I cooked one of the recipes from their site, and added my own little twist. Being the seafood-lover I am, I found this Roasted Corn and Crab Dip and I couldn&#8217;t pass it up. I have a special place in my heart for a good seafood dip. Especially a warm, cheesy one! Ha! The last time I had a cheesy crab dip, I made a <a href="http://www.thatsquareplate.com/hot-fontina-and-crab-dip/" target="_blank">Hot Fontina and Crab Dip</a> for Christmas Day. It was divine, and I figured it was about time to make another!<span id="more-4569"></span></p>

<p>With the Super Bowl happening on Sunday, I had to try making something delicious for the guests we had for the game. I ended up making a pico de gallo, roasted tomato salsa (which I wasn&#8217;t too pleased with), guacamole, and some PRETZEL BITES. The guys grilled some ribs, so we stayed full the whole game! And what a game it was!<span id="more-1269"></span></p>
<p>I am obsessed with soft pretzels&#8230; <a title="Pretzels I made from September 2014" href="http://instagram.com/p/s5r6k5ze31/" target="_blank">I&#8217;ve made some of my own</a> before, but I haven&#8217;t made them in a while&#8230; These pretzel bites are better for the Super Bowl watching party because they&#8217;re smaller bite-size pieces, and you can eat as many or as few as you want. <p>Another great thing about the recipe are the ingredients. They&#8217;re all pretty basic, and I had them all at the house. Any time I can save a trip to the grocery store, I am down!</p>
<p>Here&#8217;s what you need:&nbsp;</p>

<p>Here&#8217;s how to do it:&nbsp;</p>
<p>In the bowl of a standing mixer, combine your melted butter, brown sugar, 1 1/2 cup warm water (make sure it doesn&#8217;t burn you.. the water can&#8217;t be too hot &#8212; it will kill the yeast and you&#8217;re done for!). &nbsp;Mix until combined with the <a id="static_txt_preview" href="http://www.amazon.com/gp/product/B00005LD48/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00005LD48&amp;linkCode=as2&amp;tag=thasqupla-20&amp;linkId=FT4USILIXG6KOQ3K" target="_blank">dough hook</a>&nbsp;or a spoon or whatever. Let sit for five minutes, then add some of the flour and turn the mixer on low. &nbsp;Slowly mix in your flour and salt. I mixed about a cup of flour at a time until it is all mixed and a nice dough ball forms (it should pull away from the sides of the bowl). Add more flour if you need to. The final dough ball shouldn&#8217;t be too sticky! Place in a large well-oiled bowl, and cover with a towel or plastic wrap and place in a warm spot. I put mine in our pantry.</p>
<p>Let sit for about an hour. It should at least double in size. I let it sit for a few hours so I could prep and cook a few more things. Here&#8217;s my before and after dough-ball pictures (looks like it tripled in size!) :</p>

<p>When you&#8217;re ready to finish the pretzels, preheat your oven to 425 degrees, spray down one or two baking sheets with cooking spray, and add the baking soda with about 3 quarts of water to a large saucepan. Turn on medium-high to high heat, and let it start to boil. Reduce heat to where its still bubbling. Watch out for bubble overflow! :)</p>
<p>While you&#8217;re waiting on the water to boil,&nbsp;dump your big, beautiful dough ball onto a smooth work surface and cut into 8 equal pieces. I like to cut it like a pizza. Each dough ball should weigh around 4.5 oz. if you wanna get all technical. ;) Roll each of these out into long ropes about 2 feet long. Then, cut each rope&nbsp;into 1-inch pieces.</p>

I did about a rope at a time. Let them sit for about 30 seconds in the water, and remove with a slotted spoon (I use an awesome handled colander <a id="static_txt_preview" title="OXO Good Grips Large Scoop Colander" href="http://amzn.to/1VyfOVw" target="_blank">like this one</a>&nbsp;for this part and it makes it SO easy!).&nbsp;</p>
<p>Spread bites out on the prepared baking sheet(s), brush each with the egg white mixture (1 Tbsp.&nbsp;melted butter), and sprinkle with salt (I used kosher salt, but <a id="static_txt_preview" href="http://www.amazon.com/gp/product/B00016Q6DS/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00016Q6DS&amp;linkCode=as2&amp;tag=thasqupla-20&amp;linkId=QSHG3MKRWHXOAWHB" target="_blank">pretzel salt</a>&nbsp;is more appropriate!)&nbsp;</p>
<p>Cook in the preheated oven for 14 &#8211; 17 minutes &#8212; (mine were done at 14!).&nbsp;</p>
<p>While the pretzels are cooking, you can whip up the cheese dipping sauce. Melt the butter in a medium saucepan. Add flour and whisk together until starting to brown a tiny bit. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="2">			<div class="blog-yumprint-subheader">Instructions</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">In the bowl of a standing mixer, combine your melted butter, brown sugar, 1 1/2 cup warm water and yeast. Mix until combined. Let mixture sit for five minutes, then add some of the flour and turn the mixer on low. Slowly mix in your flour (about a cup at a time) and salt. Add flour if dough ball is too sticky.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Place dough in a large well-oiled bowl, and cover with a towel or plastic wrap and place in a warm spot. Let sit for at least an hour until dough ball has doubled in size.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">After dough has risen, preheat your oven to 425 degrees. Spray down one or two baking sheets with cooking spray</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Mix baking soda with about 3 quarts of water in a large saucepan. Turn on medium-high to high heat, and let it start to boil. Reduce heat to where its still bubbling.</li>				<li class="blog-yumprint-method-item" yumprintitem="4">Meanwhile, dump the dough ball onto a smooth work surface and cut into 8 equal pieces. Roll each of these out into long ropes about 2 feet long. Then, cut each rope into 1-inch pieces. Drop about 15 pieces at a time into the bubbly soda-water. Let them sit for about 30 seconds, and remove with a slotted spoon.</li>				<li class="blog-yumprint-method-item" yumprintitem="5">Spread bites out on the prepared baking sheet(s), brush each with the egg white mixture, and sprinkle with salt (I used kosher salt, but pretzel salt is more appropriate!) Cook in the preheated oven for 14 - 17 minutes -- (mine were done at 14!).</li>			</ol>

