After scouring Pinterest and Google, I found that most of the recipes online were simply battered, fried string cheese. I wanted to get more creative with the cheese inside though. I wanted to add goat cheese and herbs, and make ’em super tasty. So I finally ran across this “Crispy Cheese Sticks” recipe from Justin Chapple on foodandwine.com.

The recipe totally intrigued me because his technique was so different than any I had heard of before… He mixed his cheese filling in a big bowl, then used FLATTENED white bread for the outside! Genius!! So I just had to figure it out for myself, and I’m so glad I did! These things were DYNAMITE! I modified his version with some different cheeses and herbs in the filling, but the technique is all the same. <img decoding="async" class="aligncenter wp-image-5284 Once I’ve gotten older though, I’ve grown to love the more unique versions. I love the ones with jalapenos or crab stuffed inside.

Now, of you’re not southern or from the US, you may not have a single clue as to what I’m talking about when I say hushpuppy.. or you may have a different name for these things. It is basically a fried ball of cornmeal batter. I like to use the base recipe from allrecipes.com with cornmeal, buttermilk, and flour – because it makes a perfect light batter.

Once the batter is mixed, you scoop it out with a melon baller or tablespoon and drop it in some hot oil until they’re fried golden brown.

Here, I’ve added some shrimp and scallops from my local seafood shop, and some green onions for some color and light onion flavor. I hope you enjoy!

<img loading="lazy" decoding="async" class="aligncenter size-large wp-image-5203" title="Scallop & Shrimp Hushpuppies" thing called bullet journaling, and I’ve decided to share all I know by making a website about it! You can view the site here or find my Instagram here (@lifebywhitney). I initially started the bullet journal to keep up with all of my food-blogging and life to-do’s.. but I’ve turned the website into more of the priority for the last month or so, and hopefully can find a good balance between blogs soon.

If you’re interested at all in what the heck a bullet journal even is, head to the website and check it out. It is my replacement for a planner and to-do list, and helps as an additional creative outlet for me and there’s so many bullet journal ideas out there ~ I’ll be busy for a while!

If you’re just interested in the hushpuppies… see the recipe below! :)

Scallop & Shrimp Hushpuppies

2016-07-09 10:54:40

Serves 8

Fried buttermilk hushpuppies with shrimp, scallops, and scallions in every bite!

Write a review

Save Recipe

Print

Prep Time

10 min

Cook Time

30 min

Total Time

40 min

Prep Time

10 min

Cook Time

30 min

Total Time

40 min

Hushpuppies

1 quart canola oil, for frying

1 cup Cornmeal

1 cup Flour

1 cup Buttermilk

1 teaspoon ancho chili powder

½ teaspoon baking soda

½ tsp. Maybe its because they were on sale at Publix… yeah, that’s probably it. Gotta take advantage of marked down Memorial Day goodz.

Anyway, I love a good, crispy chicken wing that’s coated in sauce and full of flavor.. and that’s exactly what I made! I wanted a good wing sauce recipe, and knew my blogger bud Byron at Pretty Practical Pantry had been on a wing kick lately. Every recipe he’s posted so far (even though he’s only newly added non-vegetarian recipes to his blog) has looked DELISH.

I decided on his Japanese wings recipe to use on these drums. I love a good Asian-inspired chicken wing recipe, and this one is super simple to throw together, and I used his ‘baked-fried’ method to give a yummy, crispy outside while keeping the meat super tender on the inside.

<img loading="lazy" decoding="async" class="aligncenter wp-image-5013 size-large" title="Baked-Fried Japanese Chicken Drums" src="http://www.thatsquareplate.com/wp-content/uploads/2016/05/Baked-Fried-Japanese-Chicken-Drums-2-800x532.jpg" alt="These drums are inspired by a wing recipe from Pretty Practical Pantry.. he obviously knows how to cook his wings. I received these as a gift from Uncommon Goods – they’re an awesome online store that has tons of unique, mostly handmade gifts for people that already have everything. There’s others including a sriracha salt, Spanish chorizo pepper, habanero, jalapeno, smoked ghost pepper, and Hawaiian ‘fire walker’. There’s also a cool little recipe card that explains the heat level of each and how the salts can be used.

These would be great to bring to a foodie friend’s dinner party & get to taste the salts on different items. I’ve received a few other awesome products from Uncommon Goods and will be sharing about those in a few future posts.

For now, enjoy the wings. I’ve discovered my new favorite way to make French fries and that’s with my handy-dandy spiralizer! It cuts the perfect (and consistent) potatoes for even frying, and literally it took like five minutes to prep.

I used a combo of two red potatoes and a sweet potato… really only because that’s what I had in the kitchen… no rhyme or reason, but loved the flavor and slight color variation in the final product. Also, I used the double fry technique to get them perfectly crispy… it works! Fry them once with your oil at 300° F, then a second time at 400° F until they’re all nice and crisp.

Fix Hot Sauce was nice enough to send me a bottle of their super-tasty Sriracha hot sauce, and I used it to make an aioli to drizzle over the hot fries (after melting some shaved Parm on top)! Top with chopped chives to give a nice green garnish and enjoy as an indulgent side dish or, in my case, a small dinner!

<img loading="lazy" decoding="async" class="aligncenter size-large wp-image-4870" title="Spiral-Fries with a Sriracha Aioli" src="http://www.thatsquareplate.com/wp-content/uploads/2016/04/Spiral-Fries-with-a-Sriracha-Aioli-2-800x532.jpg" alt="Doesn't this just look like heaven on a plate?! I mean, how can you not like a light, crispy fried ring of deliciousness??

