I can go to the beach whenever I want, I LOVE the hot weather (I probably wouldn’t if I worked outside), and I love cooling down with a jump in the pool. Also, during the summer I like to eat a bit on the lighter side.</p> <p>Fresh melons and berries are some of the perks about living around here during the summer. I just bought some fresh-grown cantaloupes and watermelon, and they were absolutely delish. I chopped up one of the cantaloupes, put it in a Zip-Lock and threw it in the freezer for later.</p> <p><span id="more-5244"></span>Little did I know I’d use it so soon. The folks over at <a href="https://www.herbalpapaya.com/">herbalpapaya.com</a> were nice enough to send me a sample pack of some of their products, and I fell in love with this superfood that I’d been missing! The teas are amazing, and my favorite was the papaya seed powder! There’s seriously nothing better than toasted coconut flakes, I LOVE using them for toppings on smoothies. I toast a bunch at a time and keep a bag of it in the fridge. I always add protein to my smoothie, so I usually buy the vanilla flavored protein powder, it will go with anything! You can leave it out if you aren’t a fan. Also, like any smoothie, the ingredients can be easily subsitiuted. I would have loved to add some watermelon (if I hadn’t already eaten it all), but the flavor combos here were absolutely perfect. Then, Rocky and I decided to go to a movie… since he sleeps a little late (it’s the summer afterall). We got home and I literally had like 40 minutes until the party. These bites weren’t gonna happen. And I was pretty sad about it. (I cooked the bacon while the pasta was cooking.) Drain and return to pot.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Meanwhile, for the sauce, heat walnut oil over medium-high heat in a medium or large saucepan. Add shallot and cook 1-2 minutes. When shallot starts to become fragrant and translucent, add the flour and stir 1 minute.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Slowly add milk, a little at a time, while whisking together. Mixture should become thick before adding more until it's all added. Keep whisking. It's done when it would coat the back of a spoon. Add spices (paprika, onion powder, garlic powder, and red pepper flakes), and add about ⅓ of the cheese. Stir it in until melted, then add the next ⅓. I’ve seen them floating around on Pinterest and a few food blogs I keep up with. And they’ve inspired me to take the plunge and make my own! I have a <a href="http://amzn.to/1XcpDgL">magic bullet</a> that I like to use to make individual smoothies in the morning. I keep it out beside the fridge so I can just throw everything in, blend, and go in the mornings.</p> <p>I get on my smoothie kicks .. usually making smoothies daily for a month, then not making them for a month… I find different ones I like, and stick to them for a while. My favorites always include bananas.. The yellow layer has some banana, coconut milk, peaches and pineapple. And the red is the sweet berry part. I’ve discovered my new favorite way to make French fries and that’s with my handy-dandy <a href="http://amzn.to/1TudJaU">spiralizer</a>! It cuts the perfect (and consistent) potatoes for even frying, and literally it took like five minutes to prep. </span></p> <p><span style="font-weight: 400;">I used a combo of two red potatoes and a sweet potato… really only because that’s what I had in the kitchen… no rhyme or reason, but loved the flavor and slight color variation in the final product. Also, I used the double fry technique to get them perfectly crispy… it works! Fry them once with your oil at 300° F, then a second time at 400° F until they’re all nice and crisp. </span></p> <p><span style="font-weight: 400;"><a href="https://www.fixhotsauce.com/">Fix Hot Sauce</a> was nice enough to send me a bottle of their super-tasty Sriracha hot sauce, and I used it to make an aioli to drizzle over the hot fries (after melting some shaved Parm on top)! with a little bit of kosher salt in a mortar and pestle.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Heat olive oil over medium heat in a small saucepan. Add garlic and shallot and cook 10-15 minutes until nice and fragrant. Strain olive oil into a bowl through a strainer.</li> <li class="blog-yumprint-method-item" yumprintitem="2">In a medium bowl, whisk together egg yolk and sriracha. Slowly add olive oil a tablespoon at a time and whisk continuously so it emulsifies. Season with salt and pepper. Add to a squeeze bottle if you want.</li> </ol> </div> <div class="blog-yumprint-method-section" yumprintsection="3"> <div class="blog-yumprint-subheader">For the Fries and Assembly</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Run potatoes through a spiralizer on the thinner noodle setting. Soak in a large bowl with cold water for at least 5 minutes. Rinse and repeat. After soaking, transfer to a kitchen towel and dry off as well as you can.