season chicken with salt and pepper, and cook until browned, turning once (about 12 minutes). Add chicken to a 9x13-inch baking dish and pour off fat from skillet.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Add the remaining 3 tablespoons olive oil and cook the sliced onion. Cook over medium-high heat until lightly browned and softened, stirring occasionally (about 5 minutes). Add minced garlic and cook 2 minutes more. Add diced tomatoes and their juices, the chipotles and the broth and bring to a boil.</li> <li class="blog-yumprint-method-item" yumprintitem="2">SImmer the sauce for about 20 minutes until slightly reduced and thickened. Stir every few minutes.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Preheat oven to 350 degrees F.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Transfer sauce to a food processor and let cool for about 15 minutes. Puree until smooth and season with salt and pepper. Pour over chicken and bake, uncovered in the center of the oven for about 30-45 minutes, until the meat is tender and the sauce is really thick.</li> <li class="blog-yumprint-method-item" yumprintitem="5">Near the end of the cooking process, heat about an inch or 2 of canola oil to about 360 degrees F. Fry the tortillas individually for a few minutes each until crisp like a chip. Remove to paper towels, and sprinkle salt over the top of each tostada.</li> <li class="blog-yumprint-method-item" yumprintitem="6">Remove chicken from the sauce and shred the meat. Return shredded chicken to the sauce. Spoon chicken mixture onto each tortilla and sprinkle with crumbled cheese. Gotta take advantage of marked down Memorial Day goodz.</p> <p>Anyway, I love a good, crispy chicken wing that’s coated in sauce and full of flavor.. and that’s exactly what I made! I wanted a good wing sauce recipe, and knew my blogger bud Byron at <a href="http://www.prettypracticalpantry.com/">Pretty Practical Pantry</a> had been on a <a href="http://www.prettypracticalpantry.com/?s=wings">wing kick</a> lately. Every recipe he’s posted so far (even though he’s only newly added <a href="http://www.prettypracticalpantry.com/category/non-vegetarian/">non-vegetarian recipes</a> to his blog) has looked DELISH.</p> <p>I decided on <a href="http://www.prettypracticalpantry.com/crusted-fried-baked-japanese-chicken-wings/">his Japanese wings recipe</a> to use on these drums. Dry with more paper towels. Bring to a temperature of 350 degrees.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Preheat your oven to 350 degrees.</li> <li class="blog-yumprint-method-item" yumprintitem="3">In a bowl, whisk together the flour, paprika, salt and pepper. Add to a large ZipLock bag.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Add chicken and shake it all up until the pieces are coated.</li> <li class="blog-yumprint-method-item" yumprintitem="5">Dip each chicken piece into the flour mixture and fry for 3 minutes on each side (in batches).</li> <li class="blog-yumprint-method-item" yumprintitem="6">(*Byron's note: The goal is to create a firm crust on the chicken. Don't worry about cooking the chicken all the way through at this point.)</li> <li class="blog-yumprint-method-item" yumprintitem="7">Remove and drain on a paper towel. When the chicken is all fried, place the pieces into a large bowl and set aside.</li> <li class="blog-yumprint-method-item" yumprintitem="8">Line a baking sheet with parchment paper.</li> <li class="blog-yumprint-method-item" yumprintitem="9">In a small bowl, whisk together the soy sauce, vinegar, and sugar until the sugar has dissolved.</li> <li class="blog-yumprint-method-item" yumprintitem="10">Pour about 2/3 of this mixture over the fried chicken wings and toss to completely coat.</li> <li class="blog-yumprint-method-item" yumprintitem="11">Using tongs, remove each wing and place on the baking sheet. Add sesame seeds to the rest of the mixture and combine.</li> <li class="blog-yumprint-method-item" yumprintitem="12">Bake the wings for 20 minutes. Remove from the oven and return each wing to the soy sauce mixture you saved. Toss to coat again.</li> <li class="blog-yumprint-method-item" yumprintitem="13">Place the wings back onto the baking sheet and return to the oven for 14 minutes. with a little bit of kosher salt in a mortar and pestle.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Heat olive oil over medium heat in a small saucepan. Add garlic and shallot and cook 10-15 minutes until nice and fragrant. Strain olive oil into a bowl through a strainer.