I’ve been on such a guac kick lately.. I like to keep ripe avocados in the house in case I ever get the craving. One of our favorite spots in Auburn was a place called </span><a href="http://www.amsterdamcafeauburn.com/"><span style="font-weight: 400;">Amsterdam Cafe</span></a><span style="font-weight: 400;">. Even though really the first time I ever had them was a few years ago, I feel like I’ve eaten enough in the past few years to make up for an entire lifetime! There are so many different variations, and I have a place about 5 minutes away that serve my favorite version (so far). <a href="http://cactusflowercafe.net/menu/" target="_blank">Cactus Flower</a> in Gulf Shores serves mahi tacos, and I like to get them flash fried with a soft flour tortilla. They serve their tacos with shredded cabbage, pico de gallo, a creamy lime sauce, and their California lime dressing (my fav).</p> <p>Here, I’ve used some fresh mahi mahi, cabbage, and jalapenos from our local <a href="http://www.coastalalabamamarket.com/home" target="_blank">Farmer’s Market</a>. The peach salsa was an on-a-whim kinda thing, because my original idea – a mango salsa – was changed because of a forgotten item at the grocery store (<em>the freakin’ mango — duh!) </em>The peach salsa turned out super-tasty though, and was a great complement to the fried fish. I’ve made four components for the tacos: the beer battered fried fish, a lime-cabbage slaw, a peach salsa, and a lime crema. I love the combination of the tangy sour lime in the crema to lighten the flavors a bit from the hot salsa.</p> <p>For the final component, the tortillas, I heated <a href="http://amzn.to/1OXHiDz" target="_blank">my grill pan</a> <a href="http://www.thatsquareplate.com/caramel-apple-mm-bars/" target="_blank">(from my KitchenAid winnings</a>) oven medium-high heat, and pressed the tortilla between the lid and the pan, to heat up the tortilla and give some cool ‘grill’ marks on the outside of the tacos. It’s also quite comparable to my love for some good, fresh Mexican food. Here I’ve come up with a new favorite dish combining BOTH of these favorites.</p> <p>I literally live less than 10 minutes from the beach, so we have a lot of fresh seafood shops around here. The gulf is famous for it’s shrimp, and I could literally have them every single day. I like to get the extra large shrimp from a favorite hidden little seafood shop in Bon Secour (Aquila). When I bought these, I had no idea what I was going to do with ’em, but since it was the weekend, I wanted to make something a little different and full of flavor and spice.</p> <p>I feel like <a href="http://www.nbc.com/saturday-night-live/video/weekend-update-stefon-on-spring-break/n33632" target="_blank">SNL’s Stefon</a> when I say <em>these tostadas have everything</em> ~ the big, beautiful Chipotle marinated gulf shrimp, a spicy Serrano pico de gallo, black bean puree, lime-cilantro rice, and a chipotle sour cream to top it off. I decided to cut the rounded edges off the corn tortillas and make them into squares– maybe so they’d look nice on my ‘square plates’ .. I dunno, but I liked how they turned out!<span id="more-3963"></span></p> <p>I used a rice maker to cook the white rice. Add tortillas (I could fit 2 at a time) and fry 2-3 minutes on one side, then flip and fry another 1-2 minutes on the opposite side, until just starting to turn darker and crispy. Remove from oil to a paper towel or cooling rack (over paper towels) and sprinkle with salt. Repeat with the remaining tortillas.</li> <li class="blog-yumprint-method-item" yumprintitem="1">To cook the shrimp, melt 1 tablespoon butter in a large saucepan over medium-high heat. Add half of the shrimp and cook 3-4 minutes per side until opaque. This super-simple banana oat pancakes recipe includes ingredients we usually have in the house — oats, almond milk, a banana, and some eggs. And you just blend everything in a blender to make the batter. </p> <p>I woke up this morning after a long day of travel yesterday (to the Auburn game and back — sad face). I expected the pancakes to be a bit more difficult, but it took me all of about 20 minutes. Greg was about to workout and make himself some oatmeal, and I told him I had some pancakes for him. He said he didn’t want the flour and that he needed eggs and oats — he’s on a super-health kick. Anyways, these pancakes have NO flour and use oats as a base (not to mention there’s two eggs hidden up in there!) So he ended up going for the pancakes, and having over half the batch! He said they tasted like banana bread and LOVED ’em.</p> <p>So there’s a few morning victories — he didn’t have to make breakfast, I got some new, beautiful blog content, and we had an amazing, healthy meal to start out this rainy Sunday. </p> <p>I’m helping host a giveaway by Jennifer Meyering from <a href="http://jennifermeyering.com" target="_blank">jennifermeyering.com</a>. I love getting the recap from a year full of recipes, and there’s some beautiful food photography throughout the book. It didn’t take me long to find a picture of this <a href="http://www.foodandwine.com/recipes/ricotta-and-roasted-tomato-bruschetta-with-pancetta" target="_blank">Ricotta and Roasted Tomato Bruschetta with Pancetta</a> on page 23. The recipe seemed easy enough, so I decided to make it (with a few subtle changes) and Viola! … It turned out amazing! I had also been craving some yummy bruschetta after ogling the pictures from <a href="http://www.thechunkychef.com/heirloom-tomato-bruschetta-caprese/" target="_blank">The Chunky Chef’s Heirloom Tomato Bruscetta Caprese</a> post. </p> <p>The original recipe from the cookbook calls for pancetta, but I already had some prosciutto in the fridge that I needed to use. The prosciutto crisps up like bacon in the oven and crumbles beautifully! Remove prosciutto onto a paper towel and continue roasting tomatoes until they are bursting (about 10 more minutes). Fry sage leaves for 30-45 seconds until they are green and crispy. Remove onto paper towels. When the tomatoes are done roasting, pour the tomatoes and all of the oils from the parchment paper into a bowl for serving.</p> <p>For the bread I sliced a large loaf of French bread into thin slices, brushed them with a mix of olive oil and melted butter, and broiled on low for a few minutes. Once the edges started turning brown, they were good to go! </p> <p>To assemble, spread a small spoonful of ricotta cheese over each toasted bread slice. Spoon some of the roasted tomato/garlic/olive oil mix and top with a sage leaf or two. Sprinkle with the crumbled prosciutto and sage leaves and you are all set to make them taste buds happy! :)<img loading="lazy" decoding="async" class="aligncenter wp-image-2252" <div class="blog-yumprint-subheader">Instructions</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Preheat oven to 325 degrees F. Mix tomatoes, garlic, thyme sprigs, and 1 tablespoon olive oil in a medium bowl. Season with salt and pepper. Pour onto one half of a parchment paper lined baking sheet. Lay prosciutto side by side on the other half. Bake for 25-30 minutes, until the prosciutto is crisp.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Transfer the prosciutto to paper towels. Crumble when it cools down.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Roast the tomatoes for about 10 more minutes (until some start to burst). Transfer the tomatoes and any rendered fat from the prosciutto to a bowl.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Meanwhile, in a small skillet, heat the remaining 1/4 cup of olive oil over medium-high heat. Add the sage and fry until bright green and crisp, 30 to 45 seconds. Drain the sage on paper towels.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Spread the ricotta on the toasts and top with the tomatoes and crumbled prosciutto. Season with salt and pepper and top the toasts with the sage leaves.