Now, my favorite onion rings are from the clubhouse in the neighborhood I live in. And I have to thank Mary over at Goodie Godmother for this recipe. She’s incorporated a few of my favorite things in the batter — beer and Old Bay seasoning. And the batter is super light from the baking powder, cornstarch and beer, so the onion rings have the perfect light and crunchy consistency.

I’ve only made a few very small tweaks to her recipe (using a different type of beer and only using one LARGE sweet onion.) It’s actually pretty much the simplest thing ever, and I’m wondering why I haven’t done this before..

Well, actually, I know why… because I never ate chicken salad… like ever, before last year. And I still have a hard time finding ones that I like. I like to keep the mayonnaise at a minimum, just because I’ve never been a big ‘mayo-person’.

This chicken salad though, was dynamite! I jazzed it up by adding bacon, cheddar, sour cream and chives ~ hey, if it’s good with a potato, it’s good with anything, right?

I made this for my cousin’s pre-wedding reception, and served it with assorted crackers. It was brought out after all of the Triple-Herb Chicken Salad was gone, and I got many-a-compliment on both!

<img loading="lazy" decoding="async" class="aligncenter wp-image-4767 I cooked one of the recipes from their site, and added my own little twist. Being the seafood-lover I am, I found this Roasted Corn and Crab Dip and I couldn’t pass it up. I have a special place in my heart for a good seafood dip. Especially a warm, cheesy one! Ha! The last time I had a cheesy crab dip, I made a Hot Fontina and Crab Dip for Christmas Day. It was divine, and I figured it was about time to make another!

Anyway, I tweaked the original recipe a little bit to add some jalapenos and cheddar cheese — because these are a few of my favorite things… but if you want to see the rest of the recipe as well as my guest post, visit Better Homes and Garden’s Delish Dish blog HERE.

Click here to view my post at the Better Homes and Garden’s Delish Dish Blog!

Cheesy Roasted Corn and Crab Dip was last modified: March 9th, 2016 by Whitney

The post Cheesy Roasted Corn and Crab Dip appeared first on That Square Plate.

<post-id xmlns="com-wordpress:feed-additions:1">4569</post-id>

Fried Green Tomato Sliders

Whitney

Appetizers

Featured

appetizer

bacon

cabbage

Cajun

fried

onion

sandwich

slider

southern

spicy

tomato

tomatoes

This is literally one of my favorite dishes I’ve ever made. I cooked it on Valentine’s Day, and wouldn’t have wanted anything else. Seriously.

Fried green tomatoes themselves are a southern ‘specialty.’ I could have them plain all day long, but I decided to fancy ‘em up a bit and put ‘em on a slider. I’ve shared a few fried green tomato recipes before, and the only reason I think these are my favorite is because I’ve had them the most recent.. I remember the others being super amazing too →

Fried Green Tomatoes with Cajun-Dill Buttermilk Sauce

Saute of Shrimp over Fried Green Tomatoes with Warm Remoulade Sauce

These sliders are inspired by an awesome restaurant down here in Gulf Shores called Bill’s by the Beach. Tourists (and locals), I recommend you go… It’s definitely a new favorite in town, and they have amazing seafood (they’re known for their 100% Wild American Shrimp). This dish doesn’t include seafood, but a similar version is on their appetizer menu.

<img loading="lazy" decoding="async" class="size-full wp-image-4523 aligncenter" title="Fried Green Tomato Sliders" src="http://www.thatsquareplate.com/wp-content/uploads/2016/02/Fried-Green-Tomato-Sliders-3.jpg" alt="This is my favorite recipe I've made in a while. Anyways, you know what I’m saying.

The slaw was the best I’ve ever made myself. In fact, I took the leftover slaw to work the next week and added it to my spicy turkey/pepperjack sub. Sounds a little strange, but it was a good change to our normal lunch rotation of like the 5 restaurants we frequent. A great change actually… I could’ve had more, but didn’t want to stuff my face.<img loading="lazy" decoding="async" class="alignright size-full wp-image-4526" title="Fried Green Tomato Sliders" src="http://www.thatsquareplate.com/wp-content/uploads/2016/02/Fried-Green-Tomato-Sliders-11.jpg" alt="This is my favorite recipe I've made in a while. I fried them in a large fry pan in shallow canola oil about 3-4 at a time, making sure they don’t touch. Flip them halfway through to make them equally brown on each side. They didn’t take long to fry, just about 3-4 minutes each, just make sure they’re nice and golden brown.

I kept the batter simple with buttermilk and panko since there was so much else going on in these little sandwiches. I, of course, added a nice crispy slice of bacon to each slider, because bacon makes everything better, duh!<img loading="lazy" decoding="async" class="size-full wp-image-4524 aligncenter" title="Fried Green Tomato Sliders" src="http://www.thatsquareplate.com/wp-content/uploads/2016/02/Fried-Green-Tomato-Sliders-5.jpg" alt="This is my favorite recipe I've made in a while. They were easily fried once removed from the freezer and they all gave me a big thumbs up for how they turned out! I knew I had to try it. I’ve only made gnocchi a few times before and I only ever used potatoes as the base. Ricotta cheese acts as the main base of this gnocchi recipe and since it’s such a mild cheese, the other flavors in the mix stand out and taste amazing.

I used fresh grated Parmesan cheese, and I love the flavor that freshly grated nutmeg and the lemon zest adds to the gnocchi. I use a badass little nutmeg grinder like this one for adding freshly grated nutmeg to my dishes. This recipe makes enough for about eight people, and it is cooked in three batches. The steps didn’t take too long though, and the results are totally worth it. The pancetta, sage and brown butter is like a party in your mouth… plus the light doughy texture of the gnocchi is just heavenly!<img loading="lazy" decoding="async" class="aligncenter size-full