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Heat a large pot of canola or vegetable oil to 300 degrees F.</li> <li class="blog-yumprint-method-item" yumprintitem="2">When heated, fry “fries” halfway through in 300 degrees oil, for about 5-7 minutes, until they’re starting to change to a darker color. (They’ll be a little ‘soggy’). Move to paper towels to dry, and do the same with the rest of the fries.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Preheat oven broiler. Heat oil to 400 degrees F and, when heated, add batches of the half-cooked fries to cook until brown (about 2-4 minutes.) When crisp, move to paper towels and season with salt. Finish frying the rest of the fries.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Transfer fries to serving plate and cover in Parmesan cheese. Move to top shelf of oven to melt cheese. I was looking for something that rated well on </span><a href="http://www.fooducate.com/"><span style="font-weight: 400;">Fooducate</span></a><span style="font-weight: 400;"> — </span><a href="http://www.fooducate.com/app#!page=product&id=7803E9AA-42B1-11E1-AFF9-1231380C18FB"><span style="font-weight: 400;">this stuff came in at a B</span></a><span style="font-weight: 400;">! I fell in love with it! I originally bought it to top smoothie bowls or yogurt, but ended up just eating it plain. For some reason, I love fruits that are freeze-dried. I can only find them certain places, and really usually don’t buy them since they’re a little pricey for the amount (weight) you get in a bag. But this granola had just enough in there to hook me. I used freeze-dried strawberries and bananas that I found from Publix, and chopped up a super indulgent dark-chocolate candy bar to add too… you know those bars down that candy aisle.. Top shelf, super good chocolate. class="blog-yumprint-method-section" yumprintsection="1"> <div class="blog-yumprint-subheader">Instructions</div> <ol class="blog-yumprint-methods" itemprop="recipeInstructions"> <li class="blog-yumprint-method-item" yumprintitem="0">Preheat oven to 350°F. Line a large rimmed baking sheet with foil and spray with cooking spray.</li> <li class="blog-yumprint-method-item" yumprintitem="1">In a large bowl, stir together the oats, flour, cocoa powder, flaxseed, almonds, salt, and ¾ cup unsweetened coconut.</li> <li class="blog-yumprint-method-item" yumprintitem="2">In a small pan over low heat, add the coconut oil, ½ cup honey, coconut palm sugar and vanilla. Stir constantly until coconut oil is melted and mixture is smooth. Pour over dry ingredients and stir together with a wooden spoon or your hands until dry ingredients are mostly coated. Stir in water until granola mixture is wet and a little mushy.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Press mixture evenly into prepared baking sheet. Drizzle with agave. Bake for about 20 minutes or until granola starts to toast. Remove from oven and let cool completely in pan on a wire rack.</li> <li class="blog-yumprint-method-item" yumprintitem="4">Once granola is cool, break it into large chunks and stir together a bit. Drizzle with agave or more honey. Return to oven for 10-15 minutes or until granola is evenly toasted and golden brown.</li> <li class="blog-yumprint-method-item" yumprintitem="5">Remove from oven and sprinkle with remaining ¼ cup coconut flakes and add freeze dried fruits and chocolate pieces. Let cool completely. I’m so excited to be posting over here on Whitney’s blog today! I have to say that I’m a big fan of hers so this is definitely a treat for me. Let’s get started, shall we?</span></p> <p><span style="font-weight: 400;">Whitney and I talked and we decided that it would be great for me to give you guys one of my favorite smoothie recipes – Cherry Banana Smoothie. It’s sweet, tangy, and perfect for just about any occasion. Especially those warm spring and summer days that are just right around the corner, at least I hope for me and this crazy Michigan weather we’ve been having lately. Freezing and in the 20s one day and then 60s the next day. Seriously, what is going on mother nature?</span><span id="more-4640"></span></p> <p><span style="font-weight: 400;">Anyway, I am a big fan of smoothies and protein shakes (you can tell by the large amount of recipes I have </span><a href="http://www.jennifermeyering.com/category/shakes-smoothies/"><span style="font-weight: 400;">here</span></a><span style="font-weight: 400;">). They are just so perfect for after a good workout, a busy morning, a quick snack, or when you don’t really know what else to cook. I ended up using frozen cherries in this recipe because cherry season isn’t until July here, but if you can get fresh cherries then go for it! I ended up making a pico de gallo, roasted tomato salsa (which I wasn’t too pleased with), guacamole, and some PRETZEL BITES. The guys grilled some ribs, so we stayed full the whole game! And what a game it was!