So this weekend, we attended our mother’s side’s family Christmas get-together. Mom would always bring the hash brown casserole, so now it’s passed down to our job. I couldn’t be happier. I didn’t like it as a kid, but now I think back like HOW COULD I NOT?! Cheese + potatoes = Deliciousness, under any circumstances.
Here’s the recipe I used. I added a few spices, but the recipe is originally from AllRecipes.com.
It’s hard to make casseroles really look pretty in a picture… but it tasted so cheesy and delicious, I had to post it the recipe. It’s also so easy — pretty much mix it up, and pour it in a casserole dish (the hardest thing to do is chopping the onion).
When crushing the corn flakes, I put them all in a large Ziplock bag and crushed them with my hands. It’s kinda fun actually! ;) The sautéed corn flakes gave the perfect crunchy crust on the top. We had a little left over from the party, took it home, but it was gone by bed time. Ha!

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, shredded cheese, onion powder, garlic powder, paprika, salt and pepper. Place mixture in a 3 quart casserole dish.
In a medium saucepan over medium heat, saute cornflakes in 1/4 cup melted butter, and sprinkle the mixture over the top of the casserole.
Bake covered in preheated oven for 40 minutes.
