Seafood. I’m a lover of almost any type of seafood. Shellfish especially. And what’s a better way to wake up than to incorporate some of that yummy seafood in a BREAKFAST dish? I had some time this morning to get creative and make this awesome little breakfast you see below. With Rocky at school, I decided to be make use of what I had in the kitchen and make a beautiful, tasty breakfast extravaganza — and yeah that’s what I’m calling it, because that’s how it felt when I ate the first bite. Party. in. the. mouth.
I have been seeing so many ‘waffle iron’ hacks lately on Pinterest and beyond, and haven’t pulled out my waffle maker in forever. Also, I’d never made anything OTHER than waffles in this thing. I shredded up some potatoes with my food processor and added some chopped bell peppers and a shallot. Then I added an egg to bind all this good stuff together, seasoned it all with smoked paprika, salt and pepper, and then added a scoop at a time to the waffle maker. I couldn’t stop there as I thought the waffles needed a little something MORE. Queue the seafood.
You see that hunk of yumminess on top? That’s 95% crabmeat. I made a small amount of sauce with creme fraiche, a shallot, and some saffron, then coated the crab in the warm sauce. I could have just forked all of this up at once and stuffed my face, but I refrained.
The sauce on the side was a necessary last minute addition. I mixed together some sour cream, dill, and some zest and juice from a lemon. In real life serving and eating this stuff, I added MORE sauce, but for the picture, I had to make it a little pretty with the dots. ;) I topped it all with some chopped dill and some shaved Parmesan, and then indulged. And ever since then, I’ve wanted MORE. ha! This was a great way to wake up, and really not too difficult, you just need the right tools!
