THESE COOKIES.
I did not realize that I, Whitney, am a cookie addict — until I made these perfectly chewy, ridiculous double-chocolate cookies. I’m not a cookie-baking expert, but I DO know what I like when it comes to chocolate chip cookies. They’re my favorite dessert, and I’m not ashamed to admit it!
I made these this past weekend for my cousin’s wedding pre-reception party get-together thing.. and I made a TON of them. I LOVE a good chewy cookie — like, they’re perfect for me right when they come out of the oven… even if they’re falling apart.. omg.. ridiculous. So anyways, here I’ve added a super-special ingredient that makes these cookies STAY chewy for days and days.
I don’t remember where I read the ‘secret ingredient’ first, but I’ve remembered it for years, and I like to keep it in the pantry for whenever the mood strikes to make cookies… which really isn’t THAT often, because I’d be 100 pounds more, because I’d eat them ALL.
Anyways, the ingredient — it’s instant vanilla pudding mix! I only add about a half of a small container (about 1/4 cup) to the batch of cookies and it gives that perfect texture. Don’t go too crazy, because they won’t stay together — trust me, I experimented a LOT.
I based this recipe off of this one from food.com. For this batch, I added the instant pudding mix and used white chocolate chips. I like to mix most of the chips in with the batter, and add a few on top to make them look good.. then I’ll add a few halfway through if any cookies are lacking.
I took these pics not too long after they were done baking, so they were quite soft… but when they’re cool, they’ve got a perfect chewy texture that I just melt for. I can’t get enough!
I topped most of the cookies with the white chocolate chips, but added peanut butter chips to the top of about half of them.. and I swear my dogs (the doodles) stole 10 of the ones with the peanut butter chips straight from the cooling rack. The dogs are OK, but they just couldn’t resist them either, I guess.
I also made a batch with all semi-sweet chocolate chips — but those missed out on the photo fun. Add whateva kinda chips you want, they’ll all taste good!
- In a medium bowl, whisk together cocoa, baking soda, instant pudding mix, and salt.
- Cream together the butter, sugar, then add the eggs and vanilla.
- Add the cocoa powder mixture.
- Add the flour into the creamed mixture and fold in the chocolate chips.
- Bake at 350° for 8-10 minutes.
- I bake two sheet pans full at a time, and halfway through cooking, I turn the pans around and switch which shelf each are on (to make sure they cook evenly).