<span id="more-1269"></span></p> <p>I am obsessed with soft pretzels… <a title="Pretzels I made from September 2014" href="http://instagram.com/p/s5r6k5ze31/" target="_blank">I’ve made some of my own</a> before, but I haven’t made them in a while… These pretzel bites are better for the Super Bowl watching party because they’re smaller bite-size pieces, and you can eat as many or as few as you want. The dipping sauce is an easy cheese sauce that you make on a stovetop, and can be prepared while the pretzels are baking. They’re all pretty basic, and I had them all at the house. Any time I can save a trip to the grocery store, I am down!</p> <p>Here’s what you need: </p> <div id="attachment_1284" style="width: 610px" class="wp-caption aligncenter"><img loading="lazy" decoding="async" aria-describedby="caption-attachment-1284" class="wp-image-1284 size-large" src="http://www.thatsquareplate.com/wp-content/uploads/2015/02/DSC_6451-600x399.jpg" alt="Pretzel Bites with a Warm Cheesy Dipping Sauce Ingredients" width="600" height="399" srcset="https://www.thatsquareplate.com/wp-content/uploads/2015/02/DSC_6451-600x399.jpg 600w, https://www.thatsquareplate.com/wp-content/uploads/2015/02/DSC_6451-300x199.jpg 300w, https://www.thatsquareplate.com/wp-content/uploads/2015/02/DSC_6451-790x525.jpg 790w, https://www.thatsquareplate.com/wp-content/uploads/2015/02/DSC_6451-800x532.jpg 800w, https://www.thatsquareplate.com/wp-content/uploads/2015/02/DSC_6451-1000x665.jpg 1000w" sizes="auto, (max-width: 600px) 100vw, 600px" /><p id="caption-attachment-1284" class="wp-caption-text">FOR THE SOFT PRETZELS: warm water, light brown sugar, active dry yeast, unsalted butter, kosher salt, all-purpose flour Enough vegetable oil to coat a large bowl, baking soda, egg, coarse sea salt or pretzel salt FOR THE CHEESE: unsalted butter. all-purpose flour, milk (not pictured :-/), Cheddar cheese, salt, pepper, & paprika (to taste)</p></div> <p>Here’s how to do it: </p> <p>In the bowl of a standing mixer, combine your melted butter, brown sugar, 1 1/2 cup warm water (make sure it doesn’t burn you.. the water can’t be too hot — it will kill the yeast and you’re done for!). Mix until combined with the <a id="static_txt_preview" href="http://www.amazon.com/gp/product/B00005LD48/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00005LD48&linkCode=as2&tag=thasqupla-20&linkId=FT4USILIXG6KOQ3K" target="_blank">dough hook</a> or a spoon or whatever. Let sit for five minutes, then add some of the flour and turn the mixer on low. Slowly mix in your flour and salt. I mixed about a cup of flour at a time until it is all mixed and a nice dough ball forms (it should pull away from the sides of the bowl). Add more flour if you need to. The final dough ball shouldn’t be too sticky! Place in a large well-oiled bowl, and cover with a towel or plastic wrap and place in a warm spot. I put mine in our pantry.</p> <p>Let sit for about an hour. It should at least double in size. I let it sit for a few hours so I could prep and cook a few more things. Turn on medium-high to high heat, and let it start to boil. Reduce heat to where its still bubbling. Watch out for bubble overflow! :)</p> <p>While you’re waiting on the water to boil, dump your big, beautiful dough ball onto a smooth work surface and cut into 8 equal pieces. I like to cut it like a pizza. Each dough ball should weigh around 4.5 oz. if you wanna get all technical. ;) Roll each of these out into long ropes about 2 feet long. Let them sit for about 30 seconds in the water, and remove with a slotted spoon (I use an awesome handled colander <a id="static_txt_preview" title="OXO Good Grips Large Scoop Colander" href="http://amzn.to/1VyfOVw" target="_blank">like this one</a> for this part and it makes it SO easy!). </p> <p>Spread bites out on the prepared baking sheet(s), brush each with the egg white mixture (1 Tbsp. melted butter), and sprinkle with salt (I used kosher salt, but <a id="static_txt_preview" href="http://www.amazon.com/gp/product/B00016Q6DS/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00016Q6DS&linkCode=as2&tag=thasqupla-20&linkId=QSHG3MKRWHXOAWHB" target="_blank">pretzel salt</a> is more appropriate!) </p> <p>Cook in the preheated oven for 14 – 17 minutes — (mine were done at 14!). </p> <p>While the pretzels are cooking, you can whip up the cheese dipping sauce. Melt the butter in a medium saucepan. Add flour and whisk together until starting to brown a tiny bit. Add your milk a little at a time while stirring until the base of the sauce thickens up. Remove from the heat and stir in your cheese. Season the dip with salt, pepper, and paprika. I like to make more breads, flatbreads and savory things, but I do bake cookies and sweet treats every once in a while. </p> <p>I ran across this cracker recipe in the book, and not only did it sound super-tasty, I got to use one of my new kitchen toys – my MIXER. First, I mixed all the ingredients in the bowl, then I attached the pasta roller attachment to flatten out the dough super-thin to make it all consistent (to make sure they bake evenly).