So if you’re a frequent “Pinterester” or “Pinner” or whatever, you’ve probably seen the ‘avocado brownie’ recipes floating around. It’s like something that I’d pin, but never get around to making. Well, I tasted some at a family dinner a few months ago, and was SOLD. Since I was craving dessert, and we happened to have an extra avocado, why not try the brownie recipe? (Primarily because the also Pinterest-famous “2-ingredient banana oatmeal” cookies were just not cutting it.)
This whole pan of brownies was nearly gone by Sunday. ROCKY even approved… my 13-year old brother who would gag at the thought of an avocado, or almost any other green food. (Of course I didn’t tell him until afterwards that he just consumed some avocado). He loved them! I packed one in his lunch this morning (after having a few ‘breakfast’ bites), and they were just as delicious as the first night!
Anyways, onto the recipe:
Here’s what you need:
Preheat your oven to 350 degrees F. Grease down an 8 x 8 inch pan (I used Crisco & flour).
I started by pureeing the avocado in my Magic Blender and then add the olive oil and pulse until smooth.
In the bowl of a large mixer, pour your green avocado blend. Slowly add flour, cocoa powder, Truvia baking blend (or white sugar), brown sugar, baking soda, salt, water, and lime juice in until well blended.
Stir about a cup of the chocolate chips into the mix. Pour into your prepared pan and top with the rest of the chocolate chips. Bake for about 30 minutes until a toothpick comes out clean. (It seemed to take forever to get done.) Let cool for about 20 minutes before slicing. Eat plain or top with a yummy topping. I toasted some unsweetened coconut and almond slices with vanilla on the stove top until fragrant, and topped the brownies. YUM. Or serve warm with a scoop of vanilla ice cream. OMG. And you don’t feel AS guilty.. because, ya know, avocado!