</li> <li class="blog-yumprint-method-item" yumprintitem="2">In a medium bowl, whisk together egg yolk and sriracha. Slowly add olive oil a tablespoon at a time and whisk continuously so it emulsifies. Season with salt and pepper. Add to a squeeze bottle if you want.</li> </ol> </div> <div class="blog-yumprint-method-section" yumprintsection="3"> <div class="blog-yumprint-subheader">For the Fries and Assembly</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Run potatoes through a spiralizer on the thinner noodle setting. Soak in a large bowl with cold water for at least 5 minutes. Rinse and repeat. After soaking, transfer to a kitchen towel and dry off as well as you can.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Heat a large pot of canola or vegetable oil to 300 degrees F.</li> <li class="blog-yumprint-method-item" yumprintitem="2">When heated, fry “fries” halfway through in 300 degrees oil, for about 5-7 minutes, until they’re starting to change to a darker color. (They’ll be a little ‘soggy’). Move to paper towels to dry, and do the same with the rest of the fries.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Preheat oven broiler. Heat oil to 400 degrees F and, when heated, add batches of the half-cooked fries to cook until brown (about 2-4 minutes.) When crisp, move to paper towels and season with salt. Move to top shelf of oven to melt cheese. And I have to thank Mary over at <a href="http://goodiegodmother.com/">Goodie Godmother</a> for this recipe. She’s incorporated a few of my favorite things in the batter — beer and Old Bay seasoning. And the batter is super light from the baking powder, cornstarch and beer, so the onion rings have the perfect light and crunchy consistency.</p> <p>I’ve only made a few very small tweaks to her recipe (using a different type of beer and only using one LARGE sweet onion.) Heat oil to 350 degrees F.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Meanwhile, cut onions into ¼ - ½ inch rounds and add to a large bowl of ice water.</li> <li class="blog-yumprint-method-item" yumprintitem="3">In a medium bowl, whisk flour, cornstarch, baking powder, and Old Bay seasoning together. Pour in beer and whisk until smooth.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Remove onion rings from ice water and pat dry with a towel. Add more ice to the large bowl, and place the bowl with the batter into the ice-filled bowl, so it keeps the batter cool.</li> <li class="blog-yumprint-method-item" yumprintitem="5">When the oil is heated, move the onion rings into the batter, shake off excess batter, and add to hot oil. Fry until golden brown (about 4-6 minutes per batch, turning halfway through if necessary).</li> <li class="blog-yumprint-method-item" yumprintitem="6">Remove to a cooling rack over paper towels, and sprinkle with Old Bay seasoning. Both are amazing on fried chicken! I made a homemade honey mustard sauce to drizzle over the top. And I used some pre-made barbecue sauce. Use whichever kind you want (or make your own), but I like to use a locally-made sauce called <a href="http://www.vipersauce.com/">Viper sauce</a>. cutting surface and cut longways through the middle to make 4 ‘strips’. Salt and pepper each strip on each side, and roll each tightly in a piece of plastic wrap. (They will somewhat be shaped like a hotdog). Let sit at least ten minutes.</li> </ol> </div> <div class="blog-yumprint-method-section" yumprintsection="4"> <div class="blog-yumprint-subheader">Honey Mustard Sauce</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Whisk honey, mustards, and mayonnaise together in a medium bowl (I used a 2 cup liquid measuring cup, so I could pour into a squeeze bottle). Season with salt and pepper and add to a squeeze bottle if you wish.</li> </ol> </div> <div class="blog-yumprint-method-section" yumprintsection="5"> <div class="blog-yumprint-subheader">Chicken & Assembly</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Preheat oven broiler to low and heat oil in a large saucepan to about 330 degrees F - 350 degrees F.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Whisk together flour, celery salt, garlic powder, onion powder, paprika, cracked black pepper, cayenne, breadcrumbs and salt. Add in a can of soda water and mix until smooth.