<span id="more-3947"></span></p> <p>Make sure to sprinkle the crackers with kosher or sea salt before baking to bring out the best flavor. Remove to plate or small bowl.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Get pasta rolling machine out and ready.</li> <li class="blog-yumprint-method-item" yumprintitem="3">In your stand mixer, add flour, sesame seeds, baking powder, salt, and sugar. Whisk until blended. Use paddle attachment and turn on medium speed. Pour in liquids (Water and sesame oil), and mix until everything is incorporated (2-3 minutes).</li> <li class="blog-yumprint-method-item" yumprintitem="4">Remove to a flat surface and knead until a soft dough forms. Split into two dough balls, and wrap one in plastic wrap. Flatten the other dough ball, and roll through your pasta machine, starting at the largest opening (#1).</li> <li class="blog-yumprint-method-item" yumprintitem="5">Fold dough in half and repeat a few times at #1 until dough comes out smooth. Adjust to smaller setting, and repeat the process. Make sure to guide the dough with your hands.</li> <li class="blog-yumprint-method-item" yumprintitem="6">Repeat until at #5 or #6 setting. The dough will become very thin (I could only get to #5 setting).</li> <li class="blog-yumprint-method-item" yumprintitem="7">Lay dough on the counter and cut into strips with a knife or pizza cutter. Arrange close together on your baking sheets, and sprinkle dough with kosher or sea salt.</li> <li class="blog-yumprint-method-item" yumprintitem="8">Bake in preheated oven about 8-12 minutes (mine took about 9 minutes).</li> <li class="blog-yumprint-method-item" yumprintitem="9">Move pan to cooling rack and cool for 5 minutes, then remove crackers and let cool longer on wire rack. Enchiladas – as basic as they are – are one of my favorite dishes to order. They always have been, and continue to be, but I like to try different variations. Enchiladas verdes is my go-to when I’m trying something at a new Mexican restaurant (if they have it on the menu). Something about the acidic tomatillo sauce, I am just in love with. Even better if its nice and spicy!</p> <p><a href="http://www.foodandwine.com/recipes/chicken-and-cheese-enchiladas-verdes" target="_blank">This recipe</a> is from one of my favorite cookbook collections from Food & Wine (<em><a href="http://amzn.to/1N2yd82" target="_blank">Food & Wine Annual Cookbook 2008</a>). </em>The verdes sauce is literally 2 ingredients, and a bit of pulsing on in the food processor. Also, I learned how to make the corn tortillas a perfect texture for holding the ingredients and not falling apart despite being soaked in the sauce. Boil a large pot of water and add tomatillos and jalapeno and boil for about 10 minutes (until soft). Drain them in a colander and transfer to a food processor or blender and process until smooth.</li> <li class="blog-yumprint-method-item" yumprintitem="1">In a large skillet, heat 1/4 cup of olive oil and add the salsa verdes over medium-high heat. Bring to a boil and season with salt and pepper. Spoon a few tablespoons of salsa into 2 shallow baking dishes.</li> <li class="blog-yumprint-method-item" yumprintitem="2">In a medium skillet, add 1/4 inch of olive oil (I used have olive half canola) and heat until shimmering. Use tongs to dip the tortilla in the oil and cook over medium heat (turning once) until pliable (about 10-15 seconds). Lift from oil and add to salsa coating each side.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Add chicken and cheddar to each tortilla and roll into loose cylinders and place seam-side down in the baking dishes. Pour remaining salsa over the top, and top with a good crumbly Mexican cheese like queso fresco. Soft, garlic-y, tied-up dough… a perfect pre-course to a big ol’ slab of pizza. We had their pizza tonight actually, and it was awesome, as usual. I left my dough out of the fridge for about an hour to let it rise a little before I rolled it out and formed the knots. Roll out dough into a large rectangle (about 16x12-inches). Brush with olive oil and cut in half. Then cut each half into 1 1/4-inch strips. Tie each strip into a knot and place on baking sheet about 2 inches apart. Sprinkle with salt, and cover with a kitchen towel for about 30 minutes. Preheat oven to 375 degrees F.</li> <li class="blog-yumprint-method-item" yumprintitem="1">Saute butter and garlic over medium heat, and cook until garlic is fragrant ~ a few minutes.</li> <li class="blog-yumprint-method-item" yumprintitem="2">Bake for 15-20 minutes until bread starts to get golden and brown.</li> <li class="blog-yumprint-method-item" yumprintitem="3">Remove from oven. Add garlic/butter mixture and Parmesan to a big bowl.