It&#8217;s a TexMex chain that is expanding throughout the U.S. When I looked at their website locations, I couldn&#8217;t believe how many they have now. Anyways, the only location I&#8217;ve visited is in Birmingham, Alabama.. and we&#8217;ve been there a few times. We like to try new entrees, but&nbsp;<em>every single time&nbsp;</em>we go, we have to get the jalapeno ranch dip they serve before the meals. It&#8217;s served along with salsa and fresh tortilla chips. It&#8217;s all just heaven.</p>
<p>When we&#8217;re on vacation, we tend to splurge a bit &#8212; so&nbsp;I will tell you to go ahead and order some on the side of your meal as well. It&#8217;s good on anything &#8212; anything TexMex anyway. I remember running across <a href="https://www.pinterest.com/pin/27232772716378625/" target="_blank">this pinned post </a>from <a href="http://www.plainchicken.com" target="_blank">plainchicken.com</a>, and making it a while ago when we had some company over. It was a hit, and I decided to make some more this afternoon to last through the weekend. <p>The recipe is extremely simple, I start out with two jalapenos. I use this handy dandy&nbsp;jalapeno seeder (<a href="http://amzn.to/20hunkE" target="_blank">click to buy</a>&nbsp;~ $6.20 Prime). It makes&nbsp;removing the seeds a breeze, I use it EVERY time. Anyways, I removed most of the seeds, since I still wanted a little spice. Then roughly chop the garlic, cilantro, and jalapeno.</p>

<p>Add sour cream and lime juice, and pulse until creamy. Then add milk to your desired consistency. And everyone we&#8217;ve cooked these for has loved them too. The green chili wonton recipe originated from a restaurant in Louisville, where Greg&#8217;s from, called the Bristol Bar &amp; Grill. They used to get them as an appetizer when he was growing up, so we found a copycat recipe. They&#8217;re incredible.</p>
<p>You can fry them in a deep fryer or in a skillet with heated oil on a stovetop. We&#8217;ve done it both ways and actually prefer the pan fried method.</p>
<p>The avocado dipping sauce makes a ton! We usually half it or you can use the remainder as a dip for pita chips or tortilla chips.</p>
<p>Here&#8217;s how to do it <a title="Original source" href="http://www.food.com/recipe/louisvilles-green-chili-wontons-162247" target="_blank">(recipe from food.com)</a>:</p>
<p>Blend the green chiles, jalepeños and shredded cheese in a medium bowl.<span id="more-782"></span></p>
<p>Put two tablespoons of the cheese mixture on one corner of the wonton wrapper and fold that corner over. Fold the corners on the right and left. Thanks to a co-workers daughter, I had bought some frozen pretzels, and I was looking through a cookbook (<a title="Buy from Amazon for CHEAP" href="https://www.amazon.com/FOOD-WINE-Annual-Cookbook-2012/dp/1932624414/ref=as_sl_pc_tf_til?tag=thasqupla-20&amp;linkCode=w00&amp;linkId=FGT4CHWMOWYCJYGE&amp;creativeASIN=1932624414" target="_blank">Food &amp; Wine Annual Cookbook 2012</a>&nbsp;p. 12) and found this recipe for a pretzel <i>fondue</i>. &nbsp;Apple Cider isn&#8217;t needed in the recipe &#8211;&gt; [see professional looking X through the picture below, I had gotten that for something else but it managed to slip in the picture &#8212; oops! :)]</p>
<p>Anyways, this recipe turned out wonderful. The crispy pancetta gave great flavor as well as the Gouda cheese and Riesling.<span id="more-586"></span></p>

