Last Friday I wanted to cook something different… no chicken, no pork… and fish was really what came to mind. I didn’t want to make the run to the seafood market, and I knew that Publix has good halibut, so I opted for the Publix halibut.
I don’t regret a thing.

This recipe was amazing! I only used two halibut fillets when the recipe really is for four. We had extra sauce, but it was so good, it could be used on a pasta or something later.

Preheat oven to 350 degrees F. Heat oil in a medium skillet over medium heat and add onion and garlic. Cook about 3 minutes until fragrant.
Add tomato, jalapeno, and white wine. Cook until reduced about 1/2 – 2/3 amount of original sauce.
It should take about 7-10 minutes.
In the meantime, heat your butter in another skillet (that will eventually go in the oven) on medium heat. Sprinkle fish with kosher salt and add halibut to pan after butter is melted. Cook for 2 minutes on each side and transfer to oven to continue to cook through (about 8-10 minutes).
After sauce reduces, remove from heat and stir in olives & olive juice. I made this for a non-olive LOVER like me, and halved the amount of olives and olive juice the recipe called for. He said I didn’t need to, and he didn’t mind them in the dish.
I topped the fish with the sauce, but should have placed the fish on top of the sauce! DUH! Anyways, top with avocado slices, lime juice, and cilantro for garnish.
