Yeah, so zoodles…
Zucchini noodles.
They’ve been on Pinterest forever… something 10 years ago I thought I’d never eat. Zucchini is one of my newer-in-life ‘likes’… along with plenty of other vegetables and good-for-you things. I never thought I’d ENJOY zucchini. Or WANT it…but I do. I needed a light dinner the other night after work, and wanted to use zucchini from the fridge. I’d been meaning to use the ol’ spiralizer I bought a few months ago. I found it in a catalog a co-workers daughter brought to work. I thought, that’s exactly what I need to maybe provoke myself eat some more veggies….
…and several MONTHS LATER (last night), I pulled out two zucchini and the unused spiralizer (the one I have looks something like this), and I started twirling! [I now have this AWESOME KitchenAid attachment.] I didn’t realize the little, simple gadget had two sizes until I was on my second zucchini. I would’ve normally picked the skinnier noodle– but maybe that’s for another recipe (because I will be using this thing again soon)! After a few minutes of twirling away… I had some nice, semi-thick, yet still delicious-looking ZOODLES. I still was unsure of what to top with, so I decided to go with simple, classic Italian flavors with some spice. I grated a few tablespoons of Parmesan.. you can never have enough Parmesan, everybody knows that. Also, I chose to use Italian seasoning — simply because it was EASY at the time, and also because Italian flavors are DELICIOUS!
I minced some garlic and sautéed it in butter (over medium-high heat) for a few minutes. I added the zucchini noodles, tossing lightly with some tongs, added a bit of olive oil, Italian seasoning, and red pepper flakes (and salt & pepper). I covered the pan, while stirring the zucchini often. I still wanted a little ‘al-dente’ texture.. not too soft. Once they were to my liking, I tossed in some grated Parmesan and served it up in a nice [square] serving bowl. THEN…
…I finished a whole bowlful of zoodles — two large zucchinis-worth of zoodles. And they were AMAZING. And I added zucchinis to our next grocery list — it’s going to become a staple in the fridge, and I’m so excited to try some new cool ideas.

Zoodles: yes, I heart you.
- Heat butter in medium saucepan over medium-high heat and add garlic. Saute until tender ~ 1 minute.
- Reduce heat to medium and add zucchini. Toss with garlic and butter, and drizzle in olive oil. Add Italian seasonings and red pepper flakes and toss again.
- Cover and cook 3-4 minutes, stir, and repeat until your desired texture. Mine took about 7-8 minutes.
- Drain. Add to serving bowl and toss with grated Parmesan cheese.
- *You need a spiralizer for this recipe, unless you have some other way of making your zucchini into noodles :)