<p>Here&#8217;s what you do:</p>
<p>In a medium skillet, cook the chopped pancetta over moderately high heat, stirring occasionally, until it is crisp, about 8 minutes. Using a slotted spoon, transfer the pancetta to a plate. Pour off all but 1 tablespoon of the fat in the skillet. Add the sliced onion, cover and cook over moderate heat until it is softened, about 5 minutes. Add 2 tablespoons of water to the skillet and cook, stirring occasionally, until the onion is lightly browned, about 5 minutes longer. <p>In a bowl, toss the cheese with the flour. In a medium saucepan, bring the wine to a simmer over moderate heat. Add the cheese in handfuls and stir constantly until each batch is completely melted before adding more. This dip only needs a few things thrown into a food processor, and it&#8217;s done.</p>
<p>The simplicity of this dip baffled me, and also I had never had Hearts of Palm as a main ingredient in anything. I had only had them, really, in <a title="Felix's" href="http://www.felixsfishcamp.com/" target="_blank">Felix&#8217;s Fish Camp&#8217;s</a> <a title="Felix's house salad" href="http://www.foodspotting.com/places/12612-felix-s-fish-camp-restaurant-spanish-fort/items/489714-camp-salad" target="_blank">house salad</a> (which is absolutely delicious, by the way). I had some Pita Chips to dip in the final product, and to my surprise is was pretty good! Similar to a hummus. The hearts of palm made the dip very light, which is&nbsp;perfect for an easy, tasty&nbsp;lunch.<span id="more-687"></span></p>
<p>Here&#8217;s what you need:</p>

<p>Here&#8217;s how to do it:</p>
<p>Using the side of a chef’s knife, mash the garlic to a paste with a generous pinch of salt. Scrape the paste into a food processor. Add the hearts of palm and oil and process to a medium-fine paste. Add the lime zest, season with salt and white pepper and pulse just to blend. Transfer the dip to a bowl and serve with plantain chips, pita chips or flatbreads.</p>

<p>Here&#8217;s how to do it:</p>
<p>Preheat the oven to 400°. In a medium skillet, heat the 2 tablespoons of olive oil until shimmering. Add the minced shallot and garlic and cook over moderately low heat, stirring occasionally, until softened, about 5 minutes. Add the artichokes and cook over moderate heat, stirring occasionally, until heated through, about 5 minutes. Add the wine and simmer until most of the liquid has evaporated, about 3 minutes; let the mixture cool.</p>
<p>In a medium bowl, combine the cream cheese with the Gruyère, parsley, lemon juice, Tabasco and 1/2 cup of the Parmigiano. Fold in the artichoke mixture and season the dip with salt and pepper. Scrape into a shallow 3-cup baking dish and smooth the surface. Sprinkle the <em>panko </em>and remaining 2 tablespoons of Parmigiano on top. Bake for about 20 minutes, until heated through and lightly golden on top.</p>
<p>Meanwhile, in a small skillet, heat 1/4 inch of olive oil until shimmering. Add the sliced shallot and fry over moderate heat, stirring, until golden and crisp, about 5 minutes. Using a slotted spoon, transfer the fried shallot to paper towels to drain and cool. Sprinkle the fried shallot on top of the artichoke dip and serve with toast points and crudités.<a href="http://www.thatsquareplate.com/wp-content/uploads/2014/11/wpid-551.jpg"><br />

In a medium skillet, heat the 2 tablespoons of olive oil until shimmering. Add the minced shallot and garlic and cook over moderately low heat, stirring occasionally, until softened, about 5 minutes. Add the artichokes and cook over moderate heat, stirring occasionally, until heated through, about 5 minutes. Add the wine and simmer until most of the liquid has evaporated, about 3 minutes; let the mixture cool.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">In a medium bowl, combine the cream cheese with the Gruyère, parsley, lemon juice, Tabasco and 1/2 cup of the Parmigiano. Fold in the artichoke mixture and season the dip with salt and pepper. Scrape into a shallow 3-cup baking dish and smooth the surface. Sprinkle the panko and remaining 2 tablespoons of Parmigiano on top. Bake for about 20 minutes, until heated through and lightly golden on top.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Meanwhile, in a small skillet, heat 1/4 inch of olive oil until shimmering. Add the sliced shallot and fry over moderate heat, stirring, until golden and crisp, about 5 minutes. Using a slotted spoon, transfer the fried shallot to paper towels to drain and cool. Sprinkle the fried shallot on top of the artichoke dip and serve with toast points and crudités.</li>			</ol>

<p>Goat cheese is one of the best hors d&#8217;oeuvre options with any kind of crackers, etc. This recipe is SO easy and very tasty! Make sure your goat cheese &amp; cream cheese are both soft in order to put them in the food processor. I served these crackers with <a title="Hazelnut Crackers" href="http://www.thatsquareplate.com/recipe/hazelnut-crackers/">my Hazelnut crackers</a> and some store bought bread crisps. ANYTHING would be good dipped in this!&nbsp;This is a Baked Goat Cheese Dip from Food Network Magazine. Goat cheese, cream cheese, &amp; Parmesan cheese are mixed &amp; baked, and topped with a mix including tomatoes, olive oil, balsamic vinegar, &amp; garlic. Dip was served with the homemade crackers &amp; was the favorite of the night!<span id="more-63"></span></p>
<p>Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.</p>
