First of all, I want to say that I am so excited to announce that I found out today that I won the #BakeInTheFun sweepstakes, and I am so thankful for all of you (friends, co-workers, family, and YOU out in cyberworld) for voting. Once we got back from our trip to Clemson, I felt like we had just about nothing in the house to cook. I knew I had just bought a nice big pack of Wright’s bacon and wanted to make something yummy for breakfast. I got to googling “things to do with bacon” and ran across this link (50 Things to Make with Bacon (!!!)) from Food Network. In fact, I think I have this mini-book in one of my Food Network magazines somewhere. (The internet is easier though.) I got to reading, and OF COURSE, everything on the list sounded good, but I wanted to find something simple that I had all of the ingredients for….
#45. BACON APPLE PANCAKES
I definitely read over nearly all 50 recipes before I found “the one.” This breakfast is simply an original pancake with some crumbled bacon and grated apple incorporated in the batter. The recipe is easy enough. They literally give you the recipe in like 20 words. Here are mine: Cook your bacon, grate your apple, then mix all ingredients together and pancake it up!
I have the super-est of the super tools that I used to grate my apple. It’s a Presto Salad Shooter that belonged to my mom. I just pulled this thing out last year sometime. Then I fell in love… And I know I have the outdated version, but this thing is amazing. I use it if I have a ton of cheese to shred for a recipe. It’ll shred or slice cheese in a jiffy — also you can use it for vegetables, fruits and more. (check it out here). [I also used it to shred fresh Mozzarella cheese in this Pizza Night post].
Anyways, these recipes did the trick. I totally suggest to serve with butter and maple syrup. I added additional bacon on top, and really Greg suggested to leave out the crumbled bacon from the batter, and to only TOP the pancake with it. Because of the flavor of the bacon grease. Next time I’ll try his suggestion, but really this would be super either way.
- Mix 1 cup flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 cup buttermilk, 1 egg, 1 grated apple and 1/2 cup crumbled cooked bacon.
- Cook in a hot buttered skillet until cooked through, turning once.