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Prepare hot dog buns by opening them up, and brushing them with a light layer of mayonnaise. Add butter to a skillet and heat to medium. When butter melts, add two buns (face down) at a time to the pan. Heat about 3-5 minutes until the buns start to brown. Move to serving plate.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Add provolone slices to one side of the bun and add to top rack in the oven to let the cheese melt.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Meanwhile, remove chicken from freezer and unroll (2 at a time) into batter. Coat in batter and add to fryer. Fry 8-10 minutes until golden.</li> <li class="blog-yumprint-method-item" yumprintitem="5">Once cheese is melted, add tomatoes to other half of hotdog bun. Add fried chicken strip to the middle of the bun. Drizzle with the honey mustard and the barbecue sauce. I’ve only fried up potato ‘chips’ once before (a long time ago), and I had to depend on my knife skillz to make the potato chips as thin as possible.. (yes I said skillz.) They use blue cheese, but I’ve switched it up with a milder gorgonzola and added</span> <span style="font-weight: 400;">some smoked gouda. I made a sauce with the cheese, then saved some Gorgonzola for the topping. Now, you can find a similar dish at a place called Primeaux Cheese & Vino at the Summit (in Birmingham). Stir in flour -- cook for 1 minute. Add a pinch of red pepper flakes (optional).</li> <li class="blog-yumprint-method-item" yumprintitem="2">Whisk in cream until thickened and reduce heat to medium-low. Add ½ tsp. Worcestershire sauce. Season with salt and pepper.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Cook 1-2 minutes and add 2 oz. gorgonzola cheese and the smoked gouda. Season with salt and pepper. Stir until combined and smooth. Fry chips in batches until golden brown and crispy. Remove with slotted spoon and let drain on paper towels. Season with salt immediately if you wish. Tourists (and locals), I recommend you go… It’s definitely a new favorite in town, and they have amazing seafood (they’re known for their 100% Wild American Shrimp). Anyways, you know what I’m saying.</p> <p>The slaw was the best I’ve ever made myself. In fact, I took the leftover slaw to work the next week and added it to my spicy turkey/pepperjack sub. Sounds a little strange, but it was a good change to our normal lunch rotation of like the 5 restaurants we frequent. I fried them in a large fry pan in shallow canola oil about 3-4 at a time, making sure they don’t touch. Flip them halfway through to make them equally brown on each side. They didn’t take long to fry, just about 3-4 minutes each, just make sure they’re nice and golden brown.</p> <p>I kept the batter simple with buttermilk and panko since there was so much else going on in these little sandwiches. Even though really the first time I ever had them was a few years ago, I feel like I’ve eaten enough in the past few years to make up for an entire lifetime! There are so many different variations, and I have a place about 5 minutes away that serve my favorite version (so far). <a href="http://cactusflowercafe.net/menu/" target="_blank">Cactus Flower</a> in Gulf Shores serves mahi tacos, and I like to get them flash fried with a soft flour tortilla. They serve their tacos with shredded cabbage, pico de gallo, a creamy lime sauce, and their California lime dressing (my fav).</p> <p>Here, I’ve used some fresh mahi mahi, cabbage, and jalapenos from our local <a href="http://www.coastalalabamamarket.com/home" target="_blank">Farmer’s Market</a>. The peach salsa was an on-a-whim kinda thing, because my original idea – a mango salsa – was changed because of a forgotten item at the grocery store (<em>the freakin’ mango — duh!) </em>The peach salsa turned out super-tasty though, and was a great complement to the fried fish. I’ve made four components for the tacos: the beer battered fried fish, a lime-cabbage slaw, a peach salsa, and a lime crema. I love the combination of the tangy sour lime in the crema to lighten the flavors a bit from the hot salsa.</p> <p>For the final component, the tortillas, I heated <a href="http://amzn.to/1OXHiDz" target="_blank">my grill pan</a> <a href="http://www.thatsquareplate.com/caramel-apple-mm-bars/" target="_blank">(from my KitchenAid winnings</a>) oven medium-high heat, and pressed the tortilla between the lid and the pan, to heat up the tortilla and give some cool ‘grill’ marks on the outside of the tacos.
