This summer has been amazing! I haven’t posted in a while because I live near the beach and have been spending most of my off time on the beautiful gulf coast. :) But I’ve kinda been missing posting, so I thought I’d share one of the simple recipes we’ve cooked recently. A yummy side dish that will make your tastebuds HAPPY. It’s an herby-parmesan corn on the cob!
The idea is based of off Giada De Laurentiis’s Corn on the Cob with Parmesan Cheese recipe from Foodnetwork.com. I’ve bought a little basil plant from Publix and its lasted us months already. So anytime I can use basil with something, I’m excited! Here, I made a yummy Parmesan herb butter/olive oil mix that I brushed over the corn cobs after I boiled them. For the Herb Butter, saute some minced garlic in the olive oil and butter over medium-high heat. After a few minutes, remove from heat, and let cool a little bit. Stir in most of your grated Parmesan (all but 2 tablespoons), basil, lemon juice, and salt. The reason I titled this “herby” is because you can use whatever fresh herb you like. Basil just happens to be what I have PLENTY OF on hand. I boiled the corn cobs, but grilling would be even more fantastic. Boiling the corn cobs is just the super-easy way: basically, add corn to a big pot of boiling water, and let them boil for 5-6 minutes or until tender. After removing from the water with tongs, brush on the Parmesan butter mixture and sprinkle some of the remaining Parmesan on each corn cob. Or you can be bold and roll each in the Parmesan. Now indulge!
The herb-butter would be amazing on anything. We had some left over and spread it on fresh warm bread. It was one of the best things I’ve ever eaten. So simple and so delicious!
- Saute the minced garlic in the olive oil and butter over medium-high heat.

- Bring a large pot of water to a boil. Add corn and let boil for 5-6 minutes or until tender.
- Remove from water with tongs and brush on the butter mixture.
