This week, I’ve decided to round up some recipes related to camping out. We’re heading to a music festival this weekend and camping for four nights, so I’ve been eyeing different recipes I could make and take with us. Here, I have rounded up some recipes that can either be made while camping (if you have a nice fire), or can be made ahead of time and brought to the campout.
- Dutch Oven Cooking Dorito Enchilada Casserole from A Mother’s Shadow — This just makes my mouth water! I hardly eat Doritos anymore, but if I ever go to Taco Bell I get the Doritos Loco tacos. Those were my tacos growing up… we used Doritos instead of corn shells… they were definitely not tacos, but indeed Dorito nachos– and they were absolutely delicious. Now Carrie’s Dorito Enchilada Casserole is a more advanced version of my childhood memory, and this looks absolutely amazing… and it can be made outside at a campfire!
- Dutch Oven Cheese Potatoes from Mary & Mags at Spindle Designs — Who doesn’t love cheesy potatoes?! This recipe has only five ingredients, and is super easy… pretty much toss your ingredients in a Dutch oven, and heat until done. And she adds BACON! Nothing wrong with that..
- Backyard Barbecue Chicken from Liz at Western New Yorker — This recipe also calls for only six ingredients (including the chicken). The chicken is grilled and coated with seasonings and barbecue sauce — and features a secret ingredient that I’m drinking right now!
- Red Velvet S’more Cupcakes from Jennifer at Study at Home Mama — Now you’re not going to necessarily have the equipment to make cupcakes at a campout, but who says you can’t bring them along. And these cupcakes have a campy theme — S’mores. She combines two of the most delicious sweet treats in ONE. I’ve got to make these ASAP!
- Rice Krispies Peanut Butter Granola Bars from Kelly at Mostly Homemade Mom— She turns Rice Krispies into something a little more advanced than a Rice Krispies treat. They are the main ingredient in these granola bars — who woulda thunk it!? These look amazing – and they would be delicious for a breakfast or snack on an outdoor retreat
- Chocolate Pistachio Granola Bars from Love, Laurie — She shares a vegan/gluten-free granola bar made with dates, pistachios and peanut butter. These would also be a yummy breakfast or snack when your out camping.
