Chocolate-Chip, Coconut Oatmeal Cookies

So I really don’t share too many cookie recipes, but I always get in the mood to make cookies when it gets around this time of year. I would seriously pick a fresh, warm chocolate chip cookie for dessert over ALMOST anything. They’re so. freakin. good.

Anyways, here I’ve made an oatmeal cookie with a few extras — I added some chocolate chips (both dark and white) and some coconut flakes because they’re delicious.

Warning/Tip: Careful not to eat all of the toasted coconut before adding — toast a bit more so you can snack on some!

These were my favorite cookies I’ve ever made at home, I baked at the minimum time to make sure they stayed nice and soft! I left the coconut out of a separate batch for Rocky – and he approved. He hasn’t gotten around to coconut yet.. ha!

Ingredients

1 cup butter, softened

1 1/4 cups dark brown sugar

1/2 cup white sugar

2 eggs

2 tablespoons almond milk

2 teaspoons vanilla extract

1 3/4 cups all-purpose flour

1 tsp. baking soda

1/2 tsp. salt

3 cups rolled oats

1 cup dark chocolate chips

1 cup white chocolate chips

1 cup sweetened flaked coconut, divided

Instructions

1. Lay 3/4 cup of the sweetened coconut flakes on a sheet pan, and toast under broiler on LOW about 5 minutes or until brown (and tasty).
2. Preheat your oven to 375 degrees F. Cream butter, brown sugar, white sugar in the bowl of a stand mixer until its smooth.
3. Add eggs, milk, and vanilla.
4. In another bowl, sift together flour, baking soda and salt. Mix in the oats, chocolate chips, and toasted coconut.
5. Drop onto ungreased cookie sheets in about 1 tablespoon size balls. Top cookies with remaining (untoasted) coconut.
6. Bake 10-12 minutes.
7. Cool on a wire rack, and store in a tightly sealed container.